MIMI'S SWEET POTATOES IN ORANGE CUPS
My mother made these every year for the holidays. I have made them for a church fellowship dinner, using 100 oranges. They were a big hit! Little kids can hold them in their hands and walk around without spilling. You can prepare this up to three days ahead of time and it travels well. There's an extra bonus: The orange sections can be used for making delicious ambrosia.

SWEET POTATO ORANGES
Adapted from AllRecipes: A beautiful and unique way to serve sweet potatoes - absolutely delicious, too! Note: It is easiest to remove the flesh of the oranges using your bare (clean) hands vs. a spoon! The filled oranges can be made a day ahead and brought to room temperature before adding streusel topping and heating. Be sure to cut the oranges so that they are fairly stable and will not roll over into the water when baking.

Let sweet potatoes cool several minutes, cut in half and scoop out insides into a large bowl. Mash with butter, brown sugar, evaporated milk and salt until creamy and fluffy. Cut oranges in half and slice a very thin disk from bottoms so they rest flat. Preheat oven to 350°F. Using a paring knife, cut around the inside rim of the orange, removing the orange sections and pulp. Discard juice, pulp and seeds, leaving just the hollowed-out peel. Fill each orange cup with 1⁄4 cup of sweet potato mixture and top with mini marshmallows. Place on a sheet tray and bake for 20 to 25 minutes, until marshmallows are slightly browned. Steps:
- In a covered large saucepan, cook sweet potato in enough boiling water to cover, about 10 minutes or until tender.
- Meanwhile, in a small saucepan, bring orange juice to boiling over medium heat. Stir in orange peel and lemon juice.
- In small mixing bowl, stir together the cold water and cornstarch; stir into the orange juice mixture. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more.
- Transfer cooked vegetables to a serving dish. You can either drizzle the orange juice mixture over the vegetables or mix it in before putting the sweet potatoes in the serving dish. I prefer to mix it in, as it ensures that the lovely citrus flavors are spread throughout the vegetables. Then just sprinkle the almonds on top and serve.
