Microwave, covered, on high for 6-8 minutes or until tender, stirring every 2 minutes., Meanwhile, in a large skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; remove with a slotted spoon., In same skillet, heat remaining oil over medium-low heat. Add apple and carrot; cook, covered, 5-7 minutes or until carrot is just tender, stirring occasionally. Return sausage to pan. Stir in sweet potatoes and seasonings; cook, covered, 10-12 minutes or until carrot is tender.

- Heat oven to 375ºF.
- Unroll pizza dough onto baking sheet sprayed with cooking spray; pat into 12x10-inch rectangle.
- Cook sausage, onions and mushrooms in large nonstick skillet on medium-high heat 5 min. or until sausage is lightly browned, stirring occasionally. Remove from heat.
- Spread pizza sauce onto half the dough to within 1 inch of edges; top with 1/2 cup mozzarella, sausage mixture and remaining mozzarella. Fold dough over filling; seal edges with fork.

SAUSAGE CALZONES

- Preheat oven to 425 F.
- Brown sausage in a small skillet in a drizzle of olive oil. Transfer the cooked crumbled sausage to a paper towel lined plate to drain.
- Combine sausage with ricotta, parsley, garlic, Parmigiano, nutmeg, pepper, and pimento. Roll out doughs and halve cross-wise. Place a dough rectangle on a nonstick cookie sheet. Use 1/2 cup mozzarella on half of each dough rectangle and pile a mound of filling on half of the total area. Fold dough over and pinch edges to seal. The result is a rectangular turnover.
- For half-moon shaped calzones, trim excess dough. Roll dough bits into strips, tie in knots and brush with garlic oil and cheese. Garlic knots are fun to dip at the table.
- Bake calzones 15 minutes or until golden all over. Serve calzones with warm tomato, marinara, or pizza sauce for dipping.
- Cook's Note: For an additional time saver, 2 packages precooked sausage crumbles, 8 ounces each, may be substituted for raw Italian sausage used in the above recipe.
- Add olive oil to medium saucepan over moderate heat. Add garlic and crushed pepper to the heated olive oil; when pepper snaps and garlic sizzles, stir in crushed tomatoes. Season sauce with salt, pepper, and Italian seasoning. Cook for five minutes and stir in parsley. Serve.

- Heat the oven to 200C/180C fan/ gas 6. Mix together the ingredients for the spiced sauce in a bowl. Tip the onion quarters, corn, mango, sweet potatoes and sausages into a roasting tin, then pour over the sauce and stir to coat. Add a pinch each of salt and pepper.
- Bake for 45-50 mins, giving it a toss halfway through, until the sausages are cooked through and the sweet potato is soft. If freezing, leave to cool completely first. Can be frozen for up to one month. Defrost thoroughly before reheating in the oven at 200C/180C fan/gas 6 for 35-40 mins. Serve sprinkled with the coriander and chilli, if you like.

- Preheat oven to 375.
- Leave peels on sweet potatoes and chop them and apple, onion and sausage into bite sized chunks.
- Place potatoes, onions and apples into ziploc bag.
- Pour in olive oil and all seasoning (more or less of these taste.).
- Shake bag until everything is coated well.
- Pour into 13x9 in pan and toss with sausage.

- Dice sweet potato and combine with enough water to cover it in a pot; bring to a boil. Boil with loose lid on top until potatoes can be pierced easily with a fork. While the sweet potatoes are boiling, peel sausage out of casings. Heat olive oil in pan and add sausage. Crumble with spatula and brown. Rinse spinach, chop, and steam. Chop garlic and add to sausage when it's almost done browning. Set aside. Preheat oven to 425 degrees. On a floured surface area, roll out pizza dough into 12 inch circle. Place on oiled baking sheet or hot pizza stone. In large bowl, combine sausage and garlic mixture, cooked sweet potatoes, steamed spinach, and mozzarella cheese. Place in one half of pizza dough. Fold over other half and press edges together. Bake for 6-8 minutes.
