1 sheet puff pastry, thawed if frozen
4 large, firm Anjou or Bosc pears
1 lemon, halved
1/2 c. maple syrup
4 tbsp. unsalted butter, cut up
1/4 tsp. kosher salt
2 tbsp. sliced almonds, toasted

Steps:

  • Heat oven to 400ºF. On lightly floured piece of parchment paper, roll puff pastry to 1/8-inch thick. Cut out a 12-inch round and refrigerate until ready to use.
  • Peel, halve, and core pears, then cut each half in half. Rub pears with cut side of 1/2 lemon.
  • Juice remaining half lemon. Heat medium cast-iron (about 10 inches) on medium. Add maple syrup, butter, salt, and lemon juice and cook, swirling pan occasionally, until mixture begins to thicken, deepen in color and smell like caramel, 5 to 8 min.; remove from heat. Being careful not to touch maple mixture, arrange pears, cut sides down, in pan. Return pan to low heat and cook pears 4 minutes. Remove from heat and lay puff pastry circle on top, carefully tucking overhang down inside of pan. Cut 3 small slits in pastry and bake in upper third of oven 10 minutes. Reduce temp to 375°F and bake until pastry is deep golden brown and maple mixture has reduced, 15 to 20 minutes.
  • Let stand 5 minutes, then run knife along edge to loosen. Place plate on top and flip, inverting tart. Sprinkle with sliced almonds and serve warm or at room temperature.

Yield Makes one 13-x18-inch tart (12 servings)

1 large egg
1 14- to 17-ounce box of puff pastry (preferably all-butter puff), defrosted according to package directions
2 large Anjou pears (about 1 1/4 pounds), skin on
1/4 cup granulated sugar
2 tablespoons maple syrup
Special equipment:
13"x18" baking sheet

Steps:

  • Preheat the oven to 375°F. Line a 13x18-inch baking sheet with parchment paper. In a small bowl, beat the egg with 1 tablespoon water.
  • If using a 14-ounce puff pastry package, roll the sheet to a 13-x18-inch rectangle on a floured surface. If using a 17-ounce puff pastry package, roll each sheet to a 9 1/2-x13-inch rectangle. Line up the two longer sides and overlap by 1 inch to form a 13-x18-inch rectangle. Brush egg wash in between to form a seam. Use a rolling pin to seal the seam.
  • Transfer the pastry to the parchment. Fold sides of pastry towards center to form a 1/2-inch border on all four sides. Lightly score the border by using a paring knife to make small shallow diagonal cuts. Prick the surface of the pastry inside the border with a fork. Refrigerate until ready to use.
  • Slice the pears in half lengthwise, and then cut lengthwise into 1/4-inch thick slices. Trim the seeds and core and toss the slices in the sugar. Arrange on the pastry and brush all exposed pastry (including the borders) with the egg wash.
  • Bake until the crust is puffed and golden brown, 45 to 50 minutes. Brush the fruit and pastry with the maple syrup. Let cool completely, and then slice into squares to serve.

1 package (8 ounces) reduced-fat cream cheese
1 package (8 ounces) fat-free cream cheese
1/3 plus 1/4 cup sugar, divided
2 teaspoons all-purpose flour
1 teaspoon vanilla extract
2 eggs, lightly beaten
2 large ripe pears, peeled and thinly sliced (about 3-1/2 cups)
1/2 teaspoon ground cinnamon

Steps:

  • In a small bowl, combine cookie crumbs and butter. Press onto the bottom and 1/2 in. up the sides of a 9-in. springform pan coated with cooking spray. Bake at 350° for 5-8 minutes or until set. Cool on a wire rack., Meanwhile, in a large bowl, beat cream cheeses until smooth. Beat in 1/3 cup sugar, flour and vanilla. Add eggs; beat on low speed just until combined. Pour into crust. , In a small combine the pears, cinnamon and remaining sugar; arrange pear slices over cream cheese mixture. Place pan on a baking sheet. Bake at 350° for 30-40 minutes or until almost set. Immediately run a knife around edge of pan to loosen; cool on a wire rack for 1 hour. Refrigerate for at least 2 hours. Remove sides of pan. Refrigerate leftovers.
