Italian Turkey & Spaghetti Squash Pie image

Cooked spaghetti squash makes an excellent substitute for regular pasta. If you don't have time to bake the squash, cook it in the microwave. You'll need to cut the squash in half, scoop out the seeds, and place each half cut sides up in a baking dish. Fill each half with about an inch of water and microwave for 10 to 15 minutes, which varies depending on the size of the squash and your microwave. For the best results, regardless of the method you use to cook the squash, you should drain any liquid from the squash before assembling the pie.

1 medium Uncooked spaghetti squash
0.5 pound(s) Uncooked extra lean ground turkey breast
2 tsp Olive oil
1 small Uncooked onion(s) chopped
1 medium clove(s) Garlic clove(s) minced
29 oz Canned diced tomatoes undrained
1 tsp Italian seasoning or more to taste
6 oz Part-skim ricotta cheese
1 large egg(s) Egg(s)
4 spray(s) Cooking spray
0.5 cup(s) Shredded part-skim mozzarella cheese

Steps:

  • Preheat the oven to 350ºF. Halve the squash lengthwise; scoop out the seeds. Place the squash, cut sides down, in a large baking dish and prick the skin all over with a fork. Bake until tender, about 30 to 40 minutes.
  • Meanwhile, cook the turkey, stirring occasionally, in a nonstick skillet over medium-high heat until browned, about 5 minutes. Drain, remove from the turkey from the skillet and set aside.
  • In the same skillet, heat the oil over medium-high heat. Add the onion and the garlic; cook until the onion is tender, about 5 minutes. Stir in the tomatoes and the Italian seasoning; bring to a boil. Reduce the heat; add the cooked turkey and simmer, stirring often, until desired consistency, about 5 minutes.
  • Place the ricotta and the egg in a food processor or blender; puree until smooth.
  • Coat a 9-inch glass pie plate with cooking spray. Remove the squash from the oven and increase the oven temperature to 375ºF.
  • Using a fork, carefully rake the stringy squash pulp from the shell, separating it into strands that look like spaghetti. Arrange the spaghetti squash strands in the bottom and up the sides of the pie plate to form a crust.
  • Add the ricotta cheese mixture and gently spread it over the squash. Pour the tomato-turkey sauce over the cheese mixture and sprinkle with the mozzarella. Bake for 20 minutes. Remove from the oven and let stand 5 minutes before slicing into 6 pieces. Yields 1 piece per serving.

1 spaghetti squash (3 lb.)
1/2 lb. lean ground beef
1-1/2 cups CLASSICO Tomato and Basil Pasta Sauce
1 tsp. dried Italian seasoning, divided
2 Tbsp. flour
3 Tbsp. butter, melted
3 eggs, beaten
1/3 cup KRAFT Grated Parmesan Cheese
2 cloves garlic, minced
1 cup KRAFT Finely Shredded Italian* Five Cheese Blend

Steps:

  • Heat oven to 350ºF.
  • Pierce squash with fork several times. Microwave on HIGH 15 min. or until tender when pierced with knife.
  • Meanwhile, brown meat in large skillet; drain. Return to skillet. Stir in pasta sauce and 1/2 tsp. seasoning; bring to boil. Simmer on medium-low heat 5 to 8 min. or until slightly thickened.
  • Cut squash in half; remove seeds. Scrape squash into large bowl. Add flour; toss to coat. Add butter, eggs, Parmesan and garlic; mix lightly. Spoon into 10-inch pie plate sprayed with cooking spray; top with meat sauce, leaving 1/2-inch rim around edge. Top with shredded cheese and remaining seasoning.
  • Bake 30 to 35 min. or until squash mixture is heated through and cheese is lightly browned.

  • Cut spaghetti squash in half. Remove seeds. Rub with olive oil and sprinkle with a few pinches of salt and pepper. Bake cut side down on rimmed baking sheet - 400F for 40 minutes or until you can pierce through skin with a fork.
  • While the squash is baking, heat 1 Tbs olive oil in a sauté pan. Add chopped shallots. Sauté until softened - 3-4 minutes. Sprinkle with 1/8 tsp salt and pepper.
  • Add ground turkey, 1/4 tsp salt and a few grounds of pepper. Break up turkey so it cooks in bite sized chunks.
  • When the turkey is almost cooked, add chopped garlic, 1/2 tsp dried oregano and 1 tsp dried basil. Stir to incorporate. Turn off heat, cover and set aside.
