SWEET POTATO PARSNIP LATKES WITH FETA AND LEEKS



Sweet Potato Parsnip Latkes with Feta and Leeks image

Number Of Ingredients 11

1 tbsp butter or olive oil
2 medium leeks (washed and thinly sliced)
1 lb sweet potato (usually 1 large)
1 lb parsnips
½ tsp kosher salt
¼ tsp ground white pepper
1 pinch nutmeg (ground)
4 oz feta, crumbled (a creamy French or Israeli style is nice)
2 large eggs (lightly beaten)
¼ cup matzo meal
½ - 1 cup Canola oil (for frying (amount of oil will vary depending upon how many skillets you want to have going))

Steps:

  • Melt the butter (or heat the olive oil) in a saucepan over a medium heat. Add the leeks and a pinch of salt and saute, stirring occasionally, until the leeks have softened and are beginning to color (~10 minutes).
  • While the leeks are cooking, wash and peel the sweet potato and parsnips. Grate on the coarse holes of a box grater, and place in a large bowl (if you have no patience for hand-grating, you can use the shredding disk on a food processor, but place about ¼ of the mixture back in the bowl of the processor with the regular blade and pulse a few times). Add the salt, pepper, nutmeg, feta, egg and matzo meal. Stir to combine. Mix in the cooked leeks.
  • Pour the canola oil to a depth of ½" in a frying pan - you can use the pan used for the leeks, and additional pans if you'd like to make quick work of it. Heat the oil over a medium flame until hot - if you drop in a shred of the latke mixture, it should bubble vigorously. Shape ~3 tablespoons of the latke mixture into a round shape (I like to pack a ¼ cup measure ¾ full), and place in the oil. Flatten slightly to form a small pancake. Repeat as many times as your pan space allows. Cook the latkes until well-browned, ~5-7 minutes, then flip and brown the other side. These latkes are more delicate than standard potato pancakes (especially when warm), so be delicate. When the second side has cooked, place on a plate lined with brown paper, stacking as needed. If you want to be extra-good, now and then strain out any rogue bits that have floated into the oil before they burn (or leave them in, for a taste closer to what grandma would have made). Serve.   • If you're not serving at once, layer the cooled latkes in a sealed container with parchment between the layers, and freeze. To serve, preheat the oven to 375 degrees. Place the latkes on a cookie sheet (you can place them on a rack on top of a cookie sheet for a crisper result, but usually the sheet is fine for me), and cook until they have colored a bit more and are heated through and sizzling (~10-15 minutes).

1 lb parsnips, peeled and shredded
1 medium sweet potato (8 oz), peeled and shredded
1/3 cup Gold Medal™ all-purpose flour
2 tablespoons chopped green onions (2 medium)
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground red pepper (cayenne)
1/4 teaspoon freshly ground pepper
2 eggs, slightly beaten
6 tablespoons canola oil
3/4 cup sour cream
Additional chopped green onions, if desired

Steps:

  • In medium bowl, mix all ingredients except oil, sour cream and additional green onions until blended.
  • In 12-inch skillet, heat 2 tablespoons of the oil over medium-high heat. Scoop sweet potato mixture by 1/4 cupfuls into skillet; flatten slightly. Cook 4 minutes or until golden brown, turning once. Drain on paper towels. Repeat with remaining batter. Add remaining oil as needed to prevent sticking. Top with sour cream. Garnish with additional green onions.

800g sweet potato , peeled and cut into chunks
800g parsnip , peeled and cut into chunks
200ml tub reduced-fat crème fraîche
2 tbsp shredded sage
4 tsp wholegrain mustard
butter , for greasing
1 slice granary bread , finely chopped
50g coarsely grated vegetarian-style parmesan
3 tbsp pine nut

Steps:

  • Boil the sweet potatoes and parsnips for 20 mins in salted water until tender. Drain really well, then roughly mash with half the crème fraîche and half the sage, the mustard and salt and pepper. Pile into a buttered ovenproof dish and smooth over.
  • Heat oven to 190C/170C fan/gas 5. Mix the breadcrumbs with the Parmesan, pine nuts and remaining sage. Spoon the remaining crème fraîche over the mash, scatter over the bread and cheese mixture, then bake for 35-40 mins from fridge-cold, 25-30 mins if not, until golden.

1/2 medium yellow onion
1/2 pound Yukon gold potato, (about 1 large)
1/2 pound sweet potato, (about 1 medium)
2 tablespoons all-purpose flour
1 teaspoon kosher salt
Pinch cayenne
1 large egg, lightly beaten
Vegetable oil
4 teaspoons light sour cream
4 teaspoons beet or regular horseradish
2 to 3 sprigs flat-leaf parsley

Steps:

  • Preheat the oven to 200 degrees F. Put a wire rack on a baking sheet and place in the oven.
  • Grate the onion on a box grater into a large bowl. Grate both potatoes into the same bowl, grating down the length of the potato to get long strands. Toss the potatoes with the onions as you work to keep them from discoloring. Put potato mixture in a clean dish towel and wring out excess liquid. Toss the latke mixture with the flour, salt, and cayenne. Stir in the egg.
  • Heat a 1/4-inch oil in a large cast iron or other heavy skillet over medium heat. Working in batches, spoon about 1/4 cup of the latke mixture into the skillet, pressing lightly to form 3-inch pancakes. Take care not to overcrowd the pan. Cook, turning once, until just golden, about 2 minutes per side. Transfer to the rack in the oven while you cook the remaining batter.
  • Serve the latkes topped with a small dollop of sour cream and horseradish. Garnish with a parsley leaf. Serve immediately.

1 large sweet potato, peeled and grated
½ onion, grated
2 eggs
¼ teaspoon black pepper
2 teaspoons olive oil, or more if needed
½ teaspoon salt
1 cup applesauce
1 cup plain nonfat yogurt

Steps:

  • Preheat oven to 200 degrees F (95 degrees C). Line a baking sheet with paper towels.
  • Fill a bowl with lightly-salted water. Rinse the grated sweet potato in the water, and drain into a sieve. Pat the grated sweet potato dry with a cloth or paper towels, then place into a bowl. Squeeze excess moisture from the grated onion, and place into the bowl with the sweet potato. Stir the eggs and pepper into the mixture until well combined.
  • Heat the olive oil in a nonstick skillet over medium heat until it shimmers, and spoon about 1 heaping tablespoon of the potato mixture per patty into the hot oil. Flatten the patties with a fork, and fry until golden brown and crisp on the bottom, 5 to 8 minutes. Flip and cook on the other side, sprinkle with salt, then set the cooked patties aside on the prepared baking sheet in the preheated oven while you finish cooking the latkes. Stir the potato mixture before cooking each batch of patties. Serve hot with applesauce and yogurt.

Steps:

  • Peel potato and coarsely grate into a bowl. Add lemon juice and toss to combine. Place potato on towel, then gather up corners to form a sack and twist tightly to wring out as much liquid as possible. Stir potato together with parsnips, flour, eggs, chives, salt, and pepper until combined well.
  • Heat oil in a 12-inch nonstick skillet over moderate heat until hot but not smoking. Fill a 1/4-cup measure three-fourths full with latke mixture and carefully spoon it into skillet, then flatten to 3 inches in diameter with a slotted spatula.
