8 medium sweet potatoes (about 4 pounds)
2/3 cup packed brown sugar
4 teaspoons cornstarch
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup orange juice
1/4 cup honey
3 tablespoons butter
2 tablespoons water
2 tablespoons grated orange zest
1/2 cup chopped walnuts

Steps:

  • Place sweet potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until tender. Drain. When potatoes are cool, peel and cut into 1/2-in. slices. Arrange in a greased shallow 3-qt. baking dish; set aside., In a large saucepan, combine the brown sugar, cornstarch, salt and cinnamon. Stir in the orange juice, honey, butter, water and orange zest. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in walnuts. , Pour mixture over the potatoes. Bake, uncovered, at 350° for 25 minutes or until heated through.

Every holiday my mother makes these candied sweet potatoes with orange juice and every holiday someone asks for her recipe. After 53 years, she certainly has perfected it!

6 medium sweet potatoes
1 cup packed brown sugar
½ cup unsalted butter
¼ cup orange juice
½ teaspoon salt
4 whole cloves, or more to taste

Steps:

  • Place sweet potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender but not mushy, 18 to 20 minutes. Drain. Peel sweet potatoes and cut in half lengthwise. Discard skins.
  • Combine brown sugar, butter, orange juice, salt, and cloves in a large skillet or electric frying pan; bring to a boil. Reduce heat and simmer for 5 minutes until syrupy. Arrange potato halves in the syrup and simmer for 20 to 25 minutes. Remove cloves from syrup before serving, if you wish.

3 cups cooked, mashed sweet potatoes
1 cup white sugar
¼ cup orange juice
2 eggs, lightly beaten
1 teaspoon vanilla extract
1 cup butter, softened, divided
1 tablespoon grated orange peel
1 cup brown sugar
½ teaspoon all-purpose flour
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Prepare oranges by cutting tops off, 1/4 to 1/2 inch down. Spoon out the flesh, leaving a shell.
  • In a large bowl combine sweet potatoes, sugar, orange juice, eggs, vanilla extract, 1/2 cup butter and grated orange peel. Spoon mixture into orange shells. Place in a deep casserole dish.
  • In a small saucepan over medium heat, combine remaining 1/2 cup butter, brown sugar, flour and pecans. Cook until sugar dissolves in melted butter. Spoon over oranges. Fill casserole dish with water to reach 1/2 inch in depth.
  • Bake in preheated oven for 30 minutes.

My mother made these every year for the holidays. I have made them for a church fellowship dinner, using 100 oranges. They were a big hit! Little kids can hold them in their hands and walk around without spilling. You can prepare this up to three days ahead of time and it travels well. There's an extra bonus: The orange sections can be used for making delicious ambrosia.

1/2 stick butter, softened
1/4 cup orange juice
1/4 cup chopped pecans
6 large oranges (heavy for their size)
48 mini-marshmallows

Steps:

  • Preheat oven to 375 degrees F.
  • Cover sweet potatoes with cold water in a large pot and boil until fork tender. Peel the potatoes, transfer to a bowl, and mash. Stir in butter, orange juice and pecans, and mix until incorporated.
  • For the orange shells, cut each orange in half and scoop out the pulp using a small knife or grapefruit spoon. Reserve the pulp for another use.
  • Fill each orange shell with the potato mixture and top off with the marshmallows. Bake until hot and the marshmallows are melted.

1/2 cup orange juice
3 large oranges
6 marshmallows, quartered

Steps:

  • Combine sweet potatoes, butter, salt and orange juice.
  • Mix well.
  • Cut oranges in halves, crosswise and remove juice and pulp.
  • (Use part of this juice to mash in the potatoes.) Scrub shells well.

  • Preheat oven to 400°F. Pierce sweet potatoes several times with a fork or knife. Place on a foil- lined baking sheet and bake 1 hour. Let sweet potatoes cool several minutes, cut in half and scoop out insides into a large bowl. Mash with butter, brown sugar, evaporated milk and salt until creamy and fluffy. Cut oranges in half and slice a very thin disk from bottoms so they rest flat. Preheat oven to 350°F. 1 pound sweet potatoes (peeled and cut into smaller chunks)
1 teaspoon orange peel (grated)
1/2 cup orange juice
1 teaspoon lemon juice
1 tablespoon cold water
1 teaspoon cornstarch
2 tablespoons almonds (slivered)

Steps:

  • In a covered large saucepan, cook sweet potato in enough boiling water to cover, about 10 minutes or until tender.
  • Meanwhile, in a small saucepan, bring orange juice to boiling over medium heat. Stir in orange peel and lemon juice.
  • In small mixing bowl, stir together the cold water and cornstarch; stir into the orange juice mixture. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more.
  • Transfer cooked vegetables to a serving dish. You can either drizzle the orange juice mixture over the vegetables or mix it in before putting the sweet potatoes in the serving dish. I prefer to mix it in, as it ensures that the lovely citrus flavors are spread throughout the vegetables. Then just sprinkle the almonds on top and serve.
