Kids love help making this by mashing the mixture and forming patties. Serve the burgers on buns with guacamole or condiments of your choosing. Can be frozen for up to 6 months.

- Preheat oven to 375 degrees F (190 degrees C). Prepare a baking sheet with cooking spray.
- Bake sweet potato in the preheated oven until cooked through and soft in the center, 40 to 45 minutes. Let potato cool completely.
- Peel the potato and mash flesh in a large bowl with black beans. Mix egg, green onions, and garlic into the potato mixture. Add bread crumbs and mix until the mixture sticks together; season with jalapeno pepper, salt, and black pepper. Roll the mixture into 24 small balls and flatten into 2 1/2-inch patties.
- Arrange patties onto prepared baking sheet. Brush each patty with olive oil.
- Bake patties in preheated oven until browned on top, 10 to 12 minutes. Turn patties with a thin spatula, brush again with olive oil, and continue baking until slightly crisp along the edges, 2 to 3 minutes more. Serve on buns.

- Squeeze grated sweet potato with paper towels to remove excess moisture; place in a large bowl. Pulse oats in a food processor until finely ground; add to the bowl with the sweet potatoes. Add beans, scallions, mayonnaise, tomato paste, curry powder and salt to the bowl; mash the mixture together with your hands. Shape into four 1/2-inch-thick patties. Place the patties on a plate; refrigerate for 30 minutes.
- Stir yogurt, dill and lemon juice together in a small bowl; set aside.

- Preheat the oven to 400 degrees F. Lightly coat whole sweet potato in olive oil (optional). Poke several holes in the sweet potato using a knife. Place on a baking sheet and roast in the oven until tender, about 45 minutes to an hour depending on the size of your sweet potato.
- Remove skin from the sweet potato. Mash the inside until almost pureed. Measure out 1/2 cup of the mashed sweet potato. Before adding black beans, pat them with a paper towel to remove excess moisture. Combine the sweet potato and black beans and mash a little more. You want some whole beans to remain for texture. Set aside.
- Heat 2 teaspoons olive oil in a medium skillet over medium-high heat. Once hot, add diced onion, diced bell pepper and 1/4 teaspoon salt . Sauté until softened, about 6 minutes. Add jalapeño and garlic and sauté a minute more, until golden and aromatic.
- Stir the sautéed ingredients into the sweet potato mixture. Add the seasonings (cumin, 1/4 teaspoon salt, chipotle chili powder, parsley), whisked egg and bread crumbs. Mix until a loose ball forms.
- Form the mixture into patties. I like to make mine about the width of my palm. For best results, make sure the burger is no more than 1/2 inch thick when cooking. The thinner the patty, the firmer it will be.
- Heat a skillet over medium heat (I use the same skillet I sautéed the onions in for extra flavor). Lightly spray with non-stick cooking spray. Once hot, add patties. Cook until lightly browned, about 5 minutes. Flip and cook the other side until browned.
- Serve on burger buns with for favorite fixings, such as lettuce or kale and barbecue sauce. Enjoy!

- Cook sweet potatoes in 400 degree oven, cut side down for 30 minutes.
- While the sweet potatoes are baking, make the chili lime mayo. In a small bowl, mix together the mayo, chili garlic sauce and lime juice. Set aside.
- In a small bowl, add salt, onion powder, garlic powder, chili powder, oregano, cumin powder and black pepper. Mix together and set aside.
- In a large bowl, add black beans and cooked sweet potatoes. Mash until consistency is only slightly chunky. Some beans will be completely mashed and others will not. This will help create a nice texture.
- Add in cooked quinoa and spices. Mix together with hands and form into 8 burger patties, about 1/3 cup of mixture each.

- Put the wholemeal bread and walnuts in a food processor and pulse to make fine crumbs.
- Prick the sweet potatoes with a fork and microwave for 5-10 mins until soft. Cut in half and scrape the cooked centres into the food processor with the bread and walnut crumbs. Make sure the beans are drained thoroughly then add them to the processor with the paprika, cumin, onion granules, and tomato puree. Season generously and pulse until the mixture is mostly smooth and holding together. Divide the mix into 4 patties and chill for 20 mins to firm up.
- Meanwhile make the side salad by mixing the cucumber, carrot, coriander, lime juice and rapeseed oil together. Season and put to one side.
- Heat the oil in a large non-stick frying pan over a medium heat. Add the patties and fry for 4-5 mins on each side until golden and hot through. Place a small handful of rocket into each burger bun. Top with the tomato slices, burgers, and then avocado. Add a dollop of coconut yogurt or burger sauce of your choice. BBQ SWEET POTATO & BLACK BEAN BURGER
Summer is here at last! I'm craving all the summer foods including veggie burgers. I do buy some store-bought ones but I'm super picky about ingredients so sometimes I just prefer to make my own. I love BBQ flavor so I created this burger to use BBQ sauce. It's smokey and a tad sweet. Yummm! My favorite toppings for these are tomato, onion (would be great sautéed), avocado, bread and butter pickle chips and yellow mustard. They would also be great with coleslaw on them or on the side.

- Scoop the sweet potato flesh out of the skin into a large bowl. Discard the skin. Add black beans to bowl and use a potato masher to mash everything together. Some whole beans are ok.
- Add remaining ingredients and stir until everything is well combined. Chill mixture in the refrigerator for 2 hours. Don't skip this! It will help the patties stay together better.
- Preheat oven to 400 degrees.
- Form mixture into 6 patties and place on a large parchment lined baking sheet. Brush tops with olive oil. Bake for 25 minutes.
- Remove from oven. Brush tops with BBQ sauce. Flip over and brush other side with BBQ sauce. Return to oven and bake for 15 minutes. Remove from oven and let stand 5-10 minutes without touching them. This will help them to set.
- Enjoy on a bun with toppings.

- Preheat oven to 400 degrees F (200 degrees C). Poke a few holes into sweet potato with a fork; place on a greased baking sheet.

- Add 1 cup of sweet potato, onion, cilantro, garlic, spices, and salt. Pulse until combined. The mixture should resemble cookie dough and form a ball when processing. It should not be crumbly and should easily form burgers when you pack it together with your hands. If it seems too dry, add more sweet potato until the texture is right.
- Warm a drizzle of olive oil in skillet over medium low heat (I used a large cast iron). Using a heaping 1/3 cup measure, form mixture into 6 even burgers (this helps with a round shape, too). Once hot, cook burgers for about 4-5 minutes per side or until browned, turning down the heat if they’re cooking too quickly.
