VEGAN SWEET POTATO CASSEROLE

Vegan Sweet Potato Casserole image

We took this classic holiday dish and made it vegan-friendly, nixing the heavy cream and butter in favor of rich, creamy coconut milk. The result is a fluffy, non-dairy sweet potato filling that will satisfy everyone at your table. It's topped with a crunchy golden-brown nut layer spiced with cinnamon.

Categories     side-dish

Time 1h

Yield 6 servings

Number Of Ingredients 14

2 pounds sweet potatoes, peeled and roughly chopped (about 5 medium potatoes)
Kosher salt
1 cup canned unsweetened coconut milk
3 tablespoons packed vegan light brown sugar
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
Pinch freshly grated nutmeg
1/3 cup raw walnut halves and pieces
1/3 cup raw pecan halves
1/3 cup all-purpose flour
1/4 cup packed vegan light brown sugar
1/4 teaspoon ground cinnamon
Kosher salt
3 tablespoons unrefined coconut oil, melted and cooled slightly

Steps:

  • Preheat the oven to 375 degrees F.
  • For the sweet potatoes: Put the sweet potatoes in a large pot and fill with enough water to cover by 2 inches. Season with a good pinch of salt and bring to a boil over medium-high heat, lower to medium low and simmer until the potatoes are tender, 8 to 10 minutes. Drain well and return the potatoes to the pot.
  • Add the coconut milk, brown sugar, vanilla, cinnamon, nutmeg and a pinch of salt; use a potato masher to mash the sweet potatoes until the mixture very smooth (see Cook's Note). Taste and adjust the seasoning with more salt if needed. Transfer to a 2-quart baking dish and smooth into an even layer.
  • For the nut topping: While the potatoes are cooking, add the walnuts, pecans, flour, brown sugar, cinnamon and a pinch of salt to a food processor and pulse a few times until evenly and finely chopped (the nuts should be small but not pulverized). Add the coconut oil and pulse a few more times until the mixture is fully moistened and combined.
  • Sprinkle the nut mixture evenly over the sweet potato filling. Bake until the top is golden brown and the filling is heated through, 25 to 30 minutes. Let the casserole cool 5 minutes before serving.

SALT-RUBBED SWEET POTATOES WITH SOUR CREAM AND CHIVES

Salt-Rubbed Sweet Potatoes With Sour Cream and Chives image

If you've ever thought the somewhat-dull sweet potato could use some punch, try covering it in a layer of salt before you bake it: The salt flavors and tenderizes the skin, leaving a crisp exterior that begs for the cooling tang of sour cream. Leave the potatoes a little damp after you've scrubbed them clean so that you'll have an easier time getting the salt to stick.

Time 1h

Yield 4 servings

Number Of Ingredients 5

4 medium sweet potatoes (8 to 10 ounces each), scrubbed and left damp
2 tablespoons kosher salt
1/4 cup sour cream
1/4 cup minced chives
Black pepper

Steps:

  • Heat the oven to 400 degrees. Line a sheet pan with parchment paper. Use a fork to poke holes all over the flesh of the damp potatoes, then rub each one all over with 1/2 tablespoon salt.
  • Bake for about 1 hour, until tender, then allow to cool slightly before brushing off excess salt and slicing each one lengthwise. Open up the sweet potato, use a fork to rough up its flesh, then dollop each with 1 tablespoon sour cream and sprinkle with 1 tablespoon chives. Garnish with black pepper.

Yield Serves 6

Number Of Ingredients 23

Sweet Potato Filling
1 large sweet potato, peeled and chopped into 1-inch chunks
1/2 cup packed light brown sugar
3 tablespoons vegan butter
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon salt
Sweet Kraut
1 tablespoon olive oil
2 cups thinly sliced red cabbage (approximately 1/4 head, outer leaves and stem removed)
1/4 cup packed light brown sugar
1/2 teaspoon ground cinnamon
Pinch of ground allspice
Pinch of ground cloves
1 cup sweet Riesling
Turnover Crust
1 cup all-purpose flour, plus more for dusting
1 tablespoon vegan butter, cold
1 tablespoon vegan shortening, cold
2 tablespoons granulated sugar
1 tablespoon olive oil
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground allspice

Steps:

  • 1. To make the sweet potato filling, bring a medium pot of salted water to a boil over high heat. Boil the sweet potato chunks just until tender, about 10 minutes.
  • 2. Drain the potatoes, reserving 1/4 cup of the cooking water.
  • 3. Transfer the hot potatoes and reserved cooking water, the brown sugar, vegan butter, vanilla, and salt to a medium bowl. Beat with a hand mixer until totally smooth, then set aside to fully cool.
  • 4. Meanwhile, make the sweet kraut. Heat the oil in a medium sauté pan over medium heat. Add the cabbage and allow it to start to sear for about 3 minutes, then add the brown sugar and spices. Let the sugar start to melt with the cabbage juice for another 3 minutes, then add the Riesling. Allow the cabbage to cook down and steam itself for another 8 to 10 minutes. The cabbage will now be dark pink instead of purple. Remove the pan from the heat and let it cool fully.
  • 5. While the potatoes and kraut are cooling, make the turnover crust. Pulse together the flour, vegan butter, and vegan shortening until it looks chunky and sandy. Add the sugar, olive oil, cinnamon, salt, and allspice and pulse again. While pulsing, slowly drizzle in 2 to 3 tablespoons cold water, little by little-just until a loose dough ball is formed and spins around the bowl of the food processor. Wrap the dough in plastic wrap and refrigerate for at least 10 minutes or up to 2 days.
  • 6. Preheat the oven to 400°F. Line a sheet pan with parchment paper.
  • 7. On a work surface dusted with flour, roll out the dough to 1/4 inch thick. Use a 4-inch-wide circle cutter to stamp out the turnover shells. Place 1 heaping tablespoon of the sweet potato filling in the center of each dough circle. Bring the edges of the circle together, forming a half circle, and pinch them together tightly. Use a fork to crimp the edges of the seal. Arrange the turnovers on the prepared sheet pan.
  • 8. Bake the turnovers until golden brown, 10 to 12 minutes. Remove from the oven and allow to cool slightly. Arrange on serving dishes with the sweet kraut and serve.

2/3 cup whole blanched almonds, ground in food processor
1 teaspoon ground cinnamon
1/2 teaspoon anise extract

1 egg, beaten
Powdered sugar, for dusting

Steps:

  • When the potatoes are cool enough to handle, peel off the skin. Cut the potatoes into large chunks and add to a mixing bowl. Mash with a potato masher or fork. Add the sugars and mix thoroughly. Stir in the lemon zest, ground almonds, cinnamon, anise extract and honey.
  • Roll out 1 of the pastry sheets on a floured cutting board. Using a 3 to 3 1/2-inch biscuit cutter, cut out as many circles of the dough as possible. Put a dollop of sweet potato filling on each circle, then fold the circles in half to form a half moon. Press the edges together with a fork to seal and arrange on sheet tray lined with parchment. Repeat with the remaining pastry sheets and filling. Brush the top of each turnover with beaten egg.
