SWEET RED CABBAGE RECIPE
A delicious sweet braised red cabbage recipe, perfect for Sunday Roasts and Christmas Dinner

Steps:
- Thinly sliced the red cabbage
- Melt the butter in a large pan over medium heat.
- Add the red cabbage and coat with the butter
- Cook until it softens usually around 5 minutes.
- Add the sugar to the cabbage and gently mix to coat evenly.
- Now add the balsamic vinegar to the pan
- Simmer and then reduce the heat to medium low.
- Cover the pan and simmer until the cabbage is thoroughly cooked and slightly soft, stirring often, for about 30-45 minutes depending how soft you like your red cabbage.
- Season to taste with salt and pepper and serve

MOM'S SWEET-AND-SOUR RED CABBAGE

- 1. Using a box grater, mandoline, or a coarse Microplane grater, grate the cabbage. In a large saucepan, heat the oil over medium-high heat. Add the onion and sauté for 2 minutes.
- 2. Lower the heat to medium; add the cabbage and apples and stir to combine. Add the juniper berries, allspice berries, cloves, bay leaf, salt, pepper, jelly, vinegar, sugar, and 1/2 cup (120ml) of water and stir to combine. Turn the heat to low, cover, and cook for 40 minutes, until the cabbage is tender.
- 3. Remove the juniper berries, allspice berries, cloves, and bay leaf. Serve the cabbage hot or at room temperature. Refrigerate for up to 4 days. Leftovers can also be frozen in an airtight container for up to 1 month.
RED CABBAGE

- Heat the butter and oil in a large lidded saucepan. When hot, add the onion and fry gently until softened. Stir in the spices. Add the cabbage and fry for 3-4 minutes, stirring occasionally, until glossy.
- Stir in the sugar, apples and red wine vinegar. Cover with a lid and let it cook gently for 30 minutes.
- Stir in the redcurrant or cranberry sauce (if using) and cook for a further 10 minutes. If you aren't using the sauce, taste the cabbage and add a little more sugar if it's too tart for your taste.

- In 10-inch skillet, heat 1 inch water to boiling. Add cabbage; heat to boiling. Boil uncovered about 15 minutes, stirring occasionally, until tender; drain and set aside. Wipe out and dry skillet with paper towel.
- In same skillet, cook bacon over medium heat 4 minutes, stirring occasionally. Stir in onion. Cook 2 to 4 minutes, stirring occasionally, until bacon is crisp. Remove bacon and onion with slotted spoon; drain on paper towels. Drain fat, reserving 1 tablespoon in skillet.
- Stir brown sugar and flour into bacon fat in skillet. Stir in water, vinegar, salt and pepper until well mixed.
- Stir in cabbage, bacon and onion. Cook over medium heat 1 to 2 minutes, stirring occasionally, until hot.

- Tip the cabbage into a large pan with the sugar, vinegar, cinnamon and star anise. Season well. Put over a medium heat and bring to a simmer, then cover, reduce the heat and cook for 1 hr, simmering gently and stirring occasionally.
- Remove the lid, turn the heat up to medium and continue cooking for 20 mins, uncovered, until tender and the liquid has reduced to a sticky syrup. SWEET AND SOUR RED CABBAGE

- In a 12-inch skillet, saute the shallots and garlic in the butter over medium heat for 1 minute, until golden brown. Add the shredded cabbage. Add the wine to deglaze the pan, loosening any browned bits on the bottom of the pan with a wooden spoon. Stir in the vinegar and sugar. Season with salt and pepper to taste. Increase the heat to high and bring to a boil, stirring constantly to prevent the sugar from burning. Reduce the heat and simmer about 10 minutes, until the liquid is reduced by 3/4.
