- Mix EVOO, Mieradici's Fondo Montebello Aged White Balsamic, Italian seasoning, lemon juice, lemon zest and salt and pepper in a food processor or by hand with a whisk.
- Enjoy drizzled over salads, grilled veggies, fish and chicken.
- Can store in a sealed container for 2 weeks in the refrigerator

ARUGULA SALAD AND ULTIMATE VINAIGRETTE
Steps:
- Combine the shallot, mustard, vinegar, oil, sugar, honey and salt and pepper in a jar and shake to emulsify.
- Toss arugula with vinaigrette, to taste.

Steps:
- In a very big bowl, combine everything, I use a hand emulsion blender to blend thoroughly. Chill for 1 hour.
- In an empty salad bowl, dump 1/4 cup of cold dressing and toss in torn cold romaine lettuce.
- Put on individual salad bowls.
- Top with diced tomatoes and chopped chicken.
- Scatter grapes and mangoes on top.
- Garnish with croutons and pine nuts.
