Steps:
- If you plan ahead, lay the wings on a rack on a rimmed baking tray and let them dry uncovered in the fridge overnight. Alternatively, pat them dry with paper towels.
- Preheat the oven to 250°F/120°C (all oven types). Put one oven shelf in the lower quarter of the oven and one in the top quarter.
- Line the tray with foil. Spray the rack on the baking tray with oil.
- Place the wings in a large bowl. Sprinkle over baking powder and salt. Use hands to toss well (or shake in ziplock bag) to coat wings evenly.
- Place the wings skin side up on the rack (ok if snug, they shrink). Bake on the lower shelf in the oven for 30 minutes.
- Then move the tray up to the higher shelf and turn the oven up to 425°F / 220°C. Bake for a further 40 to 50 minutes, rotating the tray halfway through. The wings do not need to be turned over.
- The wings are ready when they are dark golden brown and the skin is very crispy.
- Toss with Hot Sauce and serve immediately with Blue Cheese Dip and celery sticks. They can be served plain, with a dipping sauce or tossed in sauce. Wings also reheat crispy!
- Whisk together the Sauce ingredients. Keep warm or reheat just prior to using.
- Mash the blue cheese with sour cream until smooth (or to your taste).
- Add remaining ingredients and mix well until combined, using milk to get it to the consistency you want.
- Store in the fridge until required. Remove from the fridge 15 minutes before serving.

BAKED BUFFALO WINGS
These easy to make hot wings are crispy without being fried. Always yummy to snack on. They only take 10 minutes for prep, but need to be refrigerated for about an hour so the flour coating is firm. You can add more cayenne or use a higher hot sauce to butter ratio if you like them spicier! Enjoy.

CLASSIC BUFFALO WINGS
In this crunchier take on the classic Buffalo wing recipe the wings are marinated in hot sauce prior to being dredged in spiced flour and deep-fried. An extra coating of flour gives them a beautiful uniform, golden brown appearance and the wonderful crunch evocative of Southern-style friend chicken. This recipe also calls for you to make your own blue cheese dipper sauce, which is quite simple - and fun to experiment with. Try substituting gorgonzola or any other blue cheese you like (Roquefort, Maytag, stilton) and you will be surprised at the results!

Steps:
- To make the wings: Place the wings in a glass or other non-reactive bowl and add 1 cup of the hot sauce and Worcestershire. Mix thoroughly, being sure all the wings are coated, cover and refrigerate for a minimum of 30 minutes.
- Pour the oil for frying in a large pot to a depth of 2 inches and heat over medium heat to 375 degrees F.
- Place the flour in a separate mixing bowl and season with kosher salt and cayenne pepper to taste. In a separate bowl, prepare an egg wash by whisking together the eggs and milk until well blended. Working with all 3 bowls (wings, flour mixture and egg wash): first dredge each wing in the flour mixture, then dip the wing in the egg wash; and finally dredge the wing completely in the flour mixture, coating it evenly. Deep-fry the wings for 12 to 15 minutes or until the batter achieves a crisp, uniform texture. When cooked through, set aside to drain on paper towels or the nonprinted side of a paper grocery bag.
- To make the dressing: in a mixing bowl and using a wire whisk, combine the sour cream, mayonnaise, lemon juice, vinegar, parsley, shallots, and garlic, blending until smooth. Gently stir in the crumbled cheese until completely mixed in.
- To serve, place the fried wings in a large bowl and drench with the remaining 1 cup hot sauce (or less, to taste). Serve with the blue cheese dipping sauce and celery sticks on the side -- and plenty of napkins!

Steps:
- In a large bowl, mix together the garlic, olive oil, cider vinegar, paprika, Worcestershire sauce, celery salt, hot sauce, honey and a couple of cracks of black pepper. Add the chicken wings and toss around to make sure they're fully covered in the marinade. If you have time, leave the wings to marinate for a couple of hrs in the fridge or ideally overnight.
- Heat oven to 180C/160C fan/gas 4. Drain and reserve the marinade, then spread the wings out on a very large baking tray. Bake for 30 mins, then pour off the excess oil, add the reserved marinade and toss well. Increase oven to 200C/180C fan/ gas 6. Return to the oven and cook for a further 30 mins, tossing a few times to coat in the glaze as they cook. They should be sticky and glazed with most of the marinade evaporated. Serve on a large platter alongside other party snacks.

OVEN BAKED BUFFALO WINGS
This is an extremely simple oven baked chicken wing "recipe". It's roots came out of me being tired of paying premium prices for those frozen cooked Buffalo Wings in the grocery store! I hesitate to even call it a recipe, since it is so simple. Not fancy, but super simple on time and ingredients.. and still satisfying.

Steps:
- Preheat oven to 400°F.
- Prepare chicken wings by using poultry shears and sniping off the wing tips (discard, or freeze for other use, like stock), and snip at remaining wing joint. This gives you "2" wings per wing.
- Spread oil on baking sheet.
- Spread wings in single layer on baking sheet.
- You may choose to slide wings around on the oiled sheet, to put a light coating of oil on the wings. Less oil on wings makes for slightly less crispness.a bit of oil helps seasoning stick. You could omit oil, and spray with a good quality non-stick olive oil product.
- This step is optional. Sprinkle as liberally as you dare with your choice of seasoning. This is where experimentation comes in, be daring, try what's in your spice cabinet, however I've come to like a common "All Island Soul Seasoning", with a touch of cayanne or ground red or white pepper. If you're cutting back on salt, be cautious of prepared seasoning, as they have a lot of sodium.
- Bake until browned, cooked through, and a bit crispy. About 40 minutes. Use your nose and eyes to check! I use my convection setting on my oven too, which cuts on the cooking time, but makes a nice crisp even coating.
- Remove from oven, and cool for about 15 minutes.
- Melt butter and mix with hot sauce. (again. amount of hot sauce to your taste).
- Toss with the wings in a serving bowl with the butter/hot sauce mixture.
- Serve with your favorite Blue Cheese Dressing and celery sticks.
