My family loves quick breads. This one is moist and spicy. If you don't have mini loaf pans it works just as well in regular size pans. -Nancy Foust, Stoneboro, Pennsylvania

Number Of Ingredients 14

3-1/2 cups all-purpose flour
2-2/3 cups sugar
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1-1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
4 large eggs, room temperature
2 cups mashed sweet potatoes
2/3 cup canola oil
2/3 cup 2% milk
1-1/2 cups raisins
1 cup chopped walnuts

Steps:

  • Preheat oven to 350°. In a large bowl, whisk the first 8 ingredients. In another bowl, whisk eggs, sweet potatoes, oil and milk until blended. Add to flour mixture; stir just until moistened. Fold in raisins and walnuts., Transfer to 4 greased 5-3/4x3x2-in. loaf pans. Bake 35-40 minutes or until a toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks to cool.

Old Fashioned Sweet Potato Bread is delicious and comforting. This quick bread recipe can be made into 4 mini loaves or one large loaf.

15 ounces canned sweet potatoes ((drained, save 2 tbsp of liquid))
1 1/4 cups granulated sugar
1/3 cup water
1/3 cup vegetable oil
2 large eggs
1 3/4 cups all purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon baking powder
1/2 cup chopped pecans ((optional))
1/2 teaspoon allspice
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees. Spray a 9x5 loaf pan (or mini loaf pans) with cooking spray. Set aside.
  • In a large mixing bowl, mash sweet potatoes in 2 tablespoons of liquid.
  • Add sugar, water, oil, and eggs to mashed sweet potatoes and mix well.
  • Add flour, baking soda, salt, nutmeg, cinnamon and allspice, and baking powder. Mix well.
  • Stir in chopped pecans.
  • Pour evenly into prepared pan(s). For the 9x5 pan, bake for 60-70 minutes or until toothpick inserted into center comes out clean.** The smaller loaves will take about 45 minutes to bake.
  • Cool for 15 minutes in the pan. Turn out onto a wire rack to cool completely.
  • Store in an airtight container.

Sunny's Cheat Sheet Mini Meatloaves with Sweet Potatoes and Broccoli image

Number Of Ingredients 25

1 pound ground chicken
1/2 cup lightly packed chopped fresh basil
1/2 cup lightly packed chopped fresh parsley
1/3 cup finely chopped white onion
2 tablespoons plain breadcrumbs
1 teaspoon Hungarian paprika
1 teaspoon kosher salt
Freshly ground black pepper
4 ounces shredded Parmesan
3 cloves garlic, grated on a rasp
2 scallions, finely chopped (white and green parts)
1 slice white bread, cut into tiny cubes
1 large egg white, whisked until frothy
1 cup pizza sauce
2 tablespoons honey
1 tablespoon hot sauce
Freshly ground black pepper
One 1.5-pound bag steamable sweet potatoes
2 cups fresh broccoli florets (from about 1 head broccoli)
Zest of 2 lemons plus lemon wedges, for spritzing
Zest of 1 orange plus orange wedges, for spritzing
1/2 teaspoon garlic powder
1/8 teaspoon freshly ground nutmeg
3 tablespoons olive oil
Kosher salt and freshly ground black pepper

Steps:

  • For the meatloaves: Line a sheet pan with nonstick aluminum foil and set aside.
  • Add the ground chicken to a large bowl and break it up. Set aside. Combine the basil, parsley, onion, breadcrumbs, paprika, salt, pepper, cheese, garlic, scallions, bread and egg white in a medium bowl and stir until everything is blended. Add to the chicken and gently mix with your less dominant hand, turning the bowl with the dominant hand and using your fingers on the less dominant hand as a pitchfork, folding as you go, until mixed well. Form into 4 equal parts and and place on the lined sheet pan. Form into bricks of a similar size. Set aside.
  • For the meatloaf topping: Heat the pizza sauce, honey, hot sauce and plenty of black pepper in a small saucepot on medium heat until it comes to a simmer. Simmer until it reduces and thickens slightly, about 10 minutes. Set aside.
  • For the veggies: Preheat the oven to 375 degrees F. Steam the sweet potatoes according to the package instructions, about 6 minutes. Slice into 1-inch-thick coins.
  • Combine the sweet potatoes in a large bowl with the broccoli, citrus zests, garlic powder and nutmeg. Drizzle with the olive oil and toss. Sprinkle with salt and pepper and toss again.
  • Add the vegetables to the sheet pan with the meatloaves by placing the sweet potatoes on first, surrounding the meatloaves, then pouring over the broccoli. Bake for 30 minutes, then remove and brush the meatloaves with the topping. Spritz the vegetables with juice from the orange and lemon wedges. Continue to bake until the internal temperature of the meatloaves registers 165 degrees F, about another 15 minutes.

1 cup canola oil
3 cups sugar
1 cup chopped walnuts
1 cup raisins
GLAZE:
1-1/2 cups confectioners' sugar
1 teaspoon grated orange zest
4 to 5 teaspoons orange juice
1/3 cup chopped walnuts

Steps:

  • In a large bowl, combine the first seven ingredients. Whisk together the sweet potatoes, eggs and oil. Add sugar; whisk until smooth. Stir into dry ingredients just until combined. Fold in walnuts and raisins (batter will be thick). Transfer to two greased 9x5-in. loaf pans. , Bake at 350 ° for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes before removing to wire racks. , Meanwhile, for glaze, combine the confectioners' sugar, orange zest and enough orange juice to achieve desired consistency. Spread over warm loaves; sprinkle with walnuts.

500 g sweet potatoes (peeled and cut into 1cm thick chips)
1 tablespoon olive oil
1 zucchini (medium grated)
400 g ground pork (mince mix veal and pork specified 800g)
400 g ground veal (mince mix veal and pork specified 800g)
1 brown onion (small grated)
2 garlic cloves (minced)
1 carrot (medium peeled and grated)
1 1/4 cups fresh breadcrumbs
1/3 cup steak sauce (Fountain specified)
1/4 cup sweet chili sauce (Fountain specified)
1/4 cup mayonnaise (reduced-fat whole-egg)
salad leaves (to serve)

Steps:

  • Preheat oven to 200C (180C fan forced).
  • Grease a large baking tray and also grease an 8 hole 3/4 cup capacity mini loaf pans (or I think muffin holes of the same capacity should work - have often cooked mini-meatloafs in muffin pans).
  • Place sweet potato on prepared baking tray and drizzle and season with salt and pepper and toss to coat and set aside.
  • Squeeze excess liquid from zucchini and then combine zucchini, veal and pork mince, onion, garlic, carrot, breadcrumbs, HALF the steak sauce and 2 TABLESPOONS sweet chilli sauce in a a bowl and season with salt and pepper and then press mixture into prepared pan holes.
  • Place meatloaves on top shelf in oven.
  • Place chips in bottom shelf and bake for 20 to 22 minutes or until meatloaves are just cooked through and then remove meatloaves form oven and using a spatula, transfer meatloaves to a greased baking baking tray.
  • Using a pastry brush, brush with the remaining steak sauce and bake for 10 minutes or until browned and cooked through and then remove from the oven and cover loosely with foil to keep warm.
  • Transfer chips to top shelf in oven and cook for 5 minutes or until golden and tender.
  • Meanwhile, combine mayonnaise and remaining sweet chilli sauce in a bowl.
  • Serve meatloaves with chips, mayonnaise mixture and salad leaves (me personally I would do steamed vegies instead of salad leaves).

1/2 cup north carolina sweet potato, cooked and mashed
1 cup brown sugar
1 cup apple juice
3/4 cup raisins
1 1/2 tablespoons vegetable oil
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground allspice
2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup walnuts, chopped

Steps:

  • Preheat oven to 325. In a large saucepan, combine sweet potatoes, brown sugar, apple juice, raisins, oil, cinnamon, nutmeg, cloves and allspice. Bring to a boil over high heat. Lower heat and simmer 2 minutes. Cool.
  • Sift together flour, soda and baking powder. Add to the cooled sweet potato mixture; stir well. Fold in walnuts.
  • Spoon batter into 3 greased mini 3x6-inch loaf pans. Bake on lowest rack for 60 minutes or until a wooden pick inserted into center comes out clean. Cool in pans for 10 minutes then turn out and transfer loaves to wire racks to cool completely.

1/4 cup butter or 1/4 cup margarine, softened
1/2 cup sugar
1 egg
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/2 cup cold mashed sweet potatoes
2 tablespoons milk
1/4 cup raisins

Steps:

  • In a small mixing bowl, cream butter an sugar Add egg, mix well Combine the flour, baking powder, cinnamon, ginger and salt, add to creamed mixture just until blended (batter will be thick).
  • Combine sweet potatoes and milk, stir into batter until blended.
  • Fold in raisins.
  • Transfer to two greased 5-3/4-in.

  • Bake at 350 for 35-40 minutes or until lightly browned and a toothpick inserted near the center comes out clean.
  • Cool for 10 minutes before removing from pans to wire racks.
