SWEET CHILI LIME CHICKEN THIGHS

- Place the thighs in a baking pan, bone down
- Pour the sauce over the top of the chicken and bake for 35-45 minutes
- Serve with rice and fresh vegetables
SWEET CHILLI CHICKEN THIGHS
Sweet Chilli Chicken Thighs are marinated with three simple ingredients and then grilled to juicy perfection in 15 minutes. They're perfect to serve on a rice bowl, throw into a wrap for lunch or even take out on a picnic.

Steps:
- Thoroughly coat 450g Chicken Thighs in 1 tsp Garlic Salt, 5 tbsp Sweet Chilli Sauce and 2 tbsp Fish Sauce.
- Leave covered in the fridge for anything up to 24 hours. Or cook straight away.
- When ready to cook, preheat a grill to its highest setting.
- Line a baking tray with baking parchment and foil.
- Lay the chicken thighs out on the lined tray. Spoon over any remaining marinade.
- Put the tray under the grill (not to high or close to the grill for 10 minutes.
- Turn the thighs over and return to the grill for a further 5 minutes.
- Leave the thighs to rest for 5 minutes and then slice or serve whole. Spoon over any juices from the tray.

- Make the marinade by combining sweet chilli sauce, soy sauce, salt and pepper in a small jug
- Add chicken thighs to a bowl and use a pastry brush to coat both sides with the chicken marinade, place on fridge for 10 or more minutes
- Season griddle with olive oil, use tongs to place into pan and grill at a medium heat for 7 mins each side. Note 1
- Turn heat off, rest for 1-2 mins then serve with rice and greens

- Heat the butter and olive oil in a Dutch oven over medium-high heat. Sprinkle chicken thighs with salt and pepper. Sear chicken in batches until golden, 2 to 3 minutes per side. Remove the chicken to a plate and set aside.
- Meanwhile, whisk together the chicken stock, soy sauce, sherry, brown sugar, hoisin and sesame oil in a small bowl and set aside.
- Add the onions, chili paste, ginger, garlic and scallions to the pan and cook, stirring frequently, for 2 to 3 minutes. Pour in the sauce and deglaze the pan, then return the chicken to the pot. Add the butternut squash, bring to a simmer and cover. Cook until the chicken is cooked through, 20 to 22 minutes.
- Remove the chicken to a platter. Add the kale, then stir in and allow to wilt. Spoon over and around the chicken, then garnish with cilantro leaves.
SWEET CHILLI CHICKEN

- To make the glaze, preheat the grill to high. Mix together the chilli sauce, honey and oil in a large bowl. Using a sharp knife make 3-4 slits across the skin side of each chicken breast. Season with salt and pepper then lift the skin on each breast and tuck under the crushed garlic. Now dip the underside of each chicken breast in the glaze until evenly coated. Reserve the rest of the glaze for later.
- To cook the chicken, put the chicken on the grill pan, glazed side up, and grill for 8 minutes until golden and sticky. Turn the chicken breasts over, brush with the remaining glaze, then cook for another 6-8 minutes until the chicken is firm and cooked through. Serve straight away with wedges of lime for squeezing over, if liked.

- Heat oil in a large stockpot over medium-high heat. Add chicken and cook in the hot oil, stirring occasionally, until browned, about 10 minutes. Add onion and garlic; cook and stir until onion is translucent, 5 to 10 minutes.

- Combine first five ingredients in a plastic zip-locked bag.
- Marinate for 1 hour, turning occasionally.
- Preheat oven to 425.
- Remove chicken from bag and reserve marinade.
- Arrange chicken in a shallow baking dish coated with cooking spray.

- In a small bowl mix together sweet chili sauce, soy sauce and garlic. Pour 1/2 cup (half the mixture) into a small plastic food storage zip bag. Add chicken and turn to coat; refrigerate and marinade 30 minutes.
- To a skillet, add a tablespoon or two of oil and heat over medium-high heat. Remove chicken from marinade and brown on one side for about 2-3 minutes (it may smoke a little from the sweet marinade). Turn the chicken over and brown for 2 minutes longer. Cover with a lid, turn the heat to low and let it finish cooking for about 8 minutes.
- Place remaining chili sauce and soy sauce mixture in a small saucepan and simmer over low heat until heated through, about 5 minutes. Serve over chicken.
