2 large egg whites
1/4 cup cornstarch
1/4 cup sesame seeds
Coarse salt and ground pepper
1 1/2 pounds medium shrimp, peeled and deveined
1/4 cup vegetable oil, plus more if needed
1 cup fresh orange juice
2 tablespoons soy sauce
1 tablespoon sugar
4 scallions, trimmed and thinly sliced

Steps:

  • In a large bowl, whisk together egg whites, cornstarch, sesame seeds, 1 teaspoon salt, and 1/2 teaspoon pepper until frothy. Add shrimp, and toss to coat.
  • Heat 1/4 cup oil in a large nonstick skillet over medium-high heat. Working in two or three batches, cook shrimp until golden and crisp, 2 to 3 minutes per side. Transfer to a paper towel-lined plate to drain. Add more oil to skillet if necessary for remaining batches.
  • Wipe skillet with a paper towel. Add orange juice, soy sauce, and sugar. Boil over high heat until syrupy and reduced to about 1/3 cup, 4 to 5 minutes. Return shrimp to skillet; add scallions, and cook until heated through and coated with sauce, about 1 minute.

1 tablespoon grated orange or tangerine zest
1/2 teaspoon dried oregano
1/2 teaspoon salt
1 pound uncooked jumbo shrimp, peeled and deveined
4 teaspoons olive oil
3 cups orange juice
3 tablespoons rum or chicken broth
1 garlic clove, minced
1 large navel orange, peeled, sectioned and chopped
1/2 cup chopped sweet onion
1 cup cubed avocado
1/2 cup minced fresh cilantro, divided
1 teaspoon chopped seeded jalapeno pepper

Steps:

  • In a small dry skillet over medium heat, toast cumin seeds and peppercorns until aromatic, 1-2 minutes. Remove from skillet. Crush seeds using a spice grinder or mortar and pestle., In a small bowl, combine the orange zest, oregano, salt and crushed spices. Sprinkle 1 tablespoon spice mixture over shrimp., In a large skillet, cook shrimp in oil over medium-high heat 1 minute; turn shrimp. Add orange juice, rum, garlic and 1 tablespoon spice mixture. Cook and stir until shrimp turn pink, 1-2 minutes longer; remove and keep warm. , Bring liquid in skillet to a boil. Cook until reduced to 2/3 cup, about 35 minutes. Meanwhile, for salsa, combine orange, onion, avocado, 1/4 cup cilantro, jalapeno and remaining spice mixture in a small bowl. , Stir shrimp and remaining cilantro into sauce; heat through. Serve with salsa.

1 -2 medium orange
1/4 cup light mayonnaise
2 tablespoons horseradish sauce
1 tablespoon honey
1 teaspoon seasoned salt
1 tablespoon olive oil
1 tablespoon quick-mixing flour (like Wonder)

Steps:

  • Peel and devein shrimp.
  • Cut oranges in half, squeeze juice to get 1/2 cup. Pour juice into medium bowl and whisk in mayonnaise, horseradish, honey, and seasoned salt until blended; set aside.
  • Preheat large saute pan on medium-high 2-3 minutes. Place oil in pan and swirl to coat. Add shrimp; sprinkle with flour. Cook 2-3 minutes, stirring often, or until shrimp just begins to turn pink.
  • Stir in orange juice mixture; reduce heat to medium. Simmer 3-4 minutes, stirring often, or until shrimp are opaque and sauce thickens.
  • Serve with you favorite rice.

6 tablespoons chicken stock or water
3 tablespoons ketchup
3 tablespoons sugar
3 tablespoons pineapple or orange juice
2 tablespoons vinegar
2 teaspoons soy sauce
3/4 teaspoon crushed red pepper flakes
2 teaspoons cornstarch
1 pound shrimp
2 teaspoons minced ginger
2 teaspoons minced garlic
2 tablespoons peanut or vegetable oil
1 cup thinly sliced onions
1 cup 1-inch chunks green bell peppers
1 cup pineapple chunks
12 maraschino cherries
6 tablespoons thinly sliced green onions
Hot white rice, accompaniment

Steps:

  • To make the sauce, in a bowl, combine 1/4 cup of stock, the ketchup, sugar, juice, vinegar, soy, and 1/2 teaspoon of the pepper flakes. Set aside.
  • In a small bowl, combine the cornstarch with the remaining 2 tablespoons of stock and stir to dissolve. Set aside.
  • In a bowl, toss the shrimp with the ginger, garlic, and remaining 1/4 teaspoon pepper flakes. Set aside for 10 to 20 minutes.
  • Heat a large wok over high heat. Add the oil, swirling to coat the sides and bottom of the pan. Add the shrimp, garlic, and ginger and stir-fry until pink, about 2 minutes. Remove from the pan. Add the onions and peppers and stir-fry until crisp-tender, about 2 minutes. Add the sauce and cook, stirring, until the sugar dissolves. Add the cornstarch mixture and bring to a boil. Return the shrimp to the pan and add the pineapples, cherries, and green onions. Cook until the sauce is thick, about 1 minute.
  • Remove from the heat and serve over rice.

Steps:

  • Add the diced pepper and snow peas. Stir-fry for 1 minute or until tender-crisp.
  • Add the shrimp; stir-fry just until shrimp turns pink (about 1 minute).
  • Add the sauce. Cook, stirring constantly, until the mixture comes to a boil and thickens. Stir in the green onions.

1 1/2 cups smucker's orange marmalade
1 tablespoon lime juice
2 teaspoons crisco vegetable oil or 2 teaspoons canola oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon hot sauce (or to taste)
1/2 cup all-purpose flour
1/4 cup cornstarch
1 teaspoon jerk seasoning
1/2 teaspoon paprika
3/4 cup unsweetened coconut milk
1 1/2 cups crushed unsweetened shredded wheat
1/2 cup shredded coconut
24 large tail shrimp, tail shell attached (about 1 1/2 lb.)

Steps:

  • DIP: Place all ingredients into a food processor and pulse until smooth and place mixture in a small serving bowl; set aside.
  • SHRIMP: Melt enough shortening or oil to equal 2-inches in a deep frying pan or use and electric deep fryer heated to 365°F.
  • In a shallow dish, combine flour, cornstarch, jerk seasoning, and paprika. Pour coconut milk in a second bowl. In a third shallow dish, combine the crushed shredded wheat and coconut. Layout cooling racks and place waxed paper underneath to catch drippings.
  • Hold each shrimp by the tail, coat with flour mixture, dip into coconut milk then into crushed shredded wheat mixture. Place shrimp on rack and repeat process until all shrimp are done.
  • Fry 6-8 shrimp are at a time for 1-2 minutes or until golden brown. Drain on paper towels.
  • NOTE: Shrimp may be prepared in advance and frozen for up to 2 weeks. To serve, defrost slightly and re-crisp in the oven at 375°F.

½ teaspoon kosher salt
¼ teaspoon ground black pepper
2 tablespoons vegetable oil, divided
½ teaspoon sesame oil
1 cup diced red bell pepper
1 cup sliced zucchini
2 teaspoons minced garlic
1 teaspoon minced fresh ginger
1 cup pineapple chunks
1 tablespoon sliced green onions
¼ teaspoon sesame seeds

Steps:

  • Whisk together honey, rice vinegar, tomato paste, pineapple juice, and soy sauce for sweet and sour sauce in a medium bowl. Whisk together water and cornstarch for thickener in another bowl. Set both aside.
  • Pat shrimp dry with paper towels. Combine shrimp, salt, and pepper in a medium bowl; toss to season.
  • Heat 1 tablespoon vegetable oil and the sesame oil in a wok or large sauté pan over medium-high heat. Add shrimp in a single layer to the hot oil; cook for 1 minute without stirring. Stir and cook for another 30 seconds. Transfer to a clean plate.
  • Add remaining 1 tablespoon vegetable oil to the wok. When heated, add bell pepper and zucchini; stir-fry for 2 minutes. Add garlic and ginger; stir-fry until fragrant, about 30 seconds. Add pineapple; stir-fry for 30 seconds.
