EASY CONDENSED MILK CAKE
Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.
- Mix 1 cup plus 3 tablespoons flour and baking powder together in a large bowl.
- Combine sweetened condensed milk, eggs, and melted butter in a bowl and add to the flour mixture. Beat using an electric mixer until batter is smooth and creamy. Pour batter into the prepared springform pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert cake carefully onto a serving plate or cooling rack. Let cool completely. Dust with confectioners' sugar before serving.

- 1. Preheat oven to 350 degree F. Spray and flour a 9 inch spring form pan or cake pan with nonstick cooking spray, then flour it.
- 2. In a medium mixing bowl; add all the ingredients and mix with a hand mixer till smooth.
- 3. Pour batter into prepared pan, bake for 35 - 40 minutes or until set. Do not over bake.
- 4. Cool the cake on cooling rack. Sprinkle with confectioners' sugar, or serve with a fruity jam. Enjoy!

- Preheat the oven to 350°. Grease and flour a 9-by-13-inch baking dish. Using an electric mixer, beat the egg yolks with 1 cup sugar on low speed until combined, then increase to high and beat until fluffy, 4 to 5 minutes. Add 1/2 cup evaporated milk and the vanilla; beat until combined. Fold in the flour and baking powder.
- Clean the beaters. In a medium bowl, beat the egg whites until foamy, about 30 seconds. Add the cream of tartar and beat until soft peaks form, about 1 minute. Beat in the remaining 1/4 cup sugar until stiff peaks form, 2 to 3 minutes.
- Working in batches, fold the egg white mixture into the yolk mixture until just combined. Pour into the prepared baking dish. Bake until a toothpick inserted into the center comes out clean, about 30 minutes. Let cool for 45 minutes.
- In a medium bowl, whisk together the remaining 1 1/2 cups evaporated milk, the sweetened condensed milk and 1 cup cream. Ladle over the cooled cake. Cover and chill until the liquid is absorbed, about 4 hours.
- Beat the remaining 3 cups cream until soft peaks form, 3 to 4 minutes. Serve with the cake and fresh fruit.

SWEET MILK AND SUGAR ICING (FROSTING)
If you like frosting so sweet that it will gag you, then give this one a try. It uses 4 ingredients always on hand. The sweet milk in the title just lets you know it doesn't use buttermilk or sour milk. My family likes this on yellow cake or white cake, and to sandwich together teacakes. A word of advice...don't try to make this frosting if it is raining...it will NEVER get hard. And make sure to boil it the full 90 seconds, so that the icing isn't grainy.
