- Lay the sliced onions, carrots, sweet potatoes and bacon in this order, put into the sauce pan, pour the chicken or vegetable stock over the pan. Cover the top, bring to the boil very gently and cook with low heat until all the ingredients become soft.
- Remove the heat, leave for 10 minutes to cool, then grind to a thick paste in the pan by using a hand mixer or transfer to a food processor.
- Bring back to the heat, then add the milk adjusting your favourite thickness and simmer gently for a few minutes. Season and serve the soup on its own or with piece of bread. Enjoy!

- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- Heat a skillet over medium heat and add the chopped bacon. Cook, stirring, often, just until the fat is rendered and the bacon starts to crisp up. Turn off the heat.
- Peel the carrots and place them on the baking sheet. I like to drizzle the carrots with the bacon grease that is in the pan. Toss the carrots to cover them evenly with the bacon fat. Sprinkle a pinch of salt on the carrots, along with the pepper and garlic. Top with the bacon.

- Heat oil in a large pot over medium high heat. Add bacon and cook until golden. Remove from pot, cool then chop.
- Add onion and garlic into the bacon drippings. Cook for 2 minutes until onion is translucent but not browned.

- Spray a large soup pot with cooking oil, and heat it on medium. Add the bacon, and cook until crispy, 5 to 7 minutes. Remove the bacon from the pot and place on a plate with a paper towel on top.
- Drain the excess bacon fat from the pot, and wipe the pot with a paper towel to get most of the bacon grease out but leaving a bit for flavor. When the bacon has cooled, crumble it into small pieces.
- Heat 1 tablespoon of olive oil in the soup pot used for cooking the bacon. Add the onions, cook for 5 minutes until the onions begin to soften.
- Add the carrots and jalapeno peppers, cook for a few more minutes. Add the garlic and cook for another minute.
- Stir in the sweet potatoes along with the 2nd tablespoon of olive oil.
- Add the chicken broth, water, white pepper and curry powder. Bring to a boil, then reduce to simmer. Let the soup simmer uncovered for about 30 minutes until the sweet potatoes are nice and soft.
- When the sweet potatoes are soft, purée with a handheld immersion blender. If the handheld blender isn't available, transfer in batches to a food processor to purée there. Stir in the cilantro and spinach if using after puréeing the soup. Add salt and pepper to taste.
- Serve the soup hot, topping each bowl with a bit of the reserved bacon bits.

CARROT BACON

- Gather the ingredients.
- Preheat the oven to 300 F and line a large baking sheet with parchment paper. Run a y-peeler over the carrots from top to bottom with a good amount of pressure to make long, thin strips. Continue until you have have peeled both carrots as much as possible.
- In a medium bowl, combine the soy sauce, oil, tahini, maple syrup, paprika, pepper, and liquid smoke, if using. Whisk together until well mixed.

- Spread carrots into an even layer and roast in the oven for 10 minutes. Remove from the oven and quickly toss/flip the carrots then return to the oven. Bake for another 8 to 15 minutes, until caramelized and tender. (Time will vary based on actual oven temperature, how spread out carrots are, and personal preference for how roasted you want the carrots.)
- Remove the carrots from the oven. FOR SAVORY CARROTS: Toss with fresh herbs and serve immediately. FOR SWEET CARROTS: Whisk together honey, melted butter, and cinnamon in a small bowl until smooth. Drizzle over the carrots and toss. Serve immediately.
