MOROCCAN BURGER SALAD

2 6-inch pitas, split and quartered
1 pound lean ground beef sirloin
1 red onion (1/2 grated, 1/2 sliced)
3 tablespoons extra-virgin olive oil, plus more for the grill
2 tablespoons harissa (chile paste)
Kosher salt and freshly ground pepper
Juice of 1/2 lemon
2 beefsteak or heirloom tomatoes (about 1 pound), cut into 1-inch wedges
2 Persian cucumbers, sliced 1/2 inch thick
1/3 cup chopped fresh cilantro or mint (or a combination)
1 small heart romaine lettuce, torn
1/3 cup crumbled feta cheese (about 2 ounces)

Steps:

  • Preheat the oven to 350 degrees F. Spread the pitas on a baking sheet and bake until crisp and golden, about 10 minutes. Set aside.
  • Meanwhile, preheat a grill to medium high. Combine the ground beef, grated red onion, 1 tablespoon each olive oil and harissa, and 1/4 teaspoon each salt and pepper in a large bowl. Mix with your hands until just combined. Form into four 1-inch-thick patties; set aside.
  • Whisk the lemon juice with the remaining 1 tablespoon harissa in another large bowl. Gradually whisk in the remaining 2 tablespoons olive oil. Add the tomatoes, cucumbers, herbs and sliced red onion; toss to coat. Set aside.
  • Brush the grill grates with oil. Grill the burgers about 4 minutes per side for medium rare. Add the lettuce and pita wedges to the salad bowl; toss. Top each serving of salad with the feta and burgers.

2 small parsnips, peeled and quartered lengthwise
2 medium turnips, peeled and cut into wedges
1/4 cup plus 2 tablespoons extra-virgin olive oil
2 teaspoons ras el hanout (Moroccan seasoning)
Kosher salt and freshly ground pepper
1 lemon, halved
1 15-ounce can chickpeas, drained, rinsed and patted dry
2 cups shredded rotisserie chicken, skin removed 1/2 cup dried apricots, quartered
1/2 cup pitted oil-cured olives
1/4 cup sliced almonds
1 5-ounce package baby arugula-spinach blend (about 8 cups)

Steps:

  • Preheat the broiler. Toss the parsnips and turnips in a large bowl with 1 tablespoon olive oil, 1 teaspoon ras el hanout, 1/4 teaspoon salt and a few grinds of pepper. Spread on a baking sheet and add the lemon halves cut-side up. Broil until the vegetables are lightly browned, about 5 minutes.
  • Toss the chickpeas in the same large bowl with 1 tablespoon olive oil and the remaining 1 teaspoon ras el hanout. Add to the baking sheet with the other vegetables and stir. Broil until tender, about 5 minutes. Let cool 5 minutes.
  • Squeeze the juice from the broiled lemon into a large bowl. Add 1/4 teaspoon salt and a few grinds of pepper, then whisk in the remaining 1/4 cup olive oil. Add the chicken, dried apricots, olives and almonds and toss to coat. Add the broiled vegetables and chickpeas and arugula-spinach blend; toss.

1 lb baby carrots
2 tablespoons lemon juice
1 teaspoon sugar
1/2 teaspoon paprika
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1 tablespoon olive oil
1/4 cup minced fresh parsley
1 cup raisins

Steps:

  • Slice carrots, diagonally, into pieces.
  • Cook carrots in boiling water until crisp-tender, about 5 minutes.
  • Drain, rinse with cold water, and drain again.
  • Set aside to cool.
  • Combine lemon juice, sugar, paprika, cumin, cinnamon, salt, and cayenne pepper.
  • Stir to dissolve sugar and salt.
  • Stir in olive oil, parsley, and raisins.
  • Add carrots and toss.
  • Cover and refrigerate at least one hour or overnight to chill and blend flavors.
  • Stir occasionally.
  • Serve on lettuce leaves, if desired.
  • Cooking time means refrigeration time.

1/4 cup raisins
1/4 cup chickpeas (garbanzo beans)
1 cup orange juice
12 ounces couscous, cooked
2 tablespoons parsley, minced
2 cups tangerines or 2 cups mandarin orange segments
mint sprig (to garnish)

Steps:

  • In a large nonstick skillet, saute onion, garlic, sweet bell peppers and zucchini in olive oil.
  • Season with salt, pepper, nutmeg and cinnamon.
  • Add 1/2 cup olive oil to vegetables along with raisins, chickpeas and orange juice.
  • Toss vegetable mixture with couscous and pan juices.
  • Add parsley and gently fold in citrus segments.
  • Mound mixture onto a serving platter and garnish with mint.
