BALSAMIC BROWN SUGAR MARINADE

Steps:
- Mix all ingredients into a shallow marinating container or a large Ziploc bag.
- Using the Jaccard 48 Knife Meat Tenderizer, tenderize the steaks both on front and back sides.
- Place the steaks in the marinade and marinate anywhere from 30 minutes to 4-5 hours. The longer the better for infused flavor.
- Preheat the grill to approximately 350 - 375. *See notes
- Grill each steak approximately 4-5 minutes per side, depending on the thickness.
- Remove from the grill and let the steaks rest a few minutes to redistribute the juices.
- Serve and enjoy!

- Sprinkle freshly ground pepper over both sides of each steak, and sprinkle with salt to taste.
- Heat a nonstick skillet over medium-high heat. Place steaks in hot pan, and cook for 1 minute on each side, or until browned. Reduce heat to medium-low, and add balsamic vinegar and red wine. Cover, and cook for 4 minutes on each side, basting with sauce when you turn the meat over.
- Remove steaks to two warmed plates, spoon one tablespoon of glaze over each, and serve immediately.

- Score steak by making crisscross cuts on the surface on both sides of the meat.
- Mix ingredients for marinade and pour over steak.

BERRY BALSAMIC MARINADE AND SAUCE

- In a blender or food processor add wine, vinegar, strawberry preserves, garlic, Splenda, coffee, salt, pepper, pitted cherries and blueberries. Puree.
- Place meat in a large zip lock bag and pour in marinade. Marinate in the refrigerator for at least 4 hours or over night for steak and for at least 30 minutes and up to 4 hours for chicken.
- Remove meat and pour marinade into a small saucepan. Add finely chopped shallot and set aside.
- Preheat broiler or prepare grill. Broil or grill meat until cooked to desired doneness.
- While meat is grilling bring sauce to a boil and then simmer. Stir in butter.
- If using London Broil, thinly slice crosswise, against the grain. Add any juices on the cutting board to the sauce. Serve with sauce. If using chicken or other steak cuts - serve with sauce.

- Add steaks to a resealable zip lock bag or large bowl and pour the marinade over the top of the steak. Squeeze as much air out of bag as possible and seal.
- Turn heat to high and let preheat a few minutes until skillet is hot. Place steaks in skillet. Cook each side for 3 minutes. Reduce heat to medium-high. Cook steaks to the desired doneness, flipping as needed. It will take about 10 minutes depending on thickness of steaks. I prefer mine to be about 145 degrees which is medium. Let steaks rest 3 minutes before serving.

- In a blender, combine the garlic, rosemary, oregano, mustard and vinegar and puree until the garlic is minced. With the machine on, gradually add the oil and blend until creamy. Season lightly with salt and pepper.
- Add the meat to a glass or ceramic baking dish and pour all but 1/4 cup of the vinaigrette on top; turn the meat to coat. Cover with plastic wrap and refrigerate for at least 4 hours and up to 24 hours.
- Light a grill and oil the grates. Remove the steak from the marinade, letting the excess drip off. Season with salt and pepper. Grill the steak over moderate heat, turning occasionally, until lightly charred and an instant-read thermometer inserted in the thickest part registers 125°, 10 to 12 minutes. Transfer the steak to a carving board and let rest for 5 minutes. Thinly slice the meat against the grain and serve, passing the remaining vinaigrette at the table.
