PRESSURE-COOKER SMOKY WHITE BEANS AND HAM
I had never made or even eaten this dish before meeting my husband. Now I make it at least once a week. I serve it with some homemade sweet cornbread. Delicious! -Christine Duffy, Sturgis, Kentucky

Steps:
- Rinse and sort beans. Transfer to a 6-qt. electric pressure cooker. Add ham hocks. Stir in broth, water, onion and seasonings. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 30 minutes. Let pressure release naturally for 10 minutes; quick-release any remaining pressure. , When cool enough to handle, remove meat from bones; cut ham into small pieces and return to pressure cooker. Serve with a slotted spoon. Sprinkle with green onions if desired.

BASIC HAM & BEANS (PRESSURE COOKER)
Easy way to make ham and beans and not have to wait all day for it! I have made this recipe to fit into my 5 qt electronic pressure cooker.

Steps:
- Cut up onion, garlic and ham.
- Rinse beans and remove any that are discolored.
- Place all ingredients in pressure cooker with seasonings to taste.
- Turn on high pressure for 25 minutes. (If you have an electronic pressure cooker the meat setting is great for this recipe).
- Remove bay leaf.
- Serve with cornbread!
CROCK POT HAM AND BEANS
This is cheap eating at it's best. Really good for scraping by at the end of the month if your cash gets low. Goes best with freshly baked corn muffins drizzled with honey.

Steps:
- Sort beans and soak in enough water to cover overnight.
- Or you may sort them and place in a saucepan with 2-inches of water to cover.
- Bring them to a boil, boil for 3 minutes, then cover and remove from heat.
- Allow to sit for one hour after boiling (don't lift the lid).
- Whichever method you use, rinse and drain the beans before placing them in the crock pot.
- Put the rinsed beans, garlic, onion, salt, pepper, parsley, cloves, ham (chopped into large chunks) or ham hocks into the crock pot along with 6 cups water or broth.
- Cover crock, and cook on low for about 8 hours, or until beans are tender and creamy.
- Skim any excess fat, if necessary, before serving.

- Rinse and sort beans. Transfer to a 6-qt. electric pressure cooker. Add ham hocks, water, onion, 1 teaspoon garlic powder and 1 teaspoon onion powder. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 30 minutes. Let pressure release naturally for 10 minutes; quick-release any remaining pressure., Remove ham hocks; cool slightly. Cut meat into small cubes, discarding bones; return meat to pressure cooker. Stir in barbecue sauce, brown sugar, nutmeg, cloves, remaining garlic powder, remaining onion powder and, if desired, pepper sauce. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. Let pressure release naturally for 5 minutes; quick-release any remaining pressure.

Of all the recipes there are for baked beans, this is one of the simpler ones to make. If you're not into pressure cooking you should try it, try it with baby steps at first, and I know that you will enjoy immensely, starting with this recipe!!

- Soak beans overnight, drain and put in bottom of cooker with enough water to cover. Add diced pork, ketchup, sugar, molasses, salt, mustard and onion, Cook 40 minutes using pressure cooking procedure. For best results, use Fancy Molasses, Lite Molasses is not recommended.

HAM BEAN SOUP (PRESSURE COOKER)
This is a quicker version of my Recipe #145910. The only real difference between this and the long simmering version is that you don't have to remember to soak the beans overnight, and the beans retain more texture. My dad loves the original recipe, and he declared this to be just as good.

Steps:
- Put the ham bone in the bottom of the pressure cooker (I normally have to break mine into pieces so it will fit).
- Pour the dried beans on top of the bone, and cover with cold water (don't fill your cooker more than 2/3 full). Sprinkle on the dried onion, garlic powder, and pepper.
- Lock on the lid, bring to pressure, then reduce the heat and cook for 25 minutes.
- Remove from the heat, and let sit for 15 minutes, before carefully removing any remaining pressure.
- Remove the lid, pour in the can of tomatoes including their juice, and the ham pieces. Simmer for 20 minutes.
PRESSURE COOKER HAM AND BEANS WITH SPINACH
This is a variation of cooking basic beans in the pressure cooker. As I was craving beans, I just threw this together with what I had on hand and the result was very good!! The ham was leftover and I was out of fresh onions so I used onion powder. I only use a digital pressure cooker so I can't speak for how this will work for the old fashioned kind. This is a great dish - ready in under an hour, start to finish!!

Steps:
- Add washed, sorted dry beans to pressure cooker with the water.
- Cut ham into bitesize chunks and add all seasonings.
- Set to HIGH pressure for 20 - 25 minutes.
- Use quick release method to release steam.
- Stir in spinach and nutmeg. Heat through.
- (My cooker has a "Keep Warm" setting that I leave it on till serving time.).
- Great with crusty bread or cornbread!
