Steps:
- In a large pot over medium-high heat, bring 3 inches (8 cm) of oil to 375˚F (190˚C).
- Peel and cut onions crosswise into ½ (1 ⅓ cm) inch slices.
- Separate into rings and place in a large bowl with ice water while you prepare the batter.
- In a medium mixing bowl, whisk together 1 cup flour (125 g), salt, white pepper, and baking powder.
- Whisk in beer and 2 tablespoons of ice water until just combined.
- In a separate bowl, add the remaining 1 cup (125 g) of flour.
- Remove the rings from the ice water bath and pat dry. Coat the rings first in the flour then in the batter, allowing any excess to drip off.
- Working in batches, transfer battered rings to hot oil to cook for 2 to 3 minutes, or until golden brown.
- Transfer to a paper towel lined rack to drain. Sprinkle with salt.

- Heat 3 inches of vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat until a deep-fry thermometer registers 365 degrees F. Meanwhile, preheat the oven to 200 degrees F and set a rack on a rimmed baking sheet.
- Whisk 1 cup all-purpose flour, the rice flour, baking powder, steak seasoning, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Whisk in the beer and seltzer until mostly smooth. Let sit 5 minutes to thicken. Place the remaining 1/2 cup all-purpose flour in a shallow bowl.
- Working in about five batches, dredge the onion rings in the flour, then dip in the beer batter, letting the excess drip off. Fry until crisp and golden brown, flipping occasionally, 3 to 4 minutes. Remove to the rack using a slotted spoon, season with salt and keep warm in the oven while you fry the remaining batches.
BEER-BATTERED ONION RINGS
Steps:
- Whisk together the flour, granulated garlic, cayenne and 1 tablespoon each salt and black pepper in a large bowl until well blended. In a separate large bowl, whisk together the buttermilk, milk and beer.
- Dunk the onion rings in the beer mixture and then toss in the flour mixture to coat evenly. Shake off the excess flour and lay the rings on a baking sheet. Let sit for 30 minutes.
- Meanwhile, fill a heavy pot with 3 inches of vegetable oil and heat to 350 degrees F. Sift the flour mixture to remove any clumps.
- Dunk the onions a second time in the buttermilk and toss in the flour. Shake off any excess flour before dropping the rings into the hot oil. Fry until golden, 1 to 2 minutes per side. Drain on paper towels. Serve with your favorite dipping sauce.
SWEET ONION RINGS W/ A BEER BATTER
About 2 weeks ago my friend Ellie and I went up to HOPE, Idaho. We spent the day on the lake and enjoyed mother nature. While thre we had a delish lunch, and onion ring appetizer were the best we ever had! We conjoled, begged then flirted with the cook..untill we got his "secret" recipe. The restaurant has to remain a secret.While there we met another JAP cook LORETTA J. that lives in Hope. She was teaching lessons on how to sketch at the local gift store. What a wonderful lady she turned out to be. Last weekend she drove down for a visit with us! BUT..here it is, the "secret"" recipe..

- WIPE the onions off with a paper towel. Leave the skins on and slice the end off. Then slice the onions into about 1/4 inch wide slices..When the rings start getting small, stop cutting. Start warming the oil...so it will be ready for your onions.
- Gently remove only the paper outer skins from onions. Then seperate the rings into single rings, by pushing the centers out. The center and the ends of the onion, can be chopped up and used for a salad, spaghetti sauce....et. Maybe my CREAMED ONION RECIPE ! You only want the larger rings.
- In a bowl combine the flour,salt,and baking soda...Mix well. THen add the ice cold beer. Mix again. you want a batter like pancake mix. If the batter get thick, add a littl water...or more beer..you can alwys drink what is left!....LOL Dip you rings into batter, one at a time with a fork....cook in the hot oil.in a skillet.. 2-3 at a time. Both sides. Drain on a paper towel, and cook more. THey can be kept warm in a slow oven...on a cookie sheet lined with a new paper towel...till serving time. Use a sauce of your choice. - Put the flour into a bowl and make a well in the center.
- Pour the beer into the well and whisk until combined.
- Let rest, covered for 1 hour.
- Peel onions and cut crosswise 1/3 inch thick and separate into rings.
- Dust the onion rings with the additional flour, shaking off the excess, and coat them with the batter.
- Working in batches, fry the onion rings in 2 inches of preheated 370 degrees, oil until they are golden.
- Transfer them with a slotted spoon to paper towels to drain and sprinkle them with salt to taste.

SOUTHERN-FRIED SWEET ONION RINGS
Thin enough to flash-fry but thick enough to let the sweet onion flavor shine through, these onion rings work well as a side dish but also are great as a stand-alone snack. Less is more when dipping the rings in the buttermilk mixture and then the flour mixture. Be delicate in the coating process, and make sure to let as much liquid and then as much flour fall off as possible. Less breading means less grease absorption and a crisper finished product. The flour should be as fine as possible, so reserve half of the flour mixture. When the first batch starts to get wet and gummy, replace it with the remaining half. The oil temperature matters, too. Heat the oil to at least 360 degrees, and fry the rings in batches. They cook so quickly it is easy to get through the frying in 10 minutes. Keep them warm in a 200 degree oven until all the frying is done.

- Heat oil in a large heavy pot. It should be at least 3 inches deep, but more is better.
- In a wide shallow bowl, whisk together flour, cornmeal, cornstarch and cayenne. In a second bowl, beat egg and buttermilk. Separate onion slices into rings.
- Working in batches, lightly toss the rings in the flour mixture, then dip into the buttermilk mixture. Allow most of the liquid to drip off, then toss again in the flour mixture. Shake off as much flour as possible and place the rings into the hot oil.
- Fry for 2 to 3 minutes or until golden brown, moving the rings around a bit in the oil to keep them separated.
