Leftover ham may be used for making this salad. Enjoy on crackers or in a sandwich. Often used in finger sandwiches for parties or wedding receptions. Good for a light lunch. A real treat!!

2 cups ham, finely chopped
2 hard-boiled eggs, finely chopped
1/2 cup celery, finely chopped
1/4 cup sweet pickle relish
1/3 cup mayonnaise
1/2 teaspoon prepared mustard
1/8 teaspoon celery seed

Steps:

  • Ham may be chopped by hand or in a food processor.
  • Mix celery, pickle relish, mayonnaise, mustard and celery seed in a medium size bowl. Add chopped ham and eggs. Mix until blended. Keep refrigerated.
  • Serve with/on crackers or in a sandwich.
  • Enjoy!

Yes, this is the REAL DEAL, folks -- this is the super great-tasting ham salad spread that you used to be able to buy at the mom and pop stores back in the '50s and '60s. It makes a lot but it will go fast. I could eat these ham salad sandwiches on sesame-seed buns with a little lettuce every day of the week. Don't use cheap bologna in this recipe or you'll be disappointed -- I like to use Kahn's Club Bologna. Also, you'll need some sort of meat grinder to make this -- a food processor does NOT yield a good consistency. I use my Kitchen-Aide Grinder attachment. Enjoy!

Hubby loves ham salad sandwiches, and whenever we get ham, his first question is always "Are you going to make that ham salad?" It's just been a matter of experimentation to come up with it. It's quick and easy, with common ingredients. Hope you enjoy it as we do. I'm not really sure how many sandwiches this makes--enough for a couple of days for our small family. Let me know if the servings are off. (And I guess it depends on how thick you like your sandwiches.) Can be served on any type of bread, but I have found rye really complements ham salad.

2 cups ham, fat trimmed off and diced
1/2 cup miracle whip
1/4 cup mayo
2 teaspoons dried onion flakes
1 teaspoon stone ground mustard
1 tablespoon sweet pickle relish (You could use Dill pickle relish instead if you prefer)
Butter crackers
Swiss cheese slices, cut into squares

Steps:

  • Dice the ham into small 1/2" cubes. Add all of the remaining ingredients except for the relish to a food processor and pulse until chunky. You want it to be smooth enough to spread on crackers, but not so smooth that it becomes a paste. Check every few pulses and watch closely to get the desired consistency. Transfer the spread to a mixing bowl and stir in relish. Serve with crackers and Swiss cheese.
