PIE IRON BREAKFAST

Pie Iron Breakfast image

The trick to these tasty individual hash browns is preheating the pie iron. The heat of the cast iron helps to sear all the ingredients and keeps the cheesy, eggy goodness from seeping out.

Provided by Food Network Kitchen

Time 25m

Yield 4 servings

Number Of Ingredients 6

4 large eggs
4 slices cooked bacon, diced
4 ounces shredded Cheddar
3 cups frozen hash browns, thawed
Kosher salt and freshly ground black pepper
8 tablespoons (1 stick) unsalted butter

Steps:

  • Prepare a campfire or a charcoal grill for cooking over medium-high heat. Add a square cast-iron pie iron to the campfire or grill to preheat.
  • Lightly beat the eggs in a large bowl. Add the bacon, Cheddar, hash browns, 1 teaspoon salt and 1/2 teaspoon pepper and toss together until everything is equally distributed. Carefully remove the pie iron from the fire. Open the iron and add 2 tablespoons butter, then swirl it around both sides. Add a quarter of the potato mixture to the pie iron and close it. Place the iron back in the fire and cook for 2 minutes, turning and rotating every few seconds. Remove the iron from the fire and transfer the potato pocket to a plate. Repeat with the remaining butter and potato mixture.

MOUNTAIN PIE

Mountain Pie image

I've been making this dessert since I was a kid. In fact, my well-loved recipe card is written in my childhood writing style. Now my own kids are grown, and they call me for the recipe! It's quick and effortless, you can take it anywhere, and it dresses up nicely ;) I like to have leftovers for breakfast, warmed in the...

Time 1h10m

Number Of Ingredients 7

1/2 c butter
1 c flour*
1 c sugar
1 1/2 tsp baking powder
1/2 tsp salt
3/4 c milk**
1 can(s) cherry pie filling

Steps:

  • 1. Melt butter in a deep 3 qt casserole dish, while the oven is preheating, or melt it in the microwave.
  • 2. In a small mixing bowl, combine flour, baking powder, and salt with a whisk. Blend in sugar. Then add milk and whisk until smooth.
  • 3. Once butter is completely melted, pour the batter mix evenly over the melted butter, but DO NOT MIX.
  • 4. Drop the pie filling by spoonsful over the batter, but DO NOT MIX.
  • 5. Bake 45-60 min. at 350*, until golden and bubbly. Serve warm or room temp. Top with ice cream or whipped cream if you like.
  • 6. NOTES: Baking time varies a bit with the size and shape of the baking dish, I find. Don't be afraid to give it a little extra time in the oven if it needs it -- you don't want it gooey. This dessert reheats very well. Cherry is my favorite pie filling to use in this recipe, but others are also good -- experiment to find your favorite! *After becoming gluten intolerant we have substituted gluten free flour very successfully. **If you prefer, use milk and butter substitutes; depending on your filling choice, almond or coconut milk would be wonderful, and soy works well, too.

MOUNTAIN BERRY PIE

Mountain Berry Pie image

I always have a supply of frozen berries and love to make this pie. Thaw just enough to separate- could use fresh if available. Feel free to use more or less of a certain berry, as long as the total amount is around 4 cups.

  • Prepare your campfire and keep your embers red hot. Butter up your pie iron campfire sandwich maker on the insides to stop anything from sticking while cooking.
  • Liberally butter your two slices of white bread on one side each. Spread cherry pie filling on the other side of each piece of bread.
  • Place your sandwich into the pie iron, with the butter side up and the cherry pie filling enclosed. Close your pie iron, then place it directly into the embers of the campfire.
  • Keep turning the pie iron in the embers, so the sandwich cooks evenly inside. You'll only need a few minutes for your mountain pie to bake, and you can remove it from the fire when it's lightly toasted and golden brown on the outside.
