CLASSIC TABBOULEH SALAD
Steps:
- Gather the ingredients.
- Put the bulgur in a medium bowl and sprinkle it with 1/2 teaspoon of the salt. Add the boiling water, cover, and let sit for 20 minutes (or up to 60 minutes depending on the brand) until softened.
- While the bulgar sits, make the dressing. Pulse the garlic in a food processor until minced, then add the olive oil and lemon juice and whirl into a dressing-like consistency. Or, whirl the olive oil, lemon juice, and garlic in a blender .
- Add the mint leaves, the remaining 1/2 teaspoon salt, and the pepper. Blend until the mint leaves are well worked into the dressing and the dressing is more or less smooth. Taste and add more salt and pepper, if you like.
- Remove the parsley leaves from the stems; discard the stems or save them for another use. Roughly chop the leaves. Core, seed, and chop the tomatoes. Peel, seed, and chop the cucumber. Set aside.
- Check the bulgur: It should have absorbed all of the water, but there may be a bit in the bottom of the bowl. It should also be tender to the bite. If it's not, stir, cover, and let sit for 10 more minutes. If it's tender and there's water in the bowl, either drain the bulgur in a fine-mesh sieve or lift it out with a slotted spoon and into a separate bowl.
- Pour the dressing over the bulgur and toss to combine well. Add the parsley and toss to combine well. Add the tomatoes and cucumber and stir to mix.
- Serve immediately or cover and chill (up to overnight). Enjoy.

NEW-AGE TABBOULEH SALAD

- Combine all salad ingredients in a large, resealable bowl.
- Whisk together dressing ingredients, adding salt and pepper to taste. Toss salad with dressing. Taste salad (try to get a little of everything on your fork), add a little more lemon, if necessary. Adjust seasoning.
- Refrigerate at least 2-3 hours before serving to allow flavours to mingle and love each other. Mix salad well before serving to redistribute dressing. :-).

- Place the bulghur in a large bowl, pour in the boiling water, and add the lemon juice, olive oil, and 1 1/2 teaspoons salt. Stir, then allow to stand at room temperature for about 1 hour.
- Add the scallions, mint, parsley, cucumber, tomatoes, 2 teaspoons salt, and the pepper; mix well. Season, to taste, and serve or cover and refrigerate. The flavor will improve if the tabbouleh sits for a few hours.
TABBOULEH SALAD
This light, healthy dish found across the Middle East is the ideal summer salad. While pine nuts and sumac are not traditional, they add extra crunch and a lemony zip. Serve this tabbouleh alongside some lamb meatballs for a tasty dinner.

- Combine the water and measured salt in a medium saucepan and bring to a boil over high heat. Add the bulgur, stir to combine, and remove the pan from the heat. Cover with a tightfitting lid and let sit until the bulgur is tender, about 15 minutes. Drain well through a fine-mesh strainer, pressing out the excess liquid, and place the bulgur in a large bowl. Let cool to room temperature.
- Meanwhile, place 2 teaspoons of the oil in a small frying pan, add the pine nuts, season with salt and pepper, and stir to coat. Toast the nuts over medium heat, stirring occasionally, until they're golden brown and fragrant, about 3 to 5 minutes. Remove the pan from the heat and set aside until cooled.
- Add the parsley, mint, scallions, tomatoes, and cooled pine nuts to the cooled bulgur and stir to combine.
- Place the lemon juice, remaining 1/2 cup oil, and sumac in a small, nonreactive bowl and whisk until combined. Add the dressing to the bulgur mixture and stir to combine. Taste and season with salt and pepper as needed. Cover and refrigerate for at least 15 minutes or up to 6 hours.
- When ready to serve, prepare the lettuce leaves. Discard any tough or bruised outer leaves and cut off and discard the stem end. Separate the leaves and cut each leaf in half crosswise. Wash and dry thoroughly. Line a large serving plate with the lettuce leaves. Drizzle the tabbouleh with olive oil, if desired, and toss to combine. Spoon onto the lettuce leaves and serve.

VEGETABLE TABBOULEH WITH CHICKPEAS
This vegetable-packed salad requires no cooking, other than boiling water to soak the bulgur wheat. - In a medium bowl, combine bulgur wheat with enough boiling water to cover by 1 inch. Season lightly with salt and stir to combine. Cover tightly with a tight-fitting lid and let stand until tender, about 25 minutes. Drain well, pressing out excess liquid. Spread out on a baking sheet to cool.
- Meanwhile, in a large bowl, combine shallot, mustard, lemon juice and garlic. Season with salt and pepper. While whisking constantly, slowly drizzle in oil until well blended.

- Bring 1 cup water and tomato juice to a simmer in a small saucepan.
- Put the couscous in a large heatproof bowl and pour the hot liquid over it.
- Add the oil, stir and cover with plastic wrap; set aside.
- In another bowl, stir together everything except the hot sauce.
- Fluff the couscous with a fork, add to vegetables and mix.
- Finish with hot sauce to taste.
- Cover and refrigerate for at least 3 hours and preferably overnight to allow the flavors to blend.
