SWEET POTATO FRIES
Steps:
- Preheat oven to 400 degrees F. Place a baking sheet in the oven.
- On a cutting board, slice the sweet potatoes in half lengthwise. Slice each half into 6 wedges. Place wedges in a large bowl, add canola oil, season with salt and pepper, to taste, and toss to coat.
- Remove the baking sheet from the oven. Place the fries onto the baking sheet and bake for 15 minutes. Turn the fries and bake for another 15 minutes until brown and crispy. Transfer to a serving bowl and serve.

- Slice your sweet potatoes into long, thin strips, about 1/4-inch wide. It's important that the fries are uniformly sized for even cooking. Add the fries to a large bowl of cold water and soak for at least 30 minutes (or up to overnight).
- Preheat the oven to 425°F. Line a large baking sheet (or two medium baking sheets*) with parchment paper, or mist with cooking spray. Set aside.
- Drain the fries, rinse out and dry your bowl of water, then blot dry the fries with a clean towel.
- Add the fries back to the clean bowl.* Then drizzle evenly with the olive oil, and toss until they are evenly coated.
- In a separate small bowl, whisk together the cornstarch, garlic powder, smoked paprika and black pepper until combined. Sprinkle the mixture evenly over the bowl of fries, then toss until the fries are evenly coated and the cornstarch has soaked into the oil.
- Spread the fries out in an even layer on the prepared baking sheet. Be sure that the fries aren't overlapping, or else they will not cook evenly.
- Bake for 15 minutes. Then remove pan from oven, and take the time to flip each fry with a spatula. Rearrange so that the fries are evenly spaced and not overlapping again. Then bake for 10-15 more minutes, or until the fries are crispy and have begun to brown a bit on the tips.
- Transfer the baking sheet to a cooling rack, sprinkle with your desired amount of salt, then let the fries rest for 5 minutes. Serve warm.
SWEET POTATO FRIES
I have long enjoyed making traditional fries from russet potatoes and invented this recipe as a vitamin A-loaded alternative. My 2-year old can't get enough of them! I choose not to peel them (more nutritious), but some people prefer the texture more when they are peeled...

- Slice sweet potatoes into fry-sized strips (~ 1/2 inch square strips going down the full length of the potato).
- Toss them in olive oil and lay them out in a single layer on a baking sheet.
- Sprinkle with freshly ground sea salt and paprika to taste.
- Bake at 350 degrees for approximately 45 min, flipping them all over after 25 minute.
- OR broil on low (~ 400 degrees) for ~ 20-25 minute You shouldn't need to flip them, just watch that they don't get too brown.
- These taste best when they have just a touch of brown on them, but don't overdo them. They should not be crispy, just cooked and somewhat limp.

- Preheat oven to 425 degrees.
- Put cut fries into large ziploc bag with olive oil, put in salt, garlic and cinnamon and shake to coat.
- Place fries onto baking sheet leaving space between fries.
- Put in oven for 10 minutes and then flip them over.
- Place back in for 10 more minutes.
- They should be soft on the inside and browned on the outside.
- Let cool for 5 minutes.
- You may also use regular potatoes or 1/4 packet taco seasoning to alter taste to your liking.

- Scrub the sweet potatoes and leave the skin on (best part.).
- I like using a french fry cutter (it works sort of like those apple corer/slicer things) for this but if you don't have one, just use a knife to cut the potatoes into shoestrings.
- Put the raw fries into a mixing bowl, and pour in the olive oil. Toss well to coat.
- Add the seasonings and toss well again.
- Arrange the fries on a baking sheet and bake at 400F for 10 minutes.
- Turn the fries with a spatula and bake for another 10 minutes.
- Blot any excess oil with paper towels, serve, and enjoy!
INA GARTEN'S BAKED SWEET POTATO FRIES
These potatoes are not quite as crispy like fries but they're better for you because they're baked. The serving size says 4, but I eat all of them at one sitting! Adapted from Ina Garten's book,"Back to Basics"(Barefoot Contessa). Ina likes to cut them into fairly large wedges, but I like them smaller(like french fries) because I love the crispiness and get more of it with smaller wedges! Sweet potatoes are available year-round, but their prime season is really autumn and winter. Choose potatoes that are smooth and unblemished, and use them fairly soon because they don't keep as well as other potatoes.

- Preheat oven to 425*F.

- Place wedges on large baking pan or cookie sheet. Pour over olive oil, and toss to mix.
- Now sprinkle over brown sugar, salt, and black pepper. Toss to coat wedges.

- Preheat oven to 425°.
- Peel and cut sweet potatoes into fries no thicker than 1/2″. Soak in water for minimum of one hour, but preferably for half a day.
- Drain water from bowl and lift fries out by the handful. Give them a good shake. They should be dry but still have enough moisture on them to allow the cornstarch to stick.
- Put cornstarch in a plastic bag and drop all of your fries inches Blow a little air into the bag, twist the top and shake it vigorously. Lift the fries out onto one or two baking sheets.
- Coat with Olive Oil. The more the crispier and less sticking you'll have, but the less healthy they'll be. Use 2 pans if you have to. You want to make sure the fries aren't crowded on the pan otherwise they'll steam as opposed to getting crispy.
- Bake for 15 minutes then check. Once bottom of fries are getting crisp, flip them over and cook for another 5-10 minutes.
- (for deep frying follow the first 3 steps, but instead of baking them, put them in the deep fryer at it's highest setting for a few minutes).
- Dipping Sauce:.
- Mix together mayo, pepper and Sriracha sauce. Adjust to your taste.
- Please note : This recipe does have a bit of a learning curve. It may take a few attempts to get your proportions of corn starch and oil correct. If you it doesn't work for you, it's not the recipe it's either a) your technique or b) your baking pan.

- Cut sweet potatoes in half and then slice into small strips that resemble standard french fries & place in large mixing bowl.
- Sprinkle potatoes with olive oil & all spices, toss until each potato is covered in oil and spices.
