BAKED SWEET POTATO CHIPS



Baked Sweet Potato Chips image

Baked sweet potato chips that are incredibly flavorful and crispy. Perfect alongside sandwiches, burgers, chili, and the like.

2 organic (~150 g each) sweet potatoes
2 Tbsp olive oil
1/4 tsp sea salt ((optional))

Steps:

  • Preheat oven to 250 degrees F (121 C) and position oven rack in the center of the oven.
  • Rinse and dry your sweet potatoes thoroughly and slice them as uniformly thin as possible (~1/8 inch thick slices). If you have a mandolin, use it. Otherwise, use a very sharp knife to get these uniformly thin. Know that chips that are too thick in parts won't crisp up all the way. Still delicious, just not "chip" crispiness.
  • Toss slices in a touch of olive oil to lightly coat, then sprinkle with salt. Lay out in a single layer on a parchment-lined baking sheet and bake for about 2 hours, flipping chips once at halfway point to ensure even cooking. I also rotated mine for more even cooking (optional but recommended). Note: thickness of slices will impact cooking time. Check at ~15 minute intervals during the second hour of cooking to ensure they aren't burning.
  • Remove once crisp and golden brown. Some may feel a little tender in the middle but take them out and let them rest for 10 minutes or so to crisp up before sampling. Serve immediately.

1 large sweet potato or yam
4 tablespoons olive oil
½ teaspoon salt
½ teaspoon pepper
1 teaspoon dried thyme

Steps:

  • Preheat the oven to 400˚F (200˚C). Line a baking sheet with parchment paper.
  • Cut the sweet potato into ⅛-inch to ¼-inch (3- to 6-mm) slices. In a medium bowl, toss the sweet potato slices with olive oil until fully coated. Add the seasonings and toss to coat. Arrange the slices on a baking sheet without overlapping the potatoes.
  • Bake for 25 - 35 minutes, flipping halfway, until golden brown. Let the slices cool to room temperature.
  • Enjoy!

Oh, I love sweet potatoes. This is just a perfect recipe for when I am craving some chips. The addition of lime is really what makes these. Next time I need to add the margarita!

4 medium sweet potatoes, thinly sliced
4 Tbsp olive oil, extra virgin
4 limes
sea salt, for sprinkling

Steps:

  • 1. Preheat oven to 450 degrees F. Thinly slice sweet potatoes (with skin on). Lay slices on 2 parchment covered baking sheets. Using a pastry brush, generously brush slices w/ olive oil.
  • 2. Bake slices for 15 - 20 minutes until crispy. Place on serving platter and squeeze generous amounts of lime juice over chips; follow w/ a sprinkling of salt. Use the same baking sheets for the remainder of slices and follow as above.
  • 3. Warning: BET YOU CAN'T EAT JUST ONE!

Number Of Ingredients 3

4 medium orange-fleshed sweet potatoes (sometimes known as yams), peeled
Vegetable oil (for deep frying)
Salt

Steps:

  • Place potato flat on work surface, holding one end. Using vegetable peeler and starting at center of potato, shave into long, wide ribbons in quick strokes. Turn potato and continue shaving opposite end. Turn potato over and repeat process for each side. Repeat with remaining potatoes.
  • Heat oil to 375°F in heavy, wide, 4-inch-deep pot. Shake one handful of potatoes in oil; do not crowd. Fry until crisp and slightly golden, stirring occasionally, 30 to 60 seconds. Remove with slotted spoon; drain on paper towels. Season with salt. Repeat with remaining potatoes in batches. (Can be prepared 6 hours ahead. Cover lightly and store at room temperature.)

Peanut or vegetable oil, for frying (peanut oil is best)
3 tablespoons kosher salt
2 tablespoons light brown sugar
1 tablespoon chili powder
Pinch cayenne pepper, or as desired
2 sweet potatoes, washed, scrubbed, and dried

Steps:

  • Special equipment: deep-fry thermometer, mandoline slicer
  • Pour oil to a depth of 4 inches in a heavy-bottomed pot and heat over medium-high heat to 350 degrees F. Line a baking sheet with paper towels.
  • Mix the salt, sugar, chili powder and cayenne in a small bowl and set aside. Very thinly slice the sweet potatoes on a mandoline slicer and carefully drop into the hot oil in batches, being careful to not overcrowd the pan. Deep-fry until golden around edges, 45 seconds to 1 minute, and transfer to a lined baking sheet. Sprinkle the chips with seasoning while they are still hot and let cool to crisp. Remove the chips from the baking sheet to a serving bowl and eat immediately while still crunchy!

4 medium unpeeled baking potatoes
4 teaspoons salt, divided
4 cups ice water
1 tablespoon chili powder
1 teaspoon garlic salt
1/4 to 1/2 teaspoon cayenne pepper
Oil for deep-fat frying

Steps:

  • Using a vegetable peeler or metal cheese slicer, cut potatoes lengthwise into very thin strips. Place in a large bowl; add 3 teaspoons salt and ice water. Soak for 30 minutes. Drain potatoes; place on paper towels and pat dry. , In a small bowl, combine the chili powder, garlic salt, cayenne and remaining salt; set aside. , In an electric skillet or deep-fat fryer, heat oil to 375°.
