SWEET POTATO TOT CASSEROLE

This family-friendly casserole topped with sweet potato tots is hearty, crowd pleasing and easy to make. It's a great dish before trick or treating or for any casual fall dinner. The filling can be prepared a day or two ahead - just top with the cheese and frozen tots before baking.

2 tablespoons extra-virgin olive oil
1 pound ground beef
2 cups peeled, diced butternut squash
1 medium onion, chopped
1 orange bell pepper, chopped
2 cloves garlic, finely chopped
2 tablespoons tomato paste
2 teaspoons chili powder
1 teaspoon ground cumin
Kosher salt
One 8-ounce can tomato sauce
1 cup low-sodium beef stock
One 15.5-ounce can black beans, rinsed and drained
2 tablespoons cider vinegar
2 cups shredded yellow Cheddar
1 1/2 pounds frozen sweet potato tots

Steps:

  • Preheat the oven to 425 degrees F. Heat the oil in a large skillet over medium heat. Crumble in the beef and cook, breaking up the meat with a wooden spoon, until no longer pink and begins to brown, about 4 minutes. Add the squash, onion and bell pepper and cook, stirring occasionally, until the onion begins to wilt, about 4 minutes.
  • Make a space in the center of the skillet and add the garlic, tomato paste, chili powder, cumin and 1 teaspoon salt. Cook, stirring occasionally, until sizzling, about 1 minute, then stir into the beef and vegetables. Add the tomato sauce, stock and 1/2 cup water. Bring to a simmer then stir in the black beans and vinegar. Simmer, stirring often, until slightly thickened, 3 to 4 minutes.
  • Transfer to a 9-by-13-inch baking dish. Sprinkle with 1 cup of the Cheddar. Arrange the tots in neat rows on top, spacing them apart so they can crisp. Bake until the tots are crisp on top, about 25 minutes. Sprinkle with the remaining 1 cup Cheddar. Bake until the cheese is melted and the filling is bubbly, 10 to 15 minutes.

4 cups sweet potato, cubed
½ cup white sugar
2 eggs, beaten
½ teaspoon salt
4 tablespoons butter, softened
½ cup milk
½ teaspoon vanilla extract
½ cup packed brown sugar
⅓ cup all-purpose flour
3 tablespoons butter, softened
½ cup chopped pecans

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash.
  • In a large bowl, mix together the sweet potatoes, white sugar, eggs, salt, butter, milk and vanilla extract. Mix until smooth. Transfer to a 9x13 inch baking dish.
  • In medium bowl, mix the brown sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.
  • Bake in the preheated oven 30 minutes, or until the topping is lightly brown.

1 cup sugar
1/2 cup melted butter
2 eggs, beaten

Steps:

  • Bake sweet potatoes in a 375* oven until fork tender. Let cool, then peel.
  • Preheat oven to 350*.
  • In a mixing bowl combine sweet potatoes, sugar, melted butter, eggs, vanilla, & milk. Mix on medium speed until well blended. Spoon into a geased 2 or 3 quart baking dish. Combine ingredients for the toppping & sprinkle on top of potatoes before baking.

This Thanksgiving my boyfriend's step mom's daughter-in-law, Kim, brought this sweet potato casserole for our feast. Not being a huge fan of sweet potatoes, I was reluctant to try it. Boy am I glad I did! It isn't as sweet as most sweet potato casseroles and doesn't have tons the marshmallow goop on it. I begged her for the recipe so that I could have it every holiday and decided to post it on *Zaar so that I don't lose it. She stated on the recipe card that she always doubles the recipe and that when it does, it fills a 1 1/2 quart casserole dish.

3 cups mashed sweet potatoes
2 eggs, lightly beaten
1/2 cup sugar
1/2 teaspoon salt
1/4 cup melted butter
1/4 cup cream (or milk)
1 1/2 teaspoons vanilla extract

1/2 cup chopped walnuts
1/2 cup chopped pecans
3 tablespoons melted butter

Steps:

  • Mix all of the casserole ingredients together until well blended.
  • Spread into a buttered casserole dish.

5 lbs sweet potatoes (with skin cleaned)
4 large eggs (slightly beaten)
1/4 cup butter
3/4 cup dark brown sugar

1 (8 ounce) package miniature marshmallows

Steps:

  • -Preheat oven to 400. Puncture the cleaned potatoes with a fork and cook them until softened (about an hr.) Let cool.
  • -Oven on 350. Remove Sweet potatoe skin and mash in a large bowl. After desired smoothness add eggs, sugar, butter, salt. Separately mix the dry ingredients (cinnamon, ginger, nutmeg) and then add to the big bowl.
  • -Put all of it in a 11x13 buttered casserole dish. Add the pecans on top and cook for 40-50 minute Last ten minutes put the marshmallows on top.
  • -Pecans and marshmallows are for the top put I also like to put them in the main mix. For everyone I leave the potatoes completely smooth but I really like them a little clumpy.

500g sweet potatoes
125g butter, plus extra for the dish
125g light brown soft sugar
150ml whole milk
3 eggs
grating of nutmeg
½ tsp ground cinnamon
1 tsp vanilla bean paste
35g butter
75g plain flour
75g light brown soft sugar
50g pecans, chopped

Steps:

  • Fill a large pan with boiling water from the kettle and set over a medium-high heat. Carefully drop in the whole, unpeeled sweet potatoes and cook for 30 minutes until very tender when pierced with the tip of a sharp knife. Drain well and leave to cool for 10 mins, then peel.
  • Heat the oven to 180C/160C fan/gas 4. Tip the peeled sweet potatoes into a large bowl, add the butter and mash with a potato masher until completely smooth. Tip in the brown sugar, milk, eggs, spices and vanilla and whisk until everything is combined and smooth.
  • Lightly butter a 20 x 30cm baking dish, then scrape in the sweet potato mixture. To make the topping, rub the butter into the flour, then stir in the brown sugar, pecans and a good pinch of salt. Sprinkle the topping evenly over the sweet potato filling, then bake for 45-50 mins until golden on top.
