SWEET GRILLED CHEESE
This sandwich recipe has been passed down in my family for years and I even sold my husband on it and it's now his favorite. It's your average grilled cheese but with brown sugar added.

Steps:
- Heat a skillet over medium heat. Spread butter onto one side of a piece of bread and place butter side down in the skillet. Place one piece of cheese on top of the bread, then sprinkle with brown sugar. Top with the other slice of cheese. Butter the other slice of bread and place on top with the butter side up. Fry on each side until golden brown, 3 to 5 minutes per side.

SWEET & SALTY GRILLED CHEESE SANDWICH
This is my favourite way to eat this classic comfort food and express meal. I know everyone has their own way of making it, but I'm posting this recipe because most people probably haven't thought about adding dates. Quantities will vary depending on the size of your bread and your personal taste. Enjoy!

Steps:
- Spread a THIN coat of butter or mayonnaise on one side of each slice of bread.
- On unbuttered side, layer cheese and dates.
- Cover with the second slice, buttered side out.
- Preheat a frying pan on med-high heat.
- Place sandwich in pan.
- Cook 2-3 minutes until golden and cheese has melted enough that you can flip it without everything slipping out.
- Flip over, flatten with spatula if desired.
- Cook another 2-3 minutes until golden.
SWEET AND SPICY GRILLED CHEESE SANDWICHES
Steps:
- Heat oil in a nonstick skillet over medium-high heat. Lower heat to medium. Add onions and saute, stirring, until edges are browned, about 10 to 12 minutes. Season with salt and freshly ground black pepper, to taste.
- Place 3/4-ounce Cheddar on 1 slice bread. Spread 1 tablespoon caramelized onions on top of cheese and top with 3/4-ounce pepper Jack. Top with 1 large or 2 medium slices tomato and other slice of bread. Repeat with 3 other sandwiches.
- Spray a nonstick skillet or griddle with cooking spray and heat until hot. Place sandwich on griddle and weigh down with a heavy skillet or plate. Lower heat to medium-low and grill until underside is a deep brown but not burnt and cheese is partially melted, about 5 to 6 minutes. Flip sandwich and grill other side, an additional 4 to 5 minutes. Slice in half and serve hot.

I can remember eating these as a kid with Mom and Dad forty years ago. They are high up on the list of my favorite summertime comfort foods.

- Spread the mustard onto one side of each of the bread slices. Place the luncheon meat onto half of the bread slices, then top each with 2 slices of Cheddar cheese, sliced tomato, and onion. Place the remaining bread slices, mustard-side-down onto the onions. Spread butter evenly onto the outside of each sandwich.
- Heat a large skillet over medium-low heat. Place the sandwiches into the skillet, and cook until they are golden brown, then flip the sandwiches over, and continue cooking until golden brown and crispy on the other side, about 6 minutes per side. Allow the sandwiches to cool slightly before serving.

SWEET AND SALTY BREAKFAST SANDWICH
This is a savory sandwich with a nice hint of sweet brown sugar. The cranberry bun is very easy to make and really brings this breakfast to the next level. If you do not use salted butter you may want to sprinkle a dash of salt on the eggs while they cook. Please don't be worried about the long list of directions, it's really not hard to make!

Steps:
- FOR THE BUNS:.
- Heat oven to 350 degrees F.
- In a food processor or by hand rough chop the cranberries. In a medium bowl mix the cranberries with 1 tsp brown sugar.
- Add the dough to the bowl and mix in the cranberries by hand. Just smash up the dough and form back into a ball.
- Let the dough rest while you prepare the bacon.
- FOR THE BACON:.
- Lay the bacon slices on a baking sheet covered in foil. Sprinkle with the remaining 2 tsp of brown sugar. Bake for about 10-15 minutes or until crispy. Let cool for a few minutes before removing from pan to drain on paper towels.
- While the bacon is cooking, cut dough into 4 equal pieces and drop like biscuits onto a lightly greased baking sheet. (They really should look like biscuits). Bake for about 25 minutes or until the tops are completely golden and the bottoms are brown, but not burning.
- Remove from oven and let cool while you prepare the eggs.
- FOR THE EGGS:.
- You're just making a simple fried egg(or if you like your scrambled do that instead). Melt the butter in a small frying pan over medium heat. Crack one egg into the pan and let cook until the whites begin to set.
- If you have room for more eggs add each one after the whites of the others have just started to set so they don't cook together quite as much.
- Flip the eggs over and cook until desired doneness. I do mine for about 2 minutes on each side, but it's really up to your taste here.
- Remove eggs from pan and let rest on a plate while you assemble the sandwiches.
- TO ASSEMBLE:.
- Cut the buns in half and but one slice of cheese, one fried egg and two slices of bacon on each.
- Grab a napkin cause these are a little messy :).
SUPER SNAZZY GRILLED CHEESE SANDWICH
I made this for the RSC #11 contest. This certainly isn't a low fat or diet friendly sandwich but it is very indulgent tasting. I grilled mine on my Foreman Grill so that I didn't have to use extra butter and plus I got the nifty grill mark lines :)

Steps:
- Saute shallots, mushrooms and bacon in the olive oil until the bacon is cooked through but not crispy and the shallots are softened.
- Put the shredded cheese in a small bowl and sprinkle with cayenne pepper. Toss until all of the cheese is coated by the cayenne pepper.
- Put half of the cheese mixture on one of the slices of bread.
- Top cheese with the shallot, mushroom and bacon mixture and spread out so that it fully covers the bread and cheese.
- Arrange the six tomato halves on the bread so that they form two parallel lines down the middle of the bread.
- Put one spinach leaf on each corner.
- Put the second half of the cheese mixture on top of the spinach and top with the second slice of bread.
- Spray each side of the sandwich with butter flavored cooking spray and put onto a hot Foreman type grill and cook until the cheese is melted and the outside is golden (about 5 minutes) OR fry in a buttered pan as you would a traditional grill cheese sandwich.
