2 1/2 pounds sweet potatoes (about 3 large), scrubbed
2 large eggs, lightly beaten
3 tablespoons unsalted butter, melted, plus more for the preparing the pan
2 tablespoons packed dark brown sugar
1 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Pinch freshly grated nutmeg
Freshly ground black pepper
1/4 cup coarsely chopped pecans

Steps:

  • Preheat the oven to 400 degrees F. Put the sweet potatoes on a baking sheet and pierce each one 2 or 3 times with a fork. Bake for 45 to 50 minutes or until tender. Set aside to cool.
  • Turn the oven down to 350 degrees F. Scoop the sweet potato out of their skins and into a medium bowl. Discard the skins. Mash the potatoes until smooth. Add the eggs, butter, brown sugar, salt, cinnamon, ginger, nutmeg, and the pepper to taste. Whisk the mixture until smooth.
  • Butter an 8-by-8-inch casserole. Pour the sweet potato mixture into the pan and sprinkle the top with the pecans. Bake until puffed, about 30 minutes. Serve immediately.

4 sweet potatoes, cooked and peeled
1/3 c sugar
1/3 c butter
2 eggs
1 tsp vanilla
1/2 c sweetened condensed milk
4 - 6 oz orange marmalade, sometimes even more
1 - 1 1/2 tsp cinnamon, or more to taste
1/8 - 1/4 tsp pumpkin pie spice
TOPPING
1 c coconut
1/3 c all-purpose flour
1 c brown sugar
1/3 c melted butter

Steps:

  • 1. Combine the first nine ingredients in a mixer and mix well.
  • 2. Pour into a 9 by 13 pan or a 9 by 7 by 2.5 pan.
  • 3. Combine the topping ingredients in a separate bowl.
  • 4. Sprinkle on top of the sweet potato mixture.
  • 5. Bake 350 degrees for 25-35 minutes
  • 6. Note: The amount of cinnamon, orange marmalade, and pumpkin pie spice may need to be adjusted to taste as all sweet potatoes are not the same size.

Number Of Ingredients 18

4 lb sweet potatoes, peeled & cooked till tender
1/2 c evaporated milk
3/4 c orange juice( i used tropicana)
1 c sugar
1 c light brown sugar
1 stick butter, melted
1/3 c flour, (cake flour, white lily or wondra)
4 large eggs room temperature
1/4 c grated orange zest
1 Tbsp vanilla bean paste or vanilla extract
2 tsp orange extract
1 1/2 tsp nutmeg or to your taste
3/4 tsp cinnamon or to your taste
PRALINE TOPPING
1 c brown sugar, light
1/2 c flour, all purpose
1 stick butter, softened (half cup)
1 c chopped nuts of your choice ( i used pecans)

Steps:

  • 1. Boil sweet potatoes till tender. When cooled enough to handle peel if not already. Then add to a large bowl.
  • 2. Add melted butter, & blend into potatoes. Or cut butter into pieces and add while potatoes are still hot.
  • 3. Mash potatoes to combine with butter.
  • 4. Add eggs and beat or mix till blended.
  • 5. Add milk, cinnamon, nutmeg & orange juice, & blend together.
  • 6. Combine vanilla bean paste, orange extract together in small cup along with orange zest, then stir to mix, and pour into sweet potato mixture & blend together.
  • 7. Beat potatoes with mixer, and remove any strings that wrap around the beaters from the potatoes. See picture. Repeat if needed.
  • 8. Add the flour, and beat to blend.
  • 9. Spray a 9X13X2 inch casserole dish with non stick cooking spray, and pour in potato mixture, Smooth out top.
  • 10. Prepare the topping by combining all of the topping ingredients in a medium size bowl. Then blend together till mixture is combined & crumbly.
  • 11. Sprinkle topping over top of potatoes, & bake in a preheated 350 degrees F. oven for about 45 minutes or until potatoes are hot & bubbly. Allow to cool at least about 15 minutes to come together before serving or a bit longer if needed.

1/2 cup firmly packed light brown sugar
1/2 cup fresh orange juice
4 tablespoons (1/2 stick) butter, melted
2 tablespoons fresh lemon juice
2 teaspoons finely grated orange zest
1/2 teaspoon freshly grated nutmeg or 1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste

Steps:

  • 1. Preheat the oven to 350° F. Butter a 2-quart casserole and set aside.

2 large eggs
1 tablespoon canola oil
1 tablespoon honey
1/2 cup low-fat milk
2 teaspoons freshly grated orange zest

1/2 cup whole-wheat flour
1/3 cup packed brown sugar
4 teaspoons frozen orange juice concentrate

  • Lay out 4 pieces of aluminum foil, each about 18 inches in length. Take two of the sheets and lay them perpendicular to each other (so it forms a thick cross) and do the same with the other two sheets of foil. Divide the sweet potatoes in half and put one half on one set of foil and the remaining potatoes on the other set of foil. Sprinkle the remaining tablespoon sugar over all the potatoes in both packets. Fold the opposite edges of the foil toward each other and crimp the edges to seal tightly.
