STARR'S SAVORY MEATBALLS
This is my version of meatballs based on experimentation from several different recipes, including my mother's. I like to use these in spaghetti sauce, of course, but they're also delicious in my meatball subs. You can double or triple the recipe - sky's the limit! - and freeze.

Steps:
- Combine ground beef, breadcrumbs, eggs, onion, garlic, salt, pepper, and chili powder in a large bowl until well-combined.
- Form the meat into 50 equally-sized balls, using a rounded teaspoonful for each.
- Add oil to a large skillet and heat over medium-high heat, or add to your slow cooker and turn on the SEAR setting. Once hot, lightly brown the meatballs in batches. Transfer to a large plate after they brown.
- Add ketchup or chili sauce and jelly to a medium saucepan over medium heat. Bring to a boil. Pour about 2/3 cup of the sauce into the bottom of a Dutch oven or Crock-Pot insert, spreading to coat the bottom in an even layer. This can also be done on the SEAR setting in your slow cooker.
- Add one-third of the meatballs to the bottom of the pan or insert. Top with another 2/3 cup of sauce. Add another third of the meatballs on top, followed by another 2/3 cup of sauce. Finish with the remaining meatballs and top with remaining sauce.
- If you are using a Dutch oven, cover and cook on low heat for 3 hours, until sauce has thickened and meat is cooked through.
- If you are using a slow cooker, set to low and cook for 2-3 hours, until sauce is very thick and beef is cooked through.
- Serve immediately on a platter with toothpicks.

Steps:
- In a large bowl, combine the ingredients starting with the cheese and up to (including) red pepper flakes, and mix well.
- Add turkey meat, egg Worcestershire sauce, and blend with your hands until well mixed.
- For the perfect texture, if you have time, cover the meat mixture and chill for an hour or up to 24 hours. It's easiest to form the meatballs when they are very cold.
- When ready to cook for the meatballs, I usually use a one to two tablespoons cookie scoop to measure the meat mixture and roll it into balls.
- Place a large saute pan over medium heat and add 2 tablespoons of the oil. When the oil is hot, add the meatballs just enough to fit in the pan without crowding them.
- Brown the meatballs on all sides, 5 to 8 minutes, and then transfer to a plate, add more oil if needed, and cook the rest of the meatballs.
- Once done cooking the meatballs, add the marinara sauce to the pan and bring it to a simmer. Make sure to scrape up the browned bits from the bottom of the pan using a wooden spoon. Taste the sauce and adjust for salt and pepper. Once hot, add the meatballs and their juices to the pan, gently toss to cover the meatballs with sauce and lower the heat. Cover the pan and simmer until the meatballs are cooked through, for 15 to 20 minutes.
- Serve hot, drizzled with olive oil, and sprinkled with parsley and grated parmesan cheese.

SWEET & SAVORY MEATBALLS
This is a "usual" that I bring to the office potlucks...It's also a favorite of my kids that they now EXPECT to have every New Years' Eve! So easy for a Crockpot appetizer! Sometimes I make this for dinner -- I just whip up some old fashioned mashed potatoes and serve the meatballs & sauce over top (or to the side) of the mashed potatoes...And the kids just love me when I do that!!! :)

Steps:
- Pre-heat the oven to 400 degrees.
- In a large bowl, combine the ground turkey with the bread crumbs. It may be easiest to mix this with your hands.
- Once combined, mix in the minced onion and garlic.
- Roll the ground turkey mixture into 1 inch balls.
- Heat stove to medium high heat.
- Pour your olive oil into a pan or skillet.
- Once the olive oil begins to bubble at the bottom, place your turkey meatballs in the pan or skillet.
- Let each side of the pan or skillet cook the meatball until it begins to brown on the outside.
- Brown the meatballs on all sides, then place them in a pan or baking dish and cook the meatballs at 400 degrees for about 20 minutes.
- While the meatballs are cooking make the sauce as directed by combining the brown sugar and water until they are fully combined and melted together.
- Add the orange marmalade, honey, barbecue sauce, buffalo sauce and mustard until it's fully combined.
- Continue whisking until all the ingredients are fully mixed together and it begins to bubble, but don't let it come to a full boil or your sauce will be too thick and sticky.
- Pour over the cooked meatballs immediately and serve warm.
