Sweet Crunch Pork Chop with Chow-Chow and Sweet Potatoes image

Provided by Food Network

Categories     main-dish

Time 1h15m

Yield 4 servings

Number Of Ingredients 25

1/2 cup black peppercorns
1/2 cup salt
2 dried bay leaves
1 teaspoon chili flakes
1 1/2 cups ice
4 bone-in pork chops, pounded to 1/4-inch thick
2 sweet potatoes, peeled and cut into 1-inch pieces
2 tablespoons olive oil
1 tablespoon dark brown sugar
Salt and ground black pepper
1 cup apple cider vinegar
3 tablespoons sugar
1 tablespoon salt
1 tablespoon mustard seed
2 teaspoons turmeric
1 teaspoon crushed red pepper flakes
2 cups diced green cabbage
2 cups diced green tomatoes
1/2 cup diced red bell pepper
1 tablespoon minced garlic
1 dried bay leaf
Salt
1 large egg, lightly beaten
1 cup panko breadcrumbs
2 tablespoons olive oil, plus more as necessary

Steps:

  • For the pork chop brine: In a saucepan, combine the peppercorns, salt, bay leaves, chili flakes and 1 1/2 cups water. Bring to a simmer and cook for 5 minutes, stirring to dissolve the salt. Remove the brine from the heat and add the ice to cool it down.
  • Place the pork chops in a baking dish and pour the cooled brine over them. Let the pork chops sit in the fridge while you prepare the rest of the dish.
  • For the sweet potatoes: Preheat the oven to 350 degrees F.
  • On a baking sheet, toss the sweet potatoes with the oil, brown sugar and some salt and pepper. Roast the potatoes until tender and cooked through, 30 to 40 minutes.
  • For the chow-chow: In a large saucepan, bring the vinegar, sugar, salt and 1/2 cup water to a boil. Add the mustard seed, turmeric and crushed red pepper flakes and stir. Add the cabbage, tomatoes, bell pepper, garlic and bay leaf and bring to a boil. Reduce the heat and let simmer, stirring occasionally, until the relish is thick and saucy, 15 to 20 minutes.
  • To cook the pork chops: Remove the pork chops from the brine and pat dry with paper towels. Sprinkle with salt. Place the egg and panko in separate shallow bowls. One at a time, dip the pork chops first in the egg and then in the panko to coat both sides.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Fry the pork chops in batches, adding more oil as needed, until crispy, browned and cooked through, about 5 minutes per side.
  • Serve the pork chops topped with the chow-chow and the sweet potatoes on the side.

SWEET AND SPICY GARDEN RELISH/ CHOW-CHOW

Sweet and Spicy Garden Relish/ Chow-Chow image

A pickled relish is a cooked or pickled, coarsely or finely chopped vegetables (using what you have from cabbage to green tomatoes to zucchini just to have 4 quarts grated veggies before soaking) which is typically used as a condiment. I made this with a combination of home grown garden goodies. Served as a dipping sauce for breads or as a condiment to spread over the top of cornbread or top hot dogs and hamburgers, fresh grilled fish, chicken or mix with mixed with mayonnaise to make tartar sauce, and piccalilli can be mixed with mayonnaise or crème fraîche to make remoulade. Makes a great addition to a gift basket.

PA. DUTCH CHOW CHOW

Pa. Dutch Chow Chow image

Chow chow, a colorful mix of Pennsylvania Dutchsweet and sour pickled vegetables, can be served with any meal!

Provided by A Coalcracker in the Kitchen

Categories     Sides     Appetizers     Salads

Number Of Ingredients 21

4 cups granulated sugar
2 cups cider vinegar
2 cups water
1 1/2 teaspoon salt
1 Tablespoon celery seed
1 Tablespoon yellow mustard seed
OPTIONAL: 1/2 teaspoon ground turmeric
1 cup green beans, cut in 1 inch pieces
1 cup wax beans, cut in 1 inch pieces
1 cup fresh Lima beans OR frozen and cook as directed for the fresh vegetables
1 cup canned red kidney beans, drained and rinsed
1 cup canned butter beans, drained and rinsed
1 cup cauliflower buds, cut in small bite-sized pieces
1 cup celery, not hearts or leaves, cut in 1/4 inch slices cross-wise
1 cup sweet red bell pepper, chopped into 1/4 inch pieces
1 cup green bell pepper, chopped into 1/4 inch pieces
1 cup carrots, sliced into 1/4 inch thick slices crosswise
1 cup fresh corn kernels, cut from cob after cooking
1 cup sweet onion, chopped into 1/4 to 1/2 inch pieces
1 cup shredded green cabbage
OPTIONAL: 1 cup sweet gherkins cut in 1/4 inch cross cut slices

Steps:

  • Sterilize your jars and get your hot water canner set up.
  • Cook each vegetable separately in a small amount of lightly salted water over medium heat until tender crisp. (Do not cook canned beans or gherkins, if using)
  • Remove each when done from boiling water with slotted spoon and plunge into ice water bath to stop cooking. (A large bowl of ice water) Drain in colander. Layer each cooled, drained vegetable into a large bowl, then add the rinsed, drained beans; toss the layers gently with hands or wooden spoon to blend. Drain any additional water from the vegetables that accumulated in the bottom of the bowl.
  • In large stockpot or kettle, bring pickling syrup ingredients to boil, stirring especially at first to dissolve sugar. Stir in 1/2 teaspoon turmeric, if using. (I often skip it). Carefully add the mixture of vegetables to the boiling liquid. Return to boil and simmer over medium heat for 5 minutes.
  • Ladle the vegetables into sterilized pint or quart jars, add liquid, filling each jar with the chow chow to within 1/2 inch of top. Seal each jar with new canning lid insert and ring.
  • Process in hot water bath 5 minutes for 1,000 foot altitude or less for pints, 10 minutes for quarts. Add 5 minutes if 1.001 to 6,000 feet in altitude. Over 6,000 feet, add additional 5 minutes.
  • Carefully remove jars from water, sit upright on towel-lined counter. Check seals as the jars cool. The inner part of the lid will often "pop" as it depresses as the contents cool. If any failed to seal, store these in the refrigerator and keep refrigerated, use up fairly soon.

NOVA SCOTIA GREEN TOMATO CHOW CHOW

Nova Scotia Green Tomato Chow Chow image

Tangy, spicy, and packed with flavour, Nova Scotia Green Tomato Chow Chow will add zest to any sandwich or dinner plate that needs a jolt of flavour.

Provided by Marie Beausoleil

Categories     Condiment

Time P1DT2h

Number Of Ingredients 6

32 cup green tomatoes (sliced, wedges, or chopped)
5 pounds onions (sliced)
1/3 cup pickling salt
3 cups vinegar
6 cups granulated sugar
1 cup pickling spice (in a cheesecloth bag)

Steps:

  • Do NOT stress over this. There are many variations. As long as you stick to the basic directions, it will turn out.
  • Depending on how fine you want the final product, and the kind of tomatoes you are using (Beefsteak, Roma, etc), you can slice them, cut them into cubes, or chop the tomatoes.
  • Peel and slice the onions. Don't worry about fancy - a food processor does a perfectly fine job.
  • In a large pot or bowl (I used a 42 cup bowl with a lid), sprinkle the tomatoes and onions well with salt, and let sit overnight covered. They do not have to be refrigerated.
  • In the morning, rinse the tomatoes and onions to remove the salt and drain the liquid off. Discard the brining liquid. The vegetables will have reduced considerably in volume.
  • Tie the spices in a cloth (cotton or cheesecloth) bag. This amount of spice will make a pickle with plenty of bite, and you can use much less and still have a good chow. One variation is to use 2 Tablespoons each celery seed and mustard seed, and put them directly in the pickle without a cloth bag.
  • Not everyone likes a strong vinegar taste. Replacing up to 1/3 of the vinegar with water will still work. Do not go less than that.
  • In a large pot, combine vegetables, vinegar (and water, if using), sugar, and spices.
  • Cook on medium heat for ABOUT 2 hours, stirring often.
  • The mixture will cook down and thicken.
  • Follow SAFE, up to date canning methods (defer to official recommendations over this recipe). Fill 6 pint jars with hot pickle, add canning lids and rings, and process in a boiling water bath for 15 minutes.
  • If any is left after filling the jars, place it in a container in the refrigerator and use within a week or so.
  • Let cool completely and test the lids. Any that do not seal should be refrigerated.

CHOWCHOW

Chowchow image

Canning and preserving have long been an essential tactic of survival, and chowchow is a condiment born of both ingenuity and necessity. Here, green tomatoes not yet ripe enough to eat are transformed into a bright pickled expression of the first days of summer. It has been said that chowchow began as a collection of remnant produce that couldn't be used in other dishes, so it became its own reclaimed relish. As you chop each vegetable, consider that origin: making the most from the least, creating abundance from scarcity. You can use four heatproof glass pint jars for this, though I prefer eight 8-ounce jars instead so I can share it around. Using pickling salt, such as Morton Canning & Pickling Salt, helps the liquid stay clear and keeps the cabbage from turning brown.

Provided by Jocelyn Jackson

Categories     Cabbage     Tomato     Onion     Bell Pepper     Vinegar     Mustard     Garlic

Yield Makes about 2 quarts

Number Of Ingredients 12

1 small green cabbage (about 2 lb.), chopped into ½" pieces (about 10 cups)2 large green tomatoes, cut into ½" pieces
1 large sweet onion, cut into ½" pieces
1 large green bell pepper, seeds and ribs removed, cut into ½" pieces
1 large red bell pepper, seeds and ribs removed, cut into ½" pieces
2 Tbsp. pickling salt or 3 Tbsp. kosher salt
1 Tbsp. yellow mustard seeds
1½ cups apple cider vinegar
1½ cups distilled white vinegar
2 cups cane sugar (such as Wholesome) or raw sugar
1 Tbsp. yellow mustard
1 tsp. ground turmeric
2 garlic cloves, finely chopped

Steps:

  • Toss cabbage, green tomatoes, onion, bell peppers, and salt in a large bowl until all of the vegetables are coated in salt (this will help them release some water). Cover and chill at least 8 hours and up to 12 hours. Drain vegetables.
  • Toast mustard seeds in a large pot over medium-high heat, shaking pan, until fragrant and slightly darkened in color, about 2 minutes. Add both vinegars, sugar, mustard, and turmeric. Bring to a boil, then reduce heat to medium-low and simmer 10 minutes.
  • Add garlic and drained vegetables to pickling liquid and mix well. Increase heat to medium-high and bring to a boil; cook 5 minutes. Reduce heat to medium-low and simmer until flavors have melded and liquid is slightly reduced, about 15 minutes. The cabbage and green tomatoes should still have a bit of a crunch. Let cool (this will take about 1 hour).
  • Using a slotted spoon, divide chowchow among sterilized glass jars of choice and spoon pickling liquid over (chowchow should be submerged and there should be about ½" space at the top of each jar. Cover and chill.
  • Do ahead: Chowchow can be made 1 month ahead. Keep chilled. If you'd like to keep it longer, you can use the water bath boiling technique to make the jarred chowchow shelf stable.

7 SIMPLE STEPS TO MAKE DELICIOUS SOUTHERN CHOW-CHOW AND ...

From morningchores.com
Estimated Reading Time 7 mins
  • Pull Out the Food Processor. When you look at the ingredients list, it’s easy to become overwhelmed. Don’t be. The food processor makes this recipe a lot easier.
  • Add a Little Flavor and Let Marry. When your vegetables have all been chopped and placed in a bowl, it’s time to add the salt. Be sure to lightly sprinkle the salt over the entire top of the chopped vegetables.
  • Give it a Rinse. The next morning, pour the mixture into a colander and allow the juice to drain from the vegetables. When all of the fluid has drained, run the vegetables under cold water to rinse thoroughly.
  • Create the Juice. While the chopped vegetable drain, combine the spices, sugar, and vinegar in a saucepot. Bring the combination to a low boil and allow to simmer for approximately 10 minutes.
  • Put it All Together. After the vegetables have boiled in the vinegar mixture, it’s time to pack them into jars. This recipe is designed to make approximately 4 pints.
  • Give it a Bath. Place the jars in a water bath canner. Fill the canner with water over the tops of the jars. When the jars are fully immersed in water, place the canner on the stove.
  • Label and Store. After the 24-hour waiting period, it’s time to check the jars. Each lid has a bubble in the center. When you run your finger over the top, you’re looking for a smooth surface.

Heat the safflower oil in a large, heavy-bottom pot over medium-high heat. When the oil is hot, work in batches to sear the short ribs on all four sides until extremely caramelized (you want to hear a sizzle so the meat forms a crust). Remove the short ribs to a plate and repeat until all of them are seared.
  • Char the tortillas over an open flame (you can place them directly on the stovetop over the flame). In a small bowl, smash the avocados. Add the juice of one lime, plus a little salt to taste. To assemble the tacos, spread some smashed avocado onto each tortilla. Distribute the short ribs to each tortilla. Squeeze more lime over top.
