COLESLAW CHICKEN WRAPS

- Place 1 cup dressing in a large resealable plastic bag. Add the chicken; seal bag and turn to coat. Refrigerate for 1 hour., Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack., Grill chicken, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes on each side or until a thermometer reads 170°. Let stand 5 minutes before slicing., Meanwhile, in a large bowl, combine the pineapple, coleslaw mix, red pepper and remaining dressing; toss to coat. Divide among tortillas; top with chicken and sprinkle with almonds. Roll up tightly; secure with toothpicks.

Steps:
- Prepare a large skillet or cast-iron skillet.
- Place two slices of bread on a work surface.
- Cover/sprinkle each of the two slices with one portion of cheese, then one slice of ham, then one portion of pineapple.
- Finish with the second portion of cheese.
- Top each sandwich with a slice of bread.
- Melt butter in a hot skillet.
- Add the two sandwiches to the skillet; cook until cheese is beginning to melt and the undersides are golden.
- Butter the tops of the sandwiches, using a spatula carefully turn them over.
- Cook until the cheese is fully melted and the undersides are golden.
- Let stand for about 2 minutes before slicing.

- Lay out the tortillas on a flat surface. Place 1-2 slices of ham in the middle of each one. Sprinkle over some chopped pepper and cheese, leaving a 2cm edge at one end. Starting at the other end, roll up as tightly as you can. Wrap each tortilla in kitchen foil and twist the ends to seal. Will keep in the fridge for up to 3 days.
- Heat oven to 180C/fan 160C/gas 3. Place the wraps in the oven (directly onto the oven rack is fine) and cook for 10-15 mins until the cheese starts to melt. Unwrap for the last 5 mins if you want the outside to be crisp. Peel off the foil before eating.

- Blend the cream cheese and pineapple together until creamy and smooth. Spread the cream cheese mixture on half of the wrap. Top the cream cheese with ham, lettuce, and tomato. Fold in the edges and roll up from the end the topping are on. Be sure to leave half the wrap empty because it is much easier to roll up and it stays together better.
- *Yummy Tip! For a ranch wrap sub the pineapple out for 1/2 cup of ranch dressing. My husband likes these ones even better!
