SWEET POTATO NOODLES (JAPCHAE)

_Japchae_ is traditionally made for parties or celebrations, but I like to make it for a light lunch or part of a big dinner. Dried sweet potato noodles can be found in most Asian supermarkets. They are incredibly chewy but healthy and delicious. This recipe works as a side dish (_banchan_) or can even be served as an appetizer or light snack.

Yield Makes 4 or 5 servings

Number Of Ingredients 14

8 ounces sweet potato noodles
1/2 bunch spinach (about 4 ounces), rinsed and trimmed
2 cloves garlic, minced
1 tablespoon plus 1 1/2 teaspoons Asian sesame oil
1/4 teaspoon salt
1 tablespoon vegetable oil
6 ounces beef rib-eye, cut into 1/4- to 1/2-inch-thick strips
1/4 cup plus 1 teaspoon soy sauce
1/4 medium onion, sliced
3 to 4 pyongo or shiitake mushrooms, sliced
1 carrot, shredded or cut into thin strips
3 green onions, cut into 1-inch pieces
1/4 cup sugar
Toasted sesame seeds for garnish

Steps:

  • Cook the sweet potato noodles in a large pot of boiling water for 4 to 5 minutes. Immediately drain and rinse thoroughly under cold water. Be sure not to overcook the noodles, or they will lose their chewy texture. If you like, cut the noodles with scissors into 6- to 7-inch lengths for easier eating.
  • Blanch the spinach in boiling water. Rinse immediately under cold water, squeeze the water from the leaves and form into a ball, and then cut the ball in half. Combine the spinach, half the garlic, 1/2 teaspoon of the sesame oil, and 1/4 teaspoon salt in a small bowl. Set aside to let the flavors soak in.
  • Heat the vegetable oil in a large skillet over medium-high heat. Add the beef, the remaining garlic, 1 teaspoon of the soy sauce, and 1 teaspoon of the sesame oil. Stir-fry until the beef is cooked, 3 to 4 minutes. Add the onion, mushrooms, and carrot and cook until the onion is translucent, about 3 minutes. Add the green onions and stir-fry for another minute. Remove from the heat.
  • In a large bowl, thoroughly combine the noodles, beef mixture, spinach, remaining 1/4 cup soy sauce, 1 tablespoon sesame oil, and the sugar. Serve warm, sprinkled with sesame seeds.

¼ cup soy sauce
4 teaspoons mirin (Japanese sweet wine)
1 tablespoon sesame oil
2 cloves garlic, minced
1 teaspoon ground black pepper
1 pound flank steak, sliced across the grain

2 tablespoons honey
1 tablespoon sesame oil
1 pinch ground black pepper
8 ounces Korean sweet potato noodles (dangmyun)
1 egg
2 cups baby spinach, or more to taste
1 teaspoon light olive oil
1 large carrot, cut into matchsticks
½ onion, sliced

Steps:

  • Combine 1/4 cup soy sauce, mirin, 1 tablespoon sesame oil, garlic, and 1 teaspoon pepper in a bowl. Add steak; stir to coat. Marinate for at least 30 minutes.
  • Combine 1/4 cup soy sauce, honey, 1 tablespoon sesame oil, and 1 pinch pepper in a large bowl; stir sauce well.
  • Fill a large pot with water and bring to a rolling boil; stir in noodles and return to a boil. Cook uncovered, stirring occasionally, about 5 minutes. Drain. Add noodles to sauce; toss to coat.
  • Whisk egg in a bowl. Heat a skillet over medium-low heat; pour in egg. Cook until firm, about 1 minute per side. Slice into strips.
  • Bring a large pot of lightly salted water to a boil. Add spinach and cook, uncovered, until just bright green, about 1 minute. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain.

3 small sweet potatoes (1 1/4 pounds), peeled
1/4 cup vegetable oil
Kosher salt and freshly ground pepper
1 small red onion, halved and thinly sliced
1 red bell pepper, cut into thin strips
1/2 to 1 small serrano chile pepper, thinly sliced into rounds
1/2 cup frozen fire-roasted corn
3 cloves garlic, finely chopped
3/4 teaspoon ground cumin
3/4 teaspoon chili powder
1/2 teaspoon ground coriander
1/2 cup fresh cilantro, roughly chopped
Juice of 1/2 lime, plus wedges for serving

Steps:

  • Preheat the broiler. Cut the potatoes into long noodles using a spiralizer (or use 1 pound store-bought sweet potato noodles). Spread on a rimmed baking sheet, drizzle with 2 tablespoons vegetable oil and sprinkle with 1/2 teaspoon salt and a few grinds of pepper. Broil until browned in spots and slightly softened, 3 to 5 minutes.
  • Heat the remaining 2 tablespoons vegetable oil in a large nonstick skillet over medium-high heat. Add the red onion, bell pepper and serrano; cook, stirring, until just softened, about 3 minutes. Add the corn, garlic, cumin, chili powder, coriander, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the vegetables are tender, 3 to 5 more minutes.
  • Add the broiled sweet potato noodles and 1/4 cup water to the skillet with the vegetables. Cook, gently tossing, until the noodles are coated and tender, 1 to 2 minutes. Remove from the heat and stir in the cilantro and lime juice; season with salt and pepper. Serve with lime wedges.

Sweet Potato Noodles are spiralized sweet potatoes that are a great low-carb nutrient-dense alternative to pasta - makes for an easy and quick side dish!

16 oz spiralized sweet potatoes (or about 2 large sweet potatoes)
1 tbsp olive oil
2 cloves garlic clove (minced)
1/2 tbsp oregano
1 cup marinara sauce of choice
1/4 cup low fat milk
Salt and pepper (to taste)
8 oz crimini mushrooms (sliced)
2 tbsp olive oil (or olive oil)
4 6 oz skinless boneless chicken breasts
2 tsp poultry seasoning mix (or you can combine equal parts onion powder, garlic powder, mustard powder and cumin)
Fresh parsley (chopped, for serving)
Grated Parmesan cheese (for serving)

Steps:

  • In a large skillet over medium-high heat, heat olive oil, then add garlic, oregano, and marinara sauce. Sautee for a couple minutes until well blended and aromatic.
  • Then add the milk and stir to combine for a couple minutes. Add in the sweet potato noodles and season with salt and pepper. Let cook for 5-7 minutes, tossing with tongs to combine with the sauce. Divide the sweet potato noodles into four plates.
  • Wipe off the sauce from the skillet and heat half of the basting oil, then cook the mushrooms with salt and pepper to taste. Cook for 5-7 minutes until browned and softened. Divide between the four plates
  • In the same pan, add remaining basting oil and heat until the oil sizzles.
  • Add the seasoning to the chicken on both sides, then sautee the chicken in the pan for 3-4 minutes per side until juices run clear and chicken is browned on both sides. Divide the chicken into the four plates, and slice if you desire.
  • Serve with parsley and grated Parmesan cheese, if you desire.

How to Make Sweet Potato Noodles image

1 tbsp extra virgin olive oil
2 medium sweet potatoes (see notes for size)
pinch of kosher salt

Steps:

  • Use your spiralizer to sprialize the sweet potatoes. I used a hand-held sprializer, which was slightly difficult to use for a sweet potato. If you don't own a spiralizer, you may use a julienne peeler to create sweet potato noodles. Hold the potato in one hand and slowly pull the julienne peeler down the potato with your other hand. Repeat this process until the entire sweet potato is "peeled". NOTE: using a julienne peeler is a tedious process but it can be done.
  • Cook the sweet potato noodles. Place 1 tbsp of extra virgin olive oil in a 10 inch skillet (I used cast iron but you may use stainless steel) and heat over medium high heat. Add the spiralized sweet potatoes and toss with tongs to coat with the olive oil. Continue to toss with the tongs every few seconds to prevent the potatoes from burning or becoming stuck on the bottom of the skillet. Do this for 5-10 minutes. The cooking time will depend on your preferred texture of the noodles. If you love a little crunch, cook for 5 minutes. If you prefer soft noodles, cook for 10. Sample a noodle to find out if it's reached your preferred texture.
  • Once the noodles are done cooking, remove from heat and serve directly from the skillet or in serving bowls with whichever sauces or topping you prefer.

One of the most famous Sichuan style hot and sour sweet potato noodles. This hot and sour sweet potato noodle is the most common and super yummy Chinese street food.

2 serving sweet potato noodles
2 tbsp. roasted peanuts or deep fried soy beans
2 spring onions ( , chopped)
a small bunch coriander ( , chopped)
1/2 cup chopped pickled Sichuan vegetable ( , zhacai)
3 garlic cloves mashed
1 tbsp. peanuts oil
1/2 tsp. Sichuan peppercorn powder
1/2 tsp. Chinese five spicy powder
1 tbsp. Chinese chili oil
2 tbsp. vinegar
1 tbsp. light soy sauce
1 tsp. sesame oil
salt to taste
1 cup water for boiling the noodles or hot stock

Steps:

  • Soak the sweet potato noodles with enough water until soft. Transfer out and set aside.
  • In the serving bowls and mix all the seasonings. Heat up peanuts oil in pan to stir-fry the mashed garlic until aroma. Mix the garlic oil with Sichuan pepper, red oil, Chinese five spice powder, green onion, coriander, light soy sauce, black vinegar and salt in serving bowls.
  • Cook soaked sweet potato noodles around 5-8 minutes until you can break the noodles (or follow the instruction on the package). Transfer the noodles out to the serving bowls and then add top with pickled vegetables, roasted peanuts and chopped spring onions and coriander. Serve hot!

The first time I tried the Korean Stir-Fried Glass Noodles a.k.a Japchae was when my manager brought the dish in for a potluck a few years ago. It was literally one of The Best things I've tried, made me go back for refills.

2 lb Beef
1 lb Sweet Potato Noodles
3 medium Carrots
1 white Onion
1/2 bn Green Onions
6 Garlic Cloves
1/2 lb Spinach
4 tbsp Sesame Oil
1 tbsp Olive oil
6 tbsp Soy Sauce
3 tbsp Brown Sugar

Steps:

  • Prepare the ingredients for the recipe.
  • Prepare the ingredients for the sauce.
  • Bring water to a boil, add a bit of oil. Add noodles and cook them for 5-6 minutes. Drain when cooked.
  • Preheat skilled to high heat. Cook the pre-sliced beef until it's golden brown. Season beef with half portions of the following - soy sauce, sesame oil and brown sugar, while it's cooking.
  • Place noodles in a large bowl, top them with cooked beef.
  • Dice onion into long strips. Cut carrots into strips and chop green onion. Preheat an oiled skilled and toss in the carrots and onion.
  • When the veggies soften up, add in the remaining half portions of the following - soy sauce, sesame oil and brown sugar. Add in pressed garlic, green onions and cook for a few minutes until it's softened.
  • Add diced spinach into the mixture and turn off the heat imminently.
  • Add all vegetables to the noodles and toss everything together.
  • Serve while it's still warm. This dish also reheats well.

2 tablespoons rice wine vinegar
2 tablespoons tamari or soy sauce (choose tamari if gluten-free)

1 teaspoon grated ginger root
1 medium garlic clove
1/2 cup warm water
1 tablespoon olive oil
1 medium sweet potato (peeled and spiralized with 1/8-inch julienne blade)

Steps:

  • Make the sauce. Add all peanut sauce ingredients to a small bowl and whisk until smooth. Set aside.
  • Spiralize your sweet potato using the 1/8" julienne/spaghetti blade on your spiralizer.
  • Set a large saute pan over medium heat. When hot, add the olive oil. When the oil is hot, add the sweet potato noodles. Cook until beginning to get tender, about 5 minutes, stirring frequently. If the noodles to stick to the bottom of the pan, add a tablespoon or two of water to help keep the sweet potatoes moving. If they begin to burn, reduce heat. Watch them closely because they can burn quickly - trust me, I know first hand!
  • Add spinach and cook, stirring frequently, until spinach is wilted, another minute or two.
  • Add the peanut sauce and cook, stirring and tossing, until the peanut sauce is bubbling and thickened slightly and the veggies are coated, about 1 minute more.
  • Transfer to plates and add toppings. Add additional protein if desired. Serve immediately.
