3 to 4 large sweet potatoes (about 1 3/4 pounds), peeled and cubed
1/2 cup milk
1/4 cup brown sugar, packed

1/2 teaspoon kosher salt
2 large eggs
1/2 cup all-purpose flour
1/2 cup brown sugar, packed

Steps:

  • For the sweet potatoes: Add 1 3/4 pounds peeled and cubed sweet potatoes to a large pot of salted water. Bring to a boil over high heat, then lower the heat to a simmer and cook until the potatoes are very tender, 15 to 20 minutes. Drain and cool. Mash the sweet potatoes.
  • For the filling: Preheat the oven to 350 degrees F. Butter a 2-quart baking dish.
  • Whisk together the butter, mashed sweet potatoes, milk, brown sugar, vanilla, salt and eggs in a large bowl. Transfer to the prepared baking dish.
  • For the topping: Combine the flour, brown sugar, butter and salt in a medium bowl until moist and the mixture clumps together. Stir in the pecans. Spread the mixture over the top of the sweet potatoes in an even layer. Bake until mostly set in the center and golden on top, 25 to 30 minutes. Serve hot.

  • Preheat oven to 375 degrees F (190 degrees C). Grease a casserole dish.

2 ½ tablespoons butter, melted

Steps:

1/2 cup half-and-half
1/2 cup maple syrup
1 teaspoon vanilla extract

1/4 cup chilled butter, cut into small pieces
1/2 cup chopped pecans

Steps:

  • Preheat oven to 375 degrees.
  • Place potatoes in large pot of water and cook until tender.
  • Drain, cool slightly and peel.
  • Cut into chunks.
  • Combine the half-and-half and next 4 ingredients in a large bowl, stirring with a whisk.
  • Add potato to egg mixture, beat with a mixer at medium speed until smooth.

3.5 lbs Sweet Potato, about 6 medium Garnet Sweet Potatoes
4 tbsp Chipotle in Adobo, 3 peppers and 1 tbsps. of adobo sauce
1/2 Cup Olive Oil
3 tbsp Lemon, juice; juice of 1 large lemon.
1/4 Cup Maple Syrup
1 tbsp Tomato Paste
3 Garlic, cloves
1 tsp Salt
1 tsp Black Pepper
2 tbsp Pine Nuts
1/4 Cup Fresh Herbs, flat leaf parsley, and sweet basil
1 Garlic, clove, minced
2 tbsp Unsalted Butter

Steps:

  • In a food processor jar, add chipotle, olive oil, lemon juice, maple syrup, tomato paste, garlic cloves, salt and black pepper. Pulse until smooth and everything is fine pureed. Transfer half into a small bowl and remaining into a wide large prep bowl and set aside.
  • Wash and peel Sweet Potatoes. Using a mandilion slicer or food processor slicer attachment, slice all sweet potatoes to 1/8 of an inch thick slices.
  • Position an Oven Rack in the middle. Set oven to preheat at 425 degrees Fahrenheit. In a small microwave safe bowl, add butter, minced garlic clove (optional), and 1 tbsp from the reserved chipotle dressing. Heat for 30 seconds at time or until just melted. Set aside.
  • Transfer half of sweet potato slices into large bowl with half of dressing. Massage slices with dressing gently to evenly coat all potatoes in dressing. Stack 10 slices of sweet potatoes at a time in hand and then transfer to baking dish. Arrange in circular pattern. Repeat until all dressed sweet potatoes slices are transferred to baking dish. Repeat this step with remaining half of sweet potatoes and reserved dressing.
  • Cover baking dish with aluminum foil and set to bake for 1 hour and 40 minutes.
  • While sweet potatoes bake, heat a dry skillet. Add pine nuts and toast for 1 minute or until slightly golden. (don't leave any longer on heat as pine-nuts tend to burn quickly.) Set aside. In a food processor jar, add toasted pine nuts and herbs. Pulse until fine chopped.
  • At 1 hour mark, carefully take the casserole out of the oven. Baste with one coat of garlic-butter mixture. To prevent overbrowning, cover the edges of pie dish with foil. Return to the oven. Repeat basting with garlic-butter once more after 15 minutes. Bake until most sweet potatoes are golden on top (slightly caramelizing). Take out, let cool for 10 minutes before serving.
  • Garnish casserole with chopped nuts-herb mixture. Serve and enjoy!

1 1/2 teaspoons Maldon sea salt flakes (preferred) or salt
1/2 teaspoon freshly ground black pepper
2 teaspoons chopped rosemary or oregano

Steps:

  • Preheat oven to 400°F (207°C).
  • Using a mandolin slicer, thinly slice the peeled potatoes. Pat dry the potatoes with paper towels.
  • Place the sliced sweet potatoes in a large bowl. Using your hands, toss with butter, salt, black pepper and chopped rosemary/oregano until fully coated.

1 small sweet potato
1 medium yellow onion
2 tablespoons butter
1 can black beans
2 tablespoons milk
2 tablespoons cream cheese
1/4 teaspoon cayenne pepper
1 teaspoon cumin
1 pinch of salt and pepper
1 cup shredded cheddar cheese
2 XL flour tortillas

Steps:

  • Peel and cut your sweet potato into small chunks, about 2 inches in diameter and boil in 10 cups of hot water until tender-about 15 minutes. You'll know your potato is ready because you will be able to easily pierce it with a fork.
  • Slice your onions and cook them in a pan with 1 tablespoon of butter until caramelized.
  • Meanwhile, drain and rinse your black beans and set them aside.
  • Once sweet potatoes are tender, throw them in a blender with remaining butter, milk, cream cheese, and spices to form a puree.
  • Lay your tortilla flat on a clean surface and spread your puree over half. Top with caramelized onions, strained black beans, and about 1/2 cup of cheddar cheese.
  • Fold your tortilla in half so that the filling is covered. Place a medium-sized nonstick fry pan on your stove over medium heat.
  • Once your pan is hot, place your quesadilla directly onto the pan and cook for about 3 minutes until the tortilla is golden brown.
  • Flip and cook for another 3 minutes until both sides are crispy and the cheese is melted.
  • Repeat steps 5 & 6 with your second tortilla. Serve hot on its own or with guacamole or salsa!

1 orange, zested and juiced
1 teaspoon ground cinnamon
1 tablespoon honey
1/2 cup milk
1/2 cup diced dried apricots
1/2 cup oatmeal
1/4 cup firmly packed brown sugar
2 tablespoons extra-virgin olive oil
2 tablespoons butter, cut into pea-sized pieces
1/2 cup chopped walnuts

Steps:

  • Preheat the oven to 375 degrees F.
  • Put the sweet potatoes on a sheet tray and roast for 35 to 40 minutes. The sweet potatoes might still be a little hard in the center- no problem!
  • While the sweet potatoes are baking make the topping. In a food processor, combine the oatmeal, brown sugar, olive oil, butter, and walnuts and pulse until mixture comes together.
  • When the potatoes are cool enough to handle, peel them and cut them into 1-inch chunks. Discard the skins. Put the potatoes into a large dish and add the remaining ingredients. Mash together with a potato masher until well combined.
  • Transfer the mixture to a 2-quart casserole dish. Crumble the topping mixture over the potatoes. Bake until the mixture hot all the way through and the topping is brown and crispy, about 30 minutes.

1 head of garlic
oil
generous ½ cup unsweetened non-dairy yogurt of choice
2 tablespoons lemon juice
2 tablespoons tahini
1 small handful chopped fresh parsley
1 small handful chopped fresh mint
sea salt and ground black pepper, to taste
2 small-medium sweet potatoes, peeled ((about 750 grams total))
2-3 tablespoons arrowroot powder
cayenne, cinnamon, thyme, garlic powder, rosemary, turmeric or any other SALT-FREE seasoning that you like (we're adding salt at the very end)
high heat-tolerant oil spray ((I like avocado oil))
fine sea salt, to taste

Steps:

  • Preheat the oven to 425°F. Line a large baking sheet with parchment paper and set aside. If your baking sheet is well-seasoned, you can skip the parchment lining.
  • Make the dip: Cut the top ½ inch off of the garlic head. Tear a piece of foil (enough to wrap around the garlic) and place the garlic head in the middle. Drizzle oil on top, letting it seep into the garlic cavities. Wrap the garlic up and place it in the oven. Roast the garlic until squidgy and golden inside, about 45 minutes. Set aside to cool.
  • Place the yogurt into a small bowl. Squeeze the cooled roasted garlic into the bowl. Add the lemon juice, tahini, parsley, mint, salt, and pepper to the yogurt mixture. Mash and stir it all together with a fork until combined. Cover the bowl and set aside in the refrigerator.
  • Make the fries: Cut the sweet potatoes into 3-inch long and ½ -inch thick fries. Place the cut sweet potatoes into a large bowl and cover them with cold water. Let them sit for at least an hour or up to overnight in the refrigerator.
  • Drain the sweet potatoes and lay them on a clean kitchen towel. Place another clean kitchen towel on top and loosely roll them all up. Massage the little towel sweet potato roll-up for a bit so that the fries are as dry as possible.
  • In another large bowl, toss the cut sweet potatoes with the arrowroot powder and SALT-FREE seasonings of your choice (salt is happening later). The cut sweet potatoes should have a light, powdery coating of arrowroot.
  • Spray the parchment on your baking sheet evenly with the oil spray. Arrange the sweet potatoes in rows on the baking sheet. Spray the tops of the sweet potatoes with the oil spray before sliding them into the oven.
  • Bake the sweet potato fries for 25 minutes or very lightly browned in spots and the arrowroot is forming a light "webbing" on the undersides of the fries.   • At the end of the 25 minutes, the sweet potato fries should have some strong brown spots and crisp exteriors. If they still look like they need crisping, carefully flip them one more time and bake until they've reached your desired doneness.
  • Quickly transfer the fries to a large bowl and toss them with a fat pinch of sea salt. Warning: when they're piping hot, they won't FEEL completely crispy yet.
