2 cups all-purpose flour
2 tablespoons white sugar
1 teaspoon salt
1 teaspoon vanilla extract
½ cup unsalted butter, chilled
4 tablespoons shortening, chilled
5 tablespoons ice water

Steps:

  • Place flour in a bowl with the sugar and salt. Cut the butter and shortening into pieces, and cut into the flour until crumbly. Mix in vanilla. Add just enough water to form a ball: it should not be sticky. Knead quickly into a smooth ball. Wrap in plastic wrap, and chill for 1 hour.
  • When ready to make pie, roll dough out as you would any crust. Do not let sit out, or handle excessively allowing to soften. Easiest to work with if firm.

1/2 cup whole milk
1 1/4-ounce packet active dry yeast (2 1/4 teaspoons)
1/4 cup sugar
4 tablespoons unsalted butter, melted and slightly cooled, plus more for brushing
1 large egg yolk
1 1/2 teaspoons vanilla extract
2 3/4 cups all-purpose flour, plus more for dusting
3/4 teaspoon salt
1/2 teaspoon freshly grated nutmeg (optional)

Steps:

  • Warm 1/2 cup water and the milk in a saucepan over low heat until a thermometer registers 100 degrees F to 110 degrees F. Remove from the heat and sprinkle the yeast on top, then sprinkle with a pinch of the sugar; set aside, undisturbed, until foamy, about 5 minutes.
  • Whisk the melted butter, egg yolk and vanilla into the yeast mixture until combined. In a large bowl, whisk the flour, the remaining sugar, the salt and nutmeg. Make a well in the center, then add the yeast mixture and stir with a wooden spoon to make a thick and slightly sticky dough. Turn out onto a floured surface and knead until soft and elastic, about 6 minutes. Shape into a ball.
  • Brush a large bowl with butter. Add the dough, turning to coat lightly with the butter. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour, 15 minutes.
  • Turn the dough out of the bowl and knead briefly to release excess air; re-form into a ball and return to the bowl. Lightly butter a large piece of plastic wrap and lay it directly on the surface of the dough. Cover the bowl tightly with plastic wrap and refrigerate at least 4 hours or overnight.

Steps:

  • Gather the ingredients
  • Place the flour, salt, and butter in a large, clean bowl.
  • Rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs, working as quickly as possible to prevent the dough from becoming warm.
  • Add the water to the mixture. Using a cold knife, stir until the dough binds together. Add more cold water a teaspoon at a time if the mixture is too dry. Form the dough into a ball.
  • Wrap the dough in plastic wrap and chill for a minimum of 15 minutes and up to 30 minutes.
  • Use the shortcrust dough in your favorite pie, tart, or quiche recipe.
  • Place the flour, salt, and butter into the bowl of the processor.

Recipe video above. If I only had room for one Sweet Tart Crust recipe in my life, this would be it. Called Pâte Sucrée in French, it's an excellent master pastry for all sweet tarts, such as the Pistachio Pear Tart recipe I shared today.Buttery and not too sweet, flaky but not so crumbly that makes it difficult to eat with a fork. Plus, the dough is extremely easy to work with - easier than Shortcrust Pastry.Makes enough pastry for a tart tin up to around 24 x 3 cm / 9.5 x 1.2" big.

1 1/2 cups flour (, plain/all purpose)
6 1/2 tbsp soft icing sugar / powdered sugar (, sifted (Note 1))
2 1/2 tbsp almond meal / ground almonds ((Note 2))

100g / 7 tbsp butter (, unsalted, softened, cut into 1cm cubes)
1 large egg (, at room temperature (55-60g/2 oz) (Note 3))

Steps:

  • Mix Dy Ingredients: Whisk together flour, icing sugar, salt and almond meal in a bowl.
  • Add butter: Use your fingertips to rub the butter into the dry ingredients until it resembles breadcrumbs. (Note 4).
  • Add egg: Mix with a rubber spatula until it becomes too hard to stir anymore, then use your hands to bring it together into a dough.
  • Bring dough together: Turn dough out onto a work surface, then knead to bring together into a smooth ball. Flatten into a 2cm / 0.8" thick disc. Wrap with cling wrap and refrigerate for 30 minutes.
  • Unwrap chilled dough. Place on a lightly floured work surface.
  • Roll out into a 32cm / 13" round (3mm / 1/8" thick).
  • Line tart tin: Roll pastry lightly on to a rolling pin (ie. so it wraps around itself). Then unroll it gently over the tart tin.
  • Fit pastry: Adjust the pastry to fit into the tart tin, fitting into the corner, taking care not to stretch it (causes shrinkage during bake).
  • Trim excess dough: Roll the rolling pin over tart tin to trim excess dough. Pictured tart tin is 24 x 3 cm / 9.5 x 1.2" - you can use any up to this size.
  • Prick the base of the pastry 30 times with a fork. Not all the way through - just make a light prick on the surface.
  • Chill pastry in tart tin for 30 minutes.
  • Preheat oven to 200°C / 390°F (180°C fan).
  • Baking beads: Cover pastry with 2 sheets of baking paper (parchment paper), in a "X" arrangement. Fill with baking beads (or 2 cups dry raw rice or beans).
  • Baking times for a Par Baked Tart to be used for tarts that are baked for > 30 minutes once the filling is added into the cooked tart shell.
  • Bake 15 minutes the remove from oven. Use excess paper to remove baking beads.
  • Bake uncovered 5 minutes: Return tart crust to oven for 5 minutes. Pastry should be light golden, crispy on surface, but slighty undercooked inside (will finish cooking once filled and baked again).
  • Use these baking times if the tart shell is to be used for raw fillings (ie tart not baked once crust is filled) OR fillings that are baked for < 25 minutes.
  • Bake 15 minutes the remove from oven. Use excess paper to remove baking beads.
  • Bake uncovered 10 minutes: This will fully cook the pastry through and give it nice colour which we need as the pastry won't cook through in less than 25 minutes once filled.
  • Cool: Remove then cool in tart tin before filling (this ensures crust stays crispy once filled), then baking again if filling needs to be cooked (like this Pistachio Frangipane Pear Tart).
  • Make ahead up to 3 days, suitable for baking once filled.

Steps:

  • Cut the butter into small cubes and arrange on a small plate. Freeze for 20 minutes.
  • Add the flour and salt to a food processor, then pulse to combine. Add the butter and process for 10 continuous seconds, until the mixture looks like coarse breadcrumbs.
  • Add the egg and process for 5 seconds. Add the ice water and process for 20 seconds. The dough should now start clumping together. Turn the mixture out onto a work surface. The mixture will easily hold together when pressed. Using your hands, gather the dough into a ball then flatten into a disk, kneading it as lightly as possible.
  • If you're making shortcrust pastry right before you need to use it, gather it into a disk, set it on a lightly floured surface, and roll it out to the required size. Ease into a pie or tart pan, lay flat on a baking sheet, or cut out and fit into muffin pans if making tartlets. Refrigerate for 30 minutes to an hour. Use as instructed by the recipe.
  • You can alternatively wrap the ball of shortcrust pastry in plastic wrap and refrigerate it for 3 days, or freeze for 1 month.

  • Work the mixture to a dough, use an electric mixer, fitted with a paddle attachment if desired, I work it with a spoon, until it isn't wet, then use my hands to moisten the crumbs, with the cohesive dough, at the bottom of the bowl.
  • Remove the dough, it should not be crumbly, shake it over the bowl, if there are any crumbs left, set the pastry aside, add a few drops of water to the remaining mix, gather together, and add to the whole.
  • Rub both sides of the dough in flour before putting into a zip top bag, to chill for at least an hour before using the rest of the flour, for rolling and baking the dough.

Think of this step as “wrapping” the butter with tiny packages of flour that will help the pastry rise as it bakes. The butter needs to be quickly blended in until it resembles the size of very coarse sand or sea salt. In a processor, this should take between 40 and 50 quick, successive pulses. With a pastry blender, it takes about the same number of times cutting the butter into the flour. Use your eyes and don’t be afraid to look, just don’t touch, at least not excessively, as hot hands are pastry’s worst enemy.
  • Similarly, you don’t want to over-water the pastry, which is the next step, and the one that took me so long to master. Too much water wreaks havoc with the gluten and requires over-manipulation and additional flour—both of which make for tough pastry. The amount of water the pastry will take largely depends on the humidity level of the flour. In my kitchen, this pastry usually takes between 2 and 3 tablespoons of water. Whether in a processor or in a bowl with a blender, trickle the water very slowly into the pastry while pulsing or cutting. The second the pastry begins to form a big, messy ball, you’re there, so STOP! (Note: If the dough turns gummy and sticky and messy, try adding 2 tablespoons of flour. If that can’t fix it, throw it out and try again. You’ll get it right the next time! And it’s just flour, water, and butter.)
  • Turn the pastry dough out onto a lightly floured surface and very quickly divide it in half. Shape each portion into a thick round disk with your hands, scooping up any stray bits and working them into the disks. It should feel and look a little like Play-Doh, or, as I once thought to myself, a very firm little baby’s bottom. Look for bits of butter peeking through the pastry—this is a good thing. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes or wrap super duper well in plastic and then place in a resealable plastic bag and freeze for up to a month. Roll out and bake according to your tart recipe.
