CLASSIC TABBOULEH SALAD



Classic Tabbouleh Salad image

This basic tabbouleh salad (aka tabouli) made with cracked wheat bulgur, tomatoes, cucumber, and parsley is easy and delicious.

1 cup cracked wheat bulgur
1 teaspoon fine sea salt (divided)
1 1/2 cups boiling water
1 clove garlic
1/3 cup extra virgin olive oil
1/4 cup fresh lemon juice
1/2 cup fresh mint leaves
1/2 teaspoon freshly ground black pepper
1 bunch flat-leaf parsley
4 tomatoes
1 English or hothouse cucumber

Steps:

  • Gather the ingredients.
  • Put the bulgur in a medium bowl and sprinkle it with 1/2 teaspoon of the salt. Add the boiling water, cover, and let sit for 20 minutes (or up to 60 minutes depending on the brand) until softened.
  • While the bulgar sits, make the dressing. Pulse the garlic in a food processor until minced, then add the olive oil and lemon juice and whirl into a dressing-like consistency. Or, whirl the olive oil, lemon juice, and garlic in a blender .
  • Add the mint leaves, the remaining 1/2 teaspoon salt, and the pepper. Blend until the mint leaves are well worked into the dressing and the dressing is more or less smooth. Taste and add more salt and pepper, if you like.
  • Remove the parsley leaves from the stems; discard the stems or save them for another use. Roughly chop the leaves. Core, seed, and chop the tomatoes. Peel, seed, and chop the cucumber. Set aside.
  • Check the bulgur: It should have absorbed all of the water, but there may be a bit in the bottom of the bowl. It should also be tender to the bite. If it's not, stir, cover, and let sit for 10 more minutes. If it's tender and there's water in the bowl, either drain the bulgur in a fine-mesh sieve or lift it out with a slotted spoon and into a separate bowl.
  • Pour the dressing over the bulgur and toss to combine well. Add the parsley and toss to combine well. Add the tomatoes and cucumber and stir to mix.
  • Serve immediately or cover and chill (up to overnight). Enjoy.

It's the perfect salad to have with grilled anything, or to bring to a potluck. And you know you're being good to yourself in every way possible.

4 cups cooked brown rice, cooled
1 1/2 cups zucchini, seeded and small dice
1 1/2 cups English cucumbers, seeded and small dice
20 -25 grape tomatoes, halved (quartered, if large or cherry tomatoes)
1 medium purple onion, small dice
1 cup parsley, packed and minced
1/2 cup cilantro, packed and minced
1/2 cup spearmint, packed and minced
1/2 cup fresh lemon juice
1/2 cup olive oil
2 teaspoons yellow mustard
1 1/2 teaspoons ground cumin
salt and pepper, to taste

Steps:

  • Combine all salad ingredients in a large, resealable bowl.
  • Whisk together dressing ingredients, adding salt and pepper to taste. Toss salad with dressing. Taste salad (try to get a little of everything on your fork), add a little more lemon, if necessary. Adjust seasoning.
  • Refrigerate at least 2-3 hours before serving to allow flavours to mingle and love each other. Mix salad well before serving to redistribute dressing. :-).

1/4 cup good olive oil
3 1/2 teaspoons kosher salt
1 cup minced scallions, white and green parts (1 bunch)
1 cup chopped fresh mint leaves (1 bunch)
1 cup chopped flat-leaf parsley (1 bunch)
1 hothouse cucumber, unpeeled, seeded, and medium-diced
2 cups cherry tomatoes, cut in half
1 teaspoon freshly ground black pepper

Steps:

  • Place the bulghur in a large bowl, pour in the boiling water, and add the lemon juice, olive oil, and 1 1/2 teaspoons salt. Stir, then allow to stand at room temperature for about 1 hour.
  • Add the scallions, mint, parsley, cucumber, tomatoes, 2 teaspoons salt, and the pepper; mix well. Season, to taste, and serve or cover and refrigerate. The flavor will improve if the tabbouleh sits for a few hours.

1/2 teaspoon kosher salt, plus more as needed
1 cup medium-grind bulgur
1/2 cup extra virgin olive oil, plus
2 teaspoons extra virgin olive oil, plus
more extra virgin olive oil, drizzling (optional)
1/2 cup pine nuts
fresh ground black pepper
1 cup finely chopped Italian parsley or 2 bunches Italian parsley
1/2 cup finely chopped fresh mint leaves or 1/2 bunch fresh mint leaves
5 medium scallions, finely chopped (white and light green parts only)
4 medium roma tomatoes, seeded and small dice or 3/4 cup roma tomato
3 tablespoons fresh lemon juice (from about 2 medium lemons)
1 1/2 teaspoons ground sumac
1 medium head romaine lettuce, for serving

Steps:

  • Combine the water and measured salt in a medium saucepan and bring to a boil over high heat. Add the bulgur, stir to combine, and remove the pan from the heat. Cover with a tightfitting lid and let sit until the bulgur is tender, about 15 minutes. Drain well through a fine-mesh strainer, pressing out the excess liquid, and place the bulgur in a large bowl. Let cool to room temperature.
  • Meanwhile, place 2 teaspoons of the oil in a small frying pan, add the pine nuts, season with salt and pepper, and stir to coat. Toast the nuts over medium heat, stirring occasionally, until they're golden brown and fragrant, about 3 to 5 minutes. Remove the pan from the heat and set aside until cooled.
  • Add the parsley, mint, scallions, tomatoes, and cooled pine nuts to the cooled bulgur and stir to combine.
  • Place the lemon juice, remaining 1/2 cup oil, and sumac in a small, nonreactive bowl and whisk until combined. Add the dressing to the bulgur mixture and stir to combine. Taste and season with salt and pepper as needed. Cover and refrigerate for at least 15 minutes or up to 6 hours.
  • When ready to serve, prepare the lettuce leaves. Discard any tough or bruised outer leaves and cut off and discard the stem end. Separate the leaves and cut each leaf in half crosswise. Wash and dry thoroughly. Line a large serving plate with the lettuce leaves. Drizzle the tabbouleh with olive oil, if desired, and toss to combine. Spoon onto the lettuce leaves and serve.

1/4 cup olive oil
1 cup grape tomatoes, sliced in half

1/2 cup baby carrots, sliced
2 large radishes, sliced
2 garlic cloves, chopped

Steps:

  • Boil the water and then pour over the bulgur wheat.

2 Persian cucumbers, thinly sliced
8 ounces asparagus, trimmed and sliced on the diagonal 1/8-inch-thick
8 ounces cherry tomatoes, halved

Steps:

  • In a medium bowl, combine bulgur wheat with enough boiling water to cover by 1 inch. Season lightly with salt and stir to combine. Cover tightly with a tight-fitting lid and let stand until tender, about 25 minutes. Drain well, pressing out excess liquid. Spread out on a baking sheet to cool.
  • Meanwhile, in a large bowl, combine shallot, mustard, lemon juice and garlic. Season with salt and pepper. While whisking constantly, slowly drizzle in oil until well blended.
