One of our families favorite cookies. I often bake these to take to different events and am always asked for the recipe since they are such a different cookie from the standard cookie.

Number Of Ingredients 11

1 1/4 cups unsifted flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup butter, softened
3/4 cup brown sugar, firmly packed
3/4 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
3 cups Old-Fashioned Quaker oats
1 (11 ounce) package NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels (about 2 cups)

Steps:

  • Preheat oven to 375 degrees F.
  • Combine flour, baking soda, salt, and cinnamon in a small bowl; set aside.
  • Beat butter, granulated sugar, brown sugar, eggs, and vanilla extract in a large bowl.
  • Gradually beat in flour mixture.
  • Stir in oats and morsels.
  • Drop by rounded Tablespoonfuls onto an ungreased baking sheet.
  • Bake 7 to 8 minutes for chewy cookies, 9 to 10 minutes for crisp cookies.
  • Cool on baking sheets for 2 minutes, remove to wire racks to cool completely.
  • Pan Cookie Variation: Grease 15x10-inch jelly-roll pan.
  • Prepare dough as above.
  • Spread in prepared pan.
  • Bake for 18 to 22 minutes or until lightly browned.
  • Cool completely in pan on wire rack.

Cheer absolutely anyone up with a batch of homemade Oatmeal Scotchies, quite possibly the most perfect cookie, ever. This butterscotch oatmeal cookie recipe is easy to make, hard to resist, and impossible not to love.

1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon Salt
1/2 teaspoon ground cinnamon
1 cup butter (softened (see note 1))
3/4 cup granulated sugar
3/4 cup light brown sugar
2 large eggs
1 teaspoon vanilla extract
3 cups oats (old-fashioned or quick)
1 2/3 cups butterscotch chips ((11 ounces))

Steps:

  • Adjust oven racks to the upper middle and lower middle positions and preheat oven to 375 degrees. Line 2 baking sheets with parchment paper or silicone mats. In a medium bowl, combine flour, baking soda, salt and cinnamon.
  • In a standing mixer fit with the paddle attachment on medium speed, or with an electric mixer, beat together butter, white sugar, brown sugar, eggs, and vanilla extract.
  • Reduce speed to low and gradually add the flour mixture. By hand, stir in the oats and butterscotch chips until just combined (if you use an electric mixer, you may break the chips).
  • Working with 1 heaping tablespoon of dough at a time, roll dough into 1 1/2-inch balls and lay on prepared baking sheets about 2 inches apart. (I use the OXO medium cookie scoop, a size 40 portioner, and do 12 scoops of dough per baking sheet).
  • Bake for 7 to 8 minutes for chewy cookies, or 9-10 minutes for crispy cookies. Cool on baking sheets for 2 minutes and transfer to wire racks to cool completely (if you don't let the cookies cool, they may crumble).

1 egg
1-1/4 cups flour

Steps:

1 cup butter, softened
1½ cups brown sugar, slightly packed
2 eggs + 1 egg yolk (It won't be the end of the world if you don't add the egg yolk but it does make the bars a little more chewy.)
1 tbsp water
1 tsp orange extract or 1 tsp fresh orange zest (If you don't like orange, you can add ½ tsp of ground cinnamon.)
2 cups all-purpose flour
1½ cups quick oats
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 12 ounce package of Nestle Butterscotch chips

Steps:

  • Preheat oven to 375 degrees. Spray a large cookie sheet with cooking spray and set aside.
  • In your stand mixer or with a hand mixer, cream together the softened butter and brown sugar for one minute. Add the eggs, water and orange extract. Mix until well combined.
  • Add the flour, oatmeal, baking powder, baking soda and salt. Mix again until well combined making sure to check the bottom of the mixer or bowl that it is mixed throughout.
  • Add the butterscotch chips and mix until just combined.
  • Scoop the cookie bar dough out onto the cooking sheet that has been sprayed with cooking spray. Use the back of a spoon or a spatula to evenly spread it over the cookie sheet.
  • Bake at 375 for 20-22 minutes. Allow to cool before cutting into squares.
