CROCKPOT PULLED PORK CHILI

1 (2.5) pound pork shoulder
2 tablespoons brown sugar
1 teaspoon salt
1 teaspoon pepper
1 teaspoon onion powder
8 ounces of beer
2 garlic cloves, (minced)
1 shallot, (diced)
1/2 red bell pepper, (chopped)
1/2 green bell pepper, (chopped)
1 (28-ounce) can tomato puree
1 (28-ounce) can crushed tomatoes
2 (14-ounce) cans kidney beans, drained and rinsed
1/4 cup tomato paste
4 tablespoons chili powder
2 1/2 tablespoons ground cumin
1 tablespoon chitpole chili powder
1 tablespoon smoked paprika
1/4 teaspoon crushed red pepper flakes
sour cream or greek yogurt
grated cheese
sliced green onions or chives
fresh cilantro
tortilla chips

Steps:

  • Season the pork shoulder with the sugar, salt, pepper and onion powder. Place the pork in the crockpot and add the beer. Cook on low for 8 to 10 hours (I like to do this overnight), then shred the pork with forks or kitchen tongs, removing any bone (and large chunks of fat, if desired.)
  • Add the garlic, shallot, peppers, tomatoes puree, crushed tomatoes, beans, tomato paste and remaining spices. Mix well to evenly distribute the ingredients. Cover the crockpot and cook on low for at least 4 hours, but up to another 8. If you're home, taste the chili halfway through and add more seasoning, salt and pepper if desired. This is normal - everyone likes their chili a little differently! Before serving, taste again.
  • Serve with sour cream or greek yogurt, cheese, green onions, cilantro and tortilla chips. This freezes beautifully!

THAI SWEET CHILI PORK TENDERLOIN

Thai Sweet Chili Pork Tenderloin is spicy, sweet, savory and melt in your mouth tender.

1.25 pounds pork tenderloin
2 tbsp olive oil (1 tablespoon for the rub and a 1 tablespoon for the pan)
1 tsp paprika
salt and pepper (to taste)
2 cloves garlic (peeled and minced)
1 inch ginger (knob fresh peeled and minced (or 1 teaspoon pre-made stir in paste))
2 tbsp tamari (soy sauce)
1/2 cup Thai sweet chili sauce
1 tbsp spring onions (chopped, optional- garnish)

Steps:

  • Preheat oven to 400 degrees F (204 degrees C). Gather ingredients.
  • Rub your pork tenderloin with olive oil, paprika, salt, pepper and garlic on all sides. Add a little extra olive to your pan. (If you have an iron skillet or a pan that can be used from stove top to oven, that is best. It saves on doing extra dishes.
  • Sear your seasoned pork tenderloin in the pan on medium-high heat on all sides. About 2 minutes per side or about 6 minutes.
  • Transfer your seared, seasoned pork tenderloin to the pre-heated oven and cook for about 10-15 minutes more or until the internal temperature is 145 degrees F. Turn the pork loin over half way through the cooking process.
  • Stir together the ginger, tamari (soy sauce) and Thai sweet chili sauce (or to make low carb/diabetic friendly, exchange with sugar free orange preserves, teaspoon water and chili flakes).
  • Brush on the Thai chili sauce glaze on the pork tenderloin during the last 5 minutes of cooking. Remove the pork tenderloin from the oven and allow to rest 5 minutes. Slice pork tenderloin and garnish with sliced green onions.
  • Enjoy!

Pulled Pork Chili is super easy to make in your crockpot and absolutely delicious. Put everything but the beans and corn into your slow cooker and let it simmer away for hours until the pork is fall off the bone tender. Then shred the meat, add the beans and corn, and dinner is ready. 3 lb bone-in pork shoulder (see notes)
3 tablespoons chili powder
1 tablespoon EACH: onion powder, garlic powder, and coconut sugar (can sub brown sugar)
1 teaspoon EACH: ground cumin and sea salt
28 ounce can crushed tomatoes
½ large onion (minced)
4 cloves garlic (minced)
1 cup beef broth
½ cup hoisin (gluten-free hoisin if needed (can sub BBQ sauce))
19 ounce can white cannelli beans (drained and rinsed)
1 cup frozen corn
Optional toppings: cheese, sour cream, green onions, diced avocado, cilantro, and corn chips

Steps:

  • Remove the skin (if there is any) and cut off most of the fat from the pork shoulder.
  • Mix the chili powder, onion powder, garlic powder, sugar, cumin, and salt in a small bowl. Liberally coat all sides of the pork with the spices. Pour any remaining spice into your slow cooker.
  • Add the crushed tomatoes, onion, garlic, beef broth, and hoisin to your crockpot and mix well. Place the pork roast into the pot, cover with the lid, and set it to 10 hours on low heat.
  • Remove the pork roast from the pot and put it into a large bowl. Discard the bone and any big pieces of fat. Shred the meat using 2 forks then return it to the crockpot. Add the beans and corn and stir well. Let the chili reheat for a few minutes then serve with any or all of the optional toppings.

2 tablespoons tomato paste
2 tablespoons vegetable oil
2 tablespoons chili powder
1 tablespoon ground cumin
4 cloves garlic, minced
2 onions, minced
3 pounds boneless pork shoulder, trimmed of excess fat and cut into 1-inch cubes
2 cups chicken stock
1 tablespoon chipotle adobo sauce
1 tablespoon kosher salt, plus more if needed
Two 15-ounce cans great Northern beans, drained and rinsed
1 1/4 cups smoky BBQ sauce
1 cup sour cream
1/4 teaspoon garlic powder
2 cups crushed pork rinds
4 scallions, thinly sliced
Blue corn chips, for serving

Steps:

  • Mix together the tomato paste, vegetable oil, chili powder, cumin, garlic and onions in a microwave-safe bowl. Cover the top of the bowl with a very wet paper towel. Microwave for 5 minutes. Transfer the mixture to a slow cooker.
  • Add the pork to the slow cooker along with the stock, adobo sauce, salt, beans and 1 cup of the BBQ sauce. Cook on high until the pork is cooked through and tender, 4 to 5 hours (or on low for 6 to 8 hours). Skim any excess fat off the top and discard. Adjust the seasoning if necessary.
  • In a small bowl, mix together the sour cream, garlic powder and remaining 1/4 cup BBQ sauce.
  • Top the chili with the sour cream mixture, pork rinds and scallions. Serve with the chips on the side or crumbled on top.

¼ cup red chile paste
1 tablespoon hot sauce
