1 tbsp olive oil
3 shallots , sliced
3 garlic cloves , sliced
150ml hot vegetable stock
200g frozen peas
600g mixed green vegetables - we used long-stem broccoli, asparagus and mangetout
knob of butter

Steps:

  • Heat the oil in a large frying pan and bring a large saucepan of salted water to the boil. Gently fry the shallots and garlic for 5-8 mins, tip in the stock and peas, then bubble for a few mins until the peas are cooked.
  • Meanwhile, boil the rest of the veg, cooking the broccoli and asparagus for a couple of mins first, then throwing in the mangetout for the final min. Drain well and tip into the pan with the peas. Season, add the butter and mix well.

  • Cook 1 sliced onion, 8 whole garlic cloves and 1/2 teaspoon smoked paprika in a large pot with 3 tablespoons olive oil, about 2 minutes. Add 1 bunch each chopped mustard greens and kale, 2 cups water and a pinch each of sugar and salt. Simmer, covered, until tender, about 15 minutes. Add hot sauce to taste.

Number Of Ingredients 4

5 to 7 cloves garlic, peeled, plus 2 cloves garlic, one sliced, one minced
Enough olive oil to cover the bottom of a wide saute pan
4 big handfuls greens (baby mustard, turnip, chard), picked and roughly shredded
Salt and freshly ground black pepper

Steps:

  • Place saute pan over medium heat and then lightly crush 5 to 6 garlic cloves. When the pan is hot, add just enough oil to cover the bottom of the pan and add the garlic. Cook, stirring frequently until golden brown (3 to 5 minutes). Remove from the oil. At this point, the greens can be quickly Sauteed for a mild garlic flavor.
  • If you're looking for something a little stronger, thinly sliver 1 clove and add it to the pan stirring constantly (burned garlic is not Good Eats, nor is anything that touches it). Once the slivers turn golden, add the greens and toss to coat with the hot oil. Season with salt and pepper as soon as the greens start to wilt and plate immediately.
  • If you're looking for even more garlic flavor, finely mince a clove of garlic and toss it into the greens during the last 30 seconds of cooking and toss the greens to distribute. Keep the pan and the greens moving constantly, if you can.
  • Serve as a side dish or toss with pasta and serve as a main course.

This makes a nutritious and delicious vegetarian meal of soft cornmeal with a tasty topping of sautéed Swiss chard, raisins, and pine nuts. This came from the Good Housekeeping magazine, 1999. Directions are given for cooking the polenta in the microwave or for stove top. Enjoy!

2 bunches swiss chard (about 3 1/2 pounds) or 2 bunches bok choy
1 tablespoon olive oil
3 garlic cloves, thinly sliced
1/4 teaspoon crushed red pepper flakes
1 1/4 teaspoons salt
1/4 cup golden raisin
1 1/2 cups yellow cornmeal
2 cups milk (skim will make this more nutritious)
2 tablespoons grated parmesan cheese or 2 tablespoons romano cheese, plus additional for serving
1 tablespoon pine nuts, toasted and chopped (pignoli)

Steps:

  • Cut off and discard bottom 3 inches of Swiss-chard stems.
  • Cut remaining stems into 1/2-inch slices; coarsely chop leaves.
  • Rinse and dry stems and leaves separately; place in separate bowls.
  • In nonstick 12-inch skillet, heat oil, garlic, and crushed red pepper over medium heat about 2 minutes or until garlic is lightly golden, stirring constantly.
  • Increase heat to medium-high; add sliced chard stems to skillet and cook 8 minutes, stirring occasionally.
  • Gradually add chard leaves and 1/2 teaspoons.
  • salt, stirring until leaves wilt; stir in 1/3 cup water.
  • Cover skillet and simmer 5 minutes or until stems and leaves are tender; stir in raisins and set aside.
  • Meanwhile, prepare polenta in microwave oven: In 4-quart microwave-safe bowl or casserole, combine cornmeal, 3/4 teaspoons salt, milk, and 4 1/2 ups water.
  • Cover and cook on High 12 to 15 minutes, until thickened, stirring once.
  • To serve, stir Parmesan into polenta.
  • Spoon polenta on a platter; top with Swiss-chard mixture and sprinkle with pine nuts.
  • Serve with additional Parmesan to sprinkle over each serving if you like.
  • Makes 4 main dish servings.
  • Note: If you like, polenta can be prepared on top of stove: In 4-quart saucepan, stir 1 teaspoons salt with 2 cups cold milk.
  • Gradually whisk in cornmeal until blended,then whisk in 4 1/2 cups boiling water.
  • Heat to boiling over high heat, stirring occasionally.
  • Reduce heat to medium-low and cook, partially covered, 20 minutes, stirring frequently.

This comforting vegetarian recipe is the perfect dish to warm yourself up on a cold winter night

1 tbsp olive oil
3 leeks , finely sliced
2 garlic cloves , finely chopped
250g spinach or shredded kale
200ml crème fraîche
400g orecchiette or other short pasta
50g blue cheese , crumbled

Steps:

  • Heat the oil in a frying pan. Add the leeks and garlic and let them soften for 15 mins. Stir in the spinach or kale for final few mins to wilt. Add the crème fraîche, stir and remove from the heat.
  • Cook the pasta in plenty of boiling water. Drain the pasta, put it back in its saucepan, then stir the leek sauce into it. Serve in bowls with crumbled blue cheese on top.

When working with a large quantity of greens, it's much easier to sauté them if they're blanched first. Their time in the olive oil is more for flavoring and reaching the ideal texture.

Number Of Ingredients 7

4 pounds mixed hardy greens (such as Tuscan kale, curly kale, Swiss chard, and/or collard greens; about 6 bunches), ribs and stems removed
Kosher salt
4 garlic cloves, lightly crushed
1/2 cup olive oil, plus more for drizzling
2 chiles de árbol or 1/2 teaspoon crushed red pepper flakes
1 tablespoon fresh lemon juice
Freshly ground black pepper

Steps:

  • Working in batches, cook greens in a large pot of boiling heavily salted water until just barely wilted, about 2 minutes. Drain; let cool, then squeeze out excess water with your hands. Coarsely chop; set aside.
  • Heat a clean large pot over medium. Cook garlic and 1/2 cup oil, smashing down on garlic with a wooden spoon, until golden and soft, about 4 minutes. Add chiles de árbol and cook 30 seconds to infuse the oil with chile. Reduce heat to medium-low; add reserved greens. Cook, tossing and stirring occasionally, until greens are deep green and tender, 20-30 minutes. Remove from heat and stir in lemon juice. Season with salt and pepper. Transfer greens to a platter and drizzle with more oil.
