4 quarts fresh corn (cut from about 20 ears)
1 quart hot water
2/3 cup sugar
1/2 cup butter, cubed
2 teaspoons salt

Steps:

  • In a stockpot, combine all ingredients; bring to a boil. Reduce heat; simmer, uncovered, 5-7 minutes, stirring occasionally. Transfer to large shallow containers to cool quickly, stirring occasionally. Freeze in airtight containers, allowing headspace for expansion.

15 cups corn kernels
1/8 cup salt
1/2 cup granulated sugar
4 cups hot water
1/4 cup butter

Steps:

  • Husk corn. Clean the cobs to remove any silk that's stuck on.
  • Cut fresh kernels off the cob.
  • Add raw corn kernels, water, sugar, salt, and butter to a large pot.
  • Bring to a gentle boil. Simmer 10 minutes.
  • Let cool until about room temperature.
  • Ladle corn and some juice in freezer containers or freezer bags.
  • Lay bags flat and freeze.

Nothing is better than sweet freezer corn! This corn is crisp, sweet, and simply delicious. One of the first things I learned to preserve and I have filled my freezer with this recipe ever since.

Number Of Ingredients 4

4 tbs Butter or Margarine
1/2 cup Sugar
1/8 cup Salt (I use a little less than this.)
4 cups Hot water

Steps:

  • Husk corn, be sure to remove all hairs. Use a knife to remove kernels until you have 16 cups. Put corn, water, butter, sugar and salt in a roaster and bring to a gentle boil on your stovetop. Simmer for 10 minutes. Let cool and spoon into quart sized freezer bags. Once completely cool, label and put in your freezer for up to one year.

  • Combine all ingredients in a large pot.
  • Simmer for 10 minutes, stirring occasionally.
  • Spread out in large shallow containers to cool.
  • Spoon into freezer containers, or bags.
  • Freeze.

Steps:

  • Husk and clean corn on the cob. Cut kernels off uncooked cobs. Add raw corn kernels, sugar, salt, butter and water to large kettle. Bring to a gentle boil. Simmer 10 minutes. Ladle into freezer bags. Freeze flat until firm. Thaw before using. Ladle corn and a little juice into freezer bags. Lay bags flat on a baking sheet. Freeze until firm. Store corn bags in a box like you would file papers in a filing cabinet. This saves lots of room in the freezer and keeps the corn all in one place. I love card board boxes, they work perfect for this. Sweet corn from the freezer tastes just like delicious buttered and salted corn right off the cob!
