In Thailand, bananas are used for desserts such as this one! Simple recipes like this are also used in the Caribbean! From Vegetarian Times cookbook.

1/4 cup sesame seeds
2 limes, juice of
4 bananas, peeled, sliced diagonally (fresh and firm)
1 cup sugar
1/2 cup water

Steps:

  • In a dry skillet, toast the sesame seeds until golden. Set aside.
  • Squeeze lime juice over banana slices and set aside.
  • In a heavy saucepan, heat the sugar and water over a slow, even heat until the temperature reaches about 235*F. on a candy thermometer and the mixture forms threads. The syrup should be thick and bubbling.
  • Remove from the heat.
  • Butter a sheet of waxed paper.
  • Dip the banana slices into the syrup, place them on the waxed paper.
  • sprinkle them with the sesame seeds.
  • Serve immediately. Enjoy!

Fried Sesame-Seed Bananas image

There are versions of sweet banana treats all over Southeast Asia. Sometimes the bananas are fried in a batter until crisp, sometimes they're cooked in oil or lightly grilled, sometimes they're simmered in sweetened coconut milk. These fried bananas are meltingly lush, and they're given an extra layer of flavor by a squeeze of lime juice. (Some friends like a little dusting of chile powder on top as well, for that hot-sweet-tart hit.) You can also serve them with tart-sweet mango or lime sorbet. They're good for dessert, but almost better as a snack. Make plenty, for it's hard to turn down second helpings. This recipe is excerpted from Burma: Rivers of Flavor. Read our review.

1 cup rice flour
1/4 cup tapioca flour
2 Tbs. sugar
3/4 tsp. salt
3/4 cup water
1 cup sesame seeds
6 bananas or 12 small tropical bananas
Peanut oil for deep-frying
3 limes, cut into wedges, or sorbet or ice cream for serving (optional)

Steps:

  • Combine the flours, sugar, and salt in a bowl. Slowly add the water, stirring to make a smooth, thick batter. Stir in the sesame seeds. Set aside for 30 minutes.
  • Peel the bananas. If using large bananas, cut crosswise in half. Cut the pieces or the small bananas lengthwise in half (in either case, you will now have 24 pieces). Set aside.
  • Put out a slotted spoon or a spider by your stovetop along with one or two plates. Set a deep-fryer, stable wok, or wide heavy pot over medium heat. Add 2 inches of oil, raise the heat to high, and heat until the oil reaches 360°F. Use a thermometer to check the temperature, or drop a dollop of batter into the oil: If it sinks slowly to the bottom and then rises to the surface, the oil is at temperature. If it bobs right up without sinking or darkens immediately, the oil is too hot-lower the heat slightly; if it doesn't rise to the surface, the oil is not yet hot enough.
  • Stir the batter, then drag 1 piece of banana through the batter and slide it carefully into the hot oil. Repeat with 2 or 3 more pieces, one by one. Fry, moving the pieces around carefully and keeping them from sticking to one another, until lightly golden and crispy. Lift out of the oil with the spider or slotted spoon, pausing to let excess oil drain off, and transfer to a plate. Repeat with the remaining bananas and batter.
  • Serve hot, with the lime wedges, sorbet, or ice cream, if you like.

6 large bananas , peeled and quartered
8 tbsp light muscovado sugar
2 tbsp butter
200ml double cream
2 tbsp sesame seeds , toasted
good-quality vanilla ice cream, to serve

Steps:

  • Toss the bananas in 2 tbsp of the sugar. Heat a griddle to medium, then cook the bananas, a few pieces at a time, until sticky and showing griddle marks. Keep warm in a low oven.
  • For the sauce, put the remaining sugar, the butter and cream into a saucepan and stir over a gentle heat until the sugar has melted. Stir in the sesame seeds. Can be made up to a day ahead. To serve, put a few pieces of banana into 8 serving dishes, spoon over some of the caramel, then top with a scoop of ice cream.

  • Cut each banana half into 3 or 4 pieces.

¾ cup all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
1 large banana, mashed
¼ cup white sugar
¼ cup packed brown sugar
1 egg white
2 tablespoons milk
1 tablespoon canola oil
½ teaspoon vanilla extract
⅓ cup black sesame seeds
⅓ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Whisk flour, baking soda, baking powder, cinnamon, nutmeg, and salt together in a bowl. Mix banana, white sugar, brown sugar, egg white, milk, canola oil, and vanilla extract together in a separate bowl; stir into flour mixture just until batter is moistened. Fold sesame seeds and walnuts into batter; pour into prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 35 to 40 minutes. Cool in pan before transferring to a wire rack to cool completely.
