- In a large bowl, whisk together self-rising flour and sugar.
- Use a pastry blender or two forks to cut in the cold butter until the mixture is crumbly and some pea-size pieces of butter remain.

SWEET POTATO BISCUITS
Steps:
- Preheat the oven to 425 degrees F. Place a large cast-iron skillet in the oven to preheat.
- Combine the self-rising flour, salt and apple pie spice in a food processor with several pulses. Drop in 1 cup cold butter cubes and pulse until pea-sized crumbs are formed in the flour. Dump this flour mixture into a large bowl. Process the sweet potato flesh in the same food processor bowl until mashed. Pour in 1 cup of the buttermilk and pulse until a smooth puree is formed. Scrape the potato mixture into the mixing bowl. Use your hands to gently pull the flour into the potato mixture, adding more buttermilk as needed to reach a moist dough. Dump the dough out onto a floured surface and press into a 1-inch-thick square. Cut out 16 square biscuits with a bench scraper, re-rolling scraps as necessary.
- Melt the remaining 2 tablespoons butter in a small bowl in the microwave.
- Remove the skillet from the oven and spray with nonstick cooking spray. Carefully place the biscuits in the skillet (it's okay if they touch). Brush the tops of the biscuits with the melted butter. Place the skillet back in the oven.
- Bake the biscuits until fluffy and lightly golden on top, 16 to 18 minutes. Serve warm with butter and honey.

Steps:
- Preheat the oven to 400 degrees F, then generously butter a baking sheet.
- Wrap sweet potatoes in foil in a single package & bake until tender, about 1 hour, then remove from the oven, unwrap & set on a wire rack to cool somewhat. Raise oven temperature to 425 degrees F.
- When potatoes are cool enough to handle, peel & mash them, so that you have 1 cup of puree.
- In a mixing bowl, whisk together the flour, baking powder, brown sugar, nutmeg & salt, then stir in the pepper before adding the butter. Cut in the butter, combining & mixing until coarsely crumbled.
- Make a well in the center & add the cup of mashed sweet potatoes, stirring together gently with a fork, then stir in enough cream to make a sticky but manageable dough.
- Transfer the dough to a floured surface & pat or roll to a thickness of 3/4 inch. Use a floured 2 1/2-inch biscuit cutter to cut out rounds of the dough, & transfer them to the prepared baking sheet. Re-roll the dough as necessary, until the dough is used up.
- Lightly brush the tops of the biscuits with the beaten egg, then bake until the biscuits are golden brown, about 15 minutes.
- Serve hot, with butter & ENJOY!

Steps:
- Preheat the oven to 425 degrees. Line a baking sheet with parchment or a baking mat.
- Remove the skin from your cooked sweet potato. My favorite method to cook sweet potatoes is the crock pot or Instant pot. This post tells you exactly how to do it. You will need about 3/4 cup of sweet potato.
- In a medium mixing bowl combine the flour, baking powder, and salt. Use a whisk to combine.
- Add the butter, and then using a fork or pastry blender, work the butter into the flour mixture until it is the size of small peas. Refrigerate for 10 minutes.
- While the flour/butter mixture is cooling, mash your sweet potato and buttermilk together. You can use a food processor if you want it extra smooth.
- Gently combine the sweet potato mash and the flour mixture, until it combines into a dough. If the mixture is crumbly and not sticking together, add more buttermilk 1 tablespoon at a time, until the dough comes together.
- Remove the dough onto a flour dusted surface and dust the top with a little more flour. Roll the dough so that it is 3/4 of an inch thick. Cut the dough using a knife or a biscuit cutter into 9 pieces.
- Place the biscuits on the baking sheet and into the oven. Bake until the tops are a light golden brown, 12 to 15 minutes. Serve hot.

If you end up with dough that is too wet and sticky, at a bit more flour so that it can be handle and rolled. If too dry, add more milk.

- In a mixing bowl, stir together flour, baking powder, sugar, and salt until well combined. Using a pastry cutter or your hands, cut butter into flour until only a few pea-size pieces remain. In a separate bowl, stir together buttermilk and sweet potato until homogenous. Add to dry ingredients and use a spoon to mix ingredients together until a shaggy dough forms. Flour your hands and press the dough together until all of the dry ingredients in the bowl are incorporated into 1 large dough mass.
- Line a 9-inch round metal cake pan with parchment paper and grease with cooking spray. Transfer dough to a well-floured surface. Press the dough down and use a rolling pin to roll the dough out to a 3/4-inch thick disc. Using a 3-inch round cutter, cut out 1 biscuit from the dough and place it in the center of the prepared cake pan. Cut out 4 more biscuit rounds from the dough and place them around the perimeter of the cake pan, allowing them to touch each other and the center biscuit. Reroll the dough scraps to 3/4-inch thickness, and cut out remaining 2 biscuits. Fit them snuggly in the cake pan so all of the biscuits are touching (6 biscuits should be surrounding the biscuit in the center). Transfer to the freezer for at least 1 hour.
- Preheat oven to 350°F. Whisk together the egg yolk and water. Brush the surface of each biscuit evenly with egg wash. Bake until the tops have become golden brown and the biscuits have baked all the way through, 40 to 45 minutes.

- Line the air fryer basket with air fryer parchment paper. You can only use parchment paper made for the air fryer. This helps prevent the bottom of the biscuits from browning too fast and potential burning. You can go without it, but keep that in mind.
- Combine the butter and honey and mix. Add more or less if you wish. In general, the rule of thumb is 1/3 of the amount of honey to the amount of butter used.

- Make sure to keep everything as cold as possible when making this recipe. If you have space, it's good to put the flour in the freezer for 20-30 minutes before you start, but longer is fine. Flour doesn't freeze solid and will stay useable no matter how long you leave it there. Keep the butter, sweet potato and milk in the fridge until the last possible moment too.
- Preheat oven to 425°F (218 °C) and have a shelf ready about ¾ way up the oven. Grease a 9-10 inch cast iron skillet really well with vegan butter, or line a baking tray with parchment paper if you don't have a cast iron skillet. Keep the skillet/tray away from the preheating oven so it doesn't get warm.
- Whisk the mashed sweet potato with half a cup (120 mls) of the milk and put it in the fridge so it stays nice and cold. Set aside the remaining small amount of milk. you might need it later.
- To a food processor or a large bowl, add the flour, baking powder and salt. Pulse or whisk a couple of times to combine.
