4 small Kirby or Persian cucumbers, cut into 1/2-inch pieces
1/4 cup distilled white vinegar
1/2 cup coarsely chopped fresh cilantro, plus more for serving
Kosher salt and freshly ground pepper
1/4 cup apricot jam
3 tablespoons sambal oelek or chili-garlic sauce
1 head broccoli (12 ounces), cut into large florets
3 small sweet potatoes, scrubbed and cut into 1-inch wedges
1/4 cup vegetable oil, plus more for drizzling
4 bone-in pork chops (each 1 inch thick), preferably rib end

Steps:

  • Preheat oven to 475°F, with a rimmed baking sheet on center rack and another rack in top position. Stir together cucumbers, vinegar, and 2 tablespoons cilantro; season with salt and set aside. In a small bowl, stir together jam and sambal oelek; set aside. In another bowl, toss broccoli and sweet potatoes with 3 tablespoons oil; season.
  • Remove sheet from oven; drizzle with remaining 1 tablespoon oil, then spread broccoli mixture in a single layer. Roast, flipping once, until charred in places, 22 to 25 minutes. Transfer to a plate; toss with remaining cilantro. Switch oven to broil.
  • Season chops with salt and pepper; place on same baking sheet and broil on top rack until beginning to brown, about 5 minutes. Flip; spread reserved jam mixture over chops. Broil until glaze is bubbly and chops are cooked through, about 2 minutes. Return broccoli mixture to sheet; broil 30 seconds. Serve with cucumber salad, topped with cilantro.

Steps:

  • Preheat the oven to 350ºF. In a small bowl, combine the brown sugar, cayenne pepper, garlic powder, paprika, salt, and black pepper.
  • Remove the pork chops from their package and rub the seasoning mixture over all sides of each chop. The moisture from the meat will help the seasoning to adhere to the surface.
  • Heat olive oil in a large, oven­-safe skillet over a medium flame. When the oil begins to shimmer, add the pork chops. Cook the chops for about 5 minutes on each side, until nicely browned.
  • If your chops are greater than one-inch thick, transfer the skillet to the preheated oven for another 5­-10 minutes to finish cooking. Test the chops with a meat thermometer to make sure the internal temperature has reached 145ºF. Cook longer if needed.
  • Dredge the chops through the thick sauce in the bottom of the pan just before serving.

1/4 cup chili sauce
2 tablespoons honey
2 tablespoons rice vinegar
1/2 teaspoon dry mustard
4 (6 ounce) pork loin chops with bone
1/2 teaspoon garlic pepper seasoning
1/2 teaspoon paprika
1/4 teaspoon salt

Steps:

  • Heat gas or charcoal grill. In small saucepan, combine all glaze ingredients, chili sauce, honey, rice vinegar, dry mustard. Cook over low heat for 3 to 5 minutes or until thoroughly heated and flavors are blended, stirring occasionally.
  • Sprinkle both sides of each pork chop with garlic pepper blend, paprika and salt.
  • When grill is heated, place pork chops on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 10 to 15 minutes or until no longer pink in center, turning once or twice and brushing with glaze during last 5 minutes of cooking time.
  • Bring any remaining glaze to a boil. Serve warm glaze with pork chops.

1 cup peach preserves
1 ½ tablespoons Worcestershire sauce
½ teaspoon chile paste
4 boneless pork chops
1 teaspoon ground ginger
1 pinch ground cinnamon
salt and pepper to taste
2 tablespoons vegetable oil
½ cup white wine

Steps:

  • In a small bowl, mix together the peach preserves, Worcestershire sauce, and chile paste. Rinse pork chops, and pat dry. Sprinkle the chops with ginger, cinnamon, salt, and pepper.
  • Heat oil in a large skillet over medium-high heat. Sear the chops for about 2 minutes on each side. Remove from the pan, and set aside.
  • Pour white wine into the pan, and stir to scrape the bottom of the pan. Stir in the peach preserves mixture. Return the chops to the pan, and flip to coat with the sauce. Reduce heat to medium low, and cook the pork chops for about 8 minutes on each side, or until done.

I had some pork chops to use and looked through a list of sauces and glazes and none of them sounded quite right, so I decided to make up my own and it became a hit at our house.

1/3 cup ketchup
1/3 cup honey
1/3 cup soy sauce
1 tablespoon Worcestershire sauce
1 tablespoon grated fresh ginger
2 garlic cloves, minced
1 teaspoon adobo sauce, more if you like it spicy
salt
pepper
2 -3 pork chops

Steps:

  • Mix all ingredients above salt in a bowl, heat for about 30 seconds in the microwave and combine.
  • Place pork chops on grill over medium high heat, season with salt and pepper and top with sauce. Grill about 5 minutes on each side, re-basting often with sauce.
  • You can also cook these in the oven, or on the George Foreman.
  • *For a kid friendly sauce omit the adobo sauce, I set a small bowl aside for my son without the adobo sauce and make sauce with the added kick for my husband and I.

16 ounces boneless center cut pork chops
1 tablespoon brown sugar
2 tablespoons low sodium soy sauce
2 tablespoons chili paste with garlic (sambal oelek)
1 tablespoon hoisin sauce
2 teaspoons rice vinegar
1/4 cup diagonally sliced green onion
cooking spray

Steps:

  • Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add pork, cooking 3 to 4 minutes on each side. Remove pan from heat and let pork stand for 30 seconds.
  • While pork cooks, combine brown sugar, soy sauce, chile paste, hoisin and rice vinegar in a small bowl.
  • Pour sauce over the pork, scraping the pan to loosen the fond. Turn the pork over to coat. (The recipe does not call for this, but I often will return over low heat just to make sure the sauce is heated through, if there is not enough residual heat in the skillet).
  • Serve garnished with the green onion slices.
  • I had a couple of thick boneless chops sitting around, so I cut them into thin, flat slices and cooked as above; then doubled the sauce ingredients, tossed it all together and served with saffron rice. A nice variation.

BRINED SWEET AND SPICY PORK CHOPS

My DH does not really like pork chops because he feels that pork always comes out too dry. That is why it is necessary to use the brine, and leave the meat in it for at least 4 hours (better results overnight). I've found that if you let the meat rest in the brine before cooking it, it really adds a lot of moisture and flavor to the meat. ---

4 boneless pork chops
3 jalapeno peppers, cut into strips
1 pint grape tomatoes, halved
1 (20 ounce) can pineapple chunks, in juice
2 tablespoons cornstarch
4 tablespoons butter, more if needed
salt and black pepper
2 quarts water
1/2 cup kosher salt
4 tablespoons light brown sugar
6 bay leaves, crushed
4 tablespoons black peppercorns
4 garlic cloves, crushed
4 tablespoons dried thyme leaves
4 tablespoons dried rosemary leaves

Steps:

  • Mix all ingredients for brine in a large non-reactive container, making sure salt and sugar are dissolved well. Place pork chops in brine and place in refrigerator overnight.
  • Once you are ready to cook, rinse pork chops and pat dry. Season with salt and cracked black pepper (make sure not to add too much salt because the pork chops absorb salt from the brine as well.).
  • Heat a skillet and melt the butter. Once the pan is hot, add pork chops and cook until done, adding more butter if needed. Once pork chops are done, remove from skillet and set aside.
  • Add jalapeño strips and cook for about 2 minuted to release the flavor. Add more butter if needed.
  • Add pineapple chunks, reserving the juice. Add grape tomatoes. Cook for about 1 minute.
  • Add half the pineapple juice to the skillet. In a mixing bowl, combine the cornstarch with the remaining pineapple juice. Once the mixture in the skillet starts to lightly simmer, add the cornstarch mixture and let the sauce thicken.
  • Serve and enjoy!

A combination of chili powder and other herbs and spices make a spicy rub for pork chops. Brush with a spicy-sweet glaze in the last 2 minutes of cooking, and take the extra glaze to the table for even more goodness. We enjoyed these chops with simple sauteed zucchini and steamed white rice.

4 cups water
2 tablespoons kosher salt
2 tablespoons white sugar
4 (5 ounce) bone-in center loin pork chops, about 3/4-inch thick
1 teaspoon chili powder, or to taste
1 teaspoon onion powder
½ teaspoon salt
¼ teaspoon white pepper
½ cup apricot all-fruit spread
3 tablespoons hoisin sauce
1 (1 inch) piece ginger root, peeled and grated
2 cloves minced garlic
1 ½ teaspoons Asian chili-garlic sauce
½ medium lime, juiced
cooking spray
2 tablespoons finely minced fresh parsley

Steps:

  • Combine water, salt, and sugar in a bowl and stir until the crystals are dissolved. Add pork chops, cover, and refrigerate for at least 2 hours, or up to 4 hours.
  • Remove pork chops from the brine and shake off excess. Discard the remaining brine. Pat chops dry with paper towels and place on a plate or cutting board.
  • Combine chili powder, onion powder, salt, and white pepper in a small bowl. Distribute 1/2 of the rub mixture among the 4 chops and rub to coat the entire surface. Turn the chops and repeat. Allow chops to come to room temperature, about 30 minutes.

  • Place chops in the air fryer in a single layer and air-fry for 8 minutes, turning halfway through.
  • Brush the tops of the chops with prepared glaze and air-fry until pork chops are no longer pink in the center, 2 to 3 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
  • Sprinkle chops with minced parsley, and serve with remaining glaze.

This is my own recipe. I think it's very good. It makes its own glaze as it cooks, not too sweet and not too spicy. I like to serve it with garlic mashed potatoes or twice baked potatoes.

one boneless pork loin roast (2 to 3 pounds)
3 tablespoons canola oil
1 tablespoon garlic powder
1 tablespoon cayenne pepper
2 tablespoons kosher salt
2 tablespoons ground black pepper
3 tablespoons dried rosemary leaves
1/3 cup of good maple syrup

Steps:

  • Place roast fat side down in a shallow metal pan or iron skillet.
  • Rub all surfaces of the roast with canola oil.
  • Combine all the dry ingredients together to make a rub. Note: I mortar and pestle the rosemary a little to break it apart and release the flavor. You can use more or less of these dry ingredients to taste or to your perference.
  • Apply the above to all surfaces of the roast. Rub them in well and return the roast to the pan fat side down.
  • Drizzle maple syrup over top of the roast and let it run down the sides. Try to coat the top and sides evenly. It's okay if the syrup runs down onto the pan surface.
  • Bake in a preheated 325F oven. Refer to a cookbook pork roasting chart to determine the exact baking time, depending on the weight of your roast. A 2 1/2 to 3 pound roast should take about 1 hour and 20 minutes to be done in a 325F oven.
  • After the roast is done, remove from the oven and let it rest for about 20 minutes or so while still in the pan. Then use a tablespoon to gather the thick fluid (glaze) from the bottom of the pan and spoon it over the top and sides of the roast.
  • Enjoy.
