2 cups all-purpose flour
1 tablespoon sugar
2 1/2 teaspoons baking powder
1 teaspoon pepper
1/2 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons chilled unsalted butter
1 1/4 cups grated extra-sharp cheddar cheese
1 cup cold buttermilk
1 egg, beaten with 1 tbs milk (for glaze)
poppy seed

Steps:

  • Preheat oven to 400F degrees.
  • Combine first 6 ingredients in food processor and blend.
  • Add butter and cut in, using pulse, until fine meal forms.
  • Transfer to large bowl, mix in cheese.
  • (Can be prepared 4 hours ahead, cover and chill).
  • Mix enough buttermilk into flour mixture to bind dough.
  • Turn out onto floured surface and knead gently until combined, about 10 turns.
  • Pat out dough to 3/4" thickness.
  • Using 3" biscuit cutter, cut out biscuits.
  • Gather scraps, pat out to 3/4" thickness and cut additional biscuits.
  • Transfer biscuits to ungreased baking sheet.
  • Brush biscuits with egg glaze and sprinkle with poppy seeds.
  • Bake until golden brown and firm to touch, about 18 minutes.
  • Serve warm.
  • Makes about 10 biscuits.

What happens is the sugar caramelizes into the butter, and this almost toffee-like stickiness gets the apple super sweet and browned. And then we add savory. The ham. The chopped rosemary. 1 tablespoon unsalted butter
2 apples (any kind you love!), finely diced
1 tablespoon light brown sugar
1/2 teaspoon ground cinnamon
Kosher salt
1 cup diced ham
2 teaspoons minced fresh rosemary, plus more for garnish (from about 2 sprigs)
Two 6-ounce tubes refrigerated buttermilk biscuit dough (10 biscuits total)
4 ounces extra-sharp Cheddar, grated (about 2 cups)

Steps:

  • Preheat the oven to 375 degrees F.
  • Melt the butter in a medium skillet over medium heat. Add the apples, sugar, cinnamon and a pinch of salt. Saute until the apples are tender and start to stick when you scoot them around the pan, about 5 minutes. The butter and sugar will caramelize and become slightly sticky. Add the ham and rosemary. Saute until the ham gets some nice sear marks here and there, 3 to 5 minutes.
  • Meanwhile, roll out the biscuits until 3 1/2 inches wide and gently press them into 10 cups of a muffin tin. Spoon the filing evenly into each cup, then top each with the Cheddar. Bake until the cheese is melted and starting to lightly brown and bubble, about 15 minutes.
  • Pop each biscuit out of the tin and transfer to a platter or cutting board. Garnish with rosemary and serve immediately.

Steps:

  • Position a rack in the upper third of the oven and preheat to 425 degrees. Lightly mist a large baking sheet with cooking spray.
  • Make the biscuits: Pulse the flour, baking powder, sugar and salt in a food processor. Add the shortening and pulse until combined. Add the butter; pulse 4 or 5 times, or until the butter is in pea-size pieces. Add the cheese and pulse 2 or 3 times. Pour in the milk and pulse just until the mixture is moistened and forms a shaggy dough. Turn out onto a clean surface and gently knead until the dough comes together.   • Using the paddle attachment mix until the butter forms into small peas.
  • Preheat oven to 400 degrees.
  • Add the buttermilk to the mixer and continue mixing until dough comes together.
