Add big flavor to your meals with these easy homemade pickled jalapeños! With only 10 minutes hands on time, they add a tangy kick to tacos and chili.

5 to 6 medium jalapeño peppers
2 garlic cloves
1/2 cup white vinegar
1/2 cup water
1 tablespoon sugar
2 teaspoons kosher salt
1 tablespoon black peppercorns
1 bay leaf

Steps:

  • Wash a wide-mouth pint mason jar and and its lid in hot soapy water. Then rinse and let air dry.
  • Thinly slice the jalapeño peppers. Fill the jar with the slices.
  • Peel the garlic cloves, leaving them whole. In a small saucepan, combine the garlic, vinegar, water, sugar, kosher salt, peppercorns and bay leaf. Bring to a boil, stirring occasionally to dissolve the sugar and salt (this will take only a few minutes).
  • Once boiling, pour the brine into the jar (including the bay leaf). Tap the jar on the counter to release any air bubbles. Discard any remaining brine, or top off the jar with extra water if any peppers are exposed at the top.
  • Screw on the lid tightly and allow to cool to room temperature (about 1 hour). Eat immediately, or refrigerate until serving. Keeps up to 1 month refrigerated.

1 quart pickled sliced jalapeno
2 cups sugar

Steps:

  • Drain and thoroughly rinse jalapenos in cold water.
  • (I cover them with water in a pan and drain in a collandar several times) Place jalapenos in a glass container and cover with sugar.
  • Refrigerate overnite or until sugar turns to syrup.
  • Serve with cream cheese and crackers or with roasted turkey or chicken.
  • These are soooo expensive when purchased but so easy to make and Yummy!

DEEP FRIED JALAPENO SLICES



Deep Fried Jalapeno Slices image

These are really good. The heat depends on the pepper, I have had them very mild and taste bud burnin hot. They are best eaten fresh but are good reheated.

1 cup all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon red chili powder
1 teaspoon garlic powder
2 eggs
1 cup beer
oil (for deep frying)
2 cups sliced jalapeno peppers

Steps:

  • Mix flour, salt, black pepper, red chili powder, garlic powder, eggs and beer together in a bowl.
  • In a deep fryer or large pot heat oil to 365 degrees F (180 degrees C).
  • Dip each jalapeno slice in the batter.
  • Place battered jalapenos in the deep fryer.
  • The jalapenos are fully cooked when they float to the surface of the oil.
  • They should be golden brown and crispy.
  • Serve with Ranch dressing as an appetizer or on nachos or hamburgers.

A friend at work gave these to me last Christmas, and I had to have the recipe. These are so good! I can eat them right out of the jar, but they are especially good on burgers with monterrey jack cheese, with turnip greens, or peas or beans (southern style). The amount of sugar is an estimate...basically you equal it to the amount of jalapeno slices you have. Easy and delicious!

28 ounces jalapeno peppers, sliced in a jar
water
1 1/2 cups sugar

Steps:

  • Drain all the juice from the jar of peppers. Rinse with water a couple of times. Remove the sliced jalapenos from the jar, making sure they are well drained.
  • Place a cup of peppers back into the jar, followed by a cup of sugar. Continue to alternate the layers in equal measure until you have used up your peppers.
  • Shake well.
  • Shake the mixture twice a day (every 8 hours) for 5 days.
  • At this point, you can divide them up into smaller jars for gifts, or enjoy them yourself!

2 large flour tortillas
4 ounces reduced-fat cream cheese, softened
1/2 cup dried cranberries, sweetened
2 jalapenos, seeded and chopped
8 slices lean ham, deli thin sliced
8 maraschino cherries, cut in half (green and red)

Steps:

  • To tortillas, spread cream cheese all the way around to edges. Sprinkle with cranberries, and chopped jalapenos. (If making as wraps, place 8 of the 1/2 cherries in now). Lay ham slices to cover top.
  • Roll up tightly, wrap in plastic and refrigerate at least one hour. This is important so they hold together when cut.
  • Appetizers: Trim off the very ends of each log, then slice each log into 8 slices and lay flat. Place a half cherry onto the center of each pinwheel. Arrange decoratively onto a serving platter.
  • As Wraps: You can also serve as wraps as they make a great on-the-go lunch (wrapped and ready for the lunchbox).
