SYRUP:
1 cup fresh or frozen cranberries
2/3 cup orange juice
1/2 cup sugar
3 tablespoons maple syrup
PANCAKES:
2 cups biscuit/baking mix
2 tablespoons sugar
2 teaspoons baking powder
2 large eggs
1 large egg yolk
1 cup evaporated milk
2 tablespoons orange juice
1 teaspoon grated orange zest
1/2 cup chopped fresh or frozen cranberries
Orange zest strips, optional

Steps:

  • In a small saucepan, bring the cranberries, orange juice and sugar to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Cool slightly. With a slotted spoon, remove 1/4 cup cranberries; set aside., In a blender, process cranberry mixture until smooth. Transfer to a small bowl; stir in maple syrup and reserved cranberries. Keep warm., In a large bowl, combine the biscuit mix, sugar and baking powder. In another bowl, whisk the eggs, egg yolk, milk, orange juice and zest. Stir into dry ingredients just until blended. Fold in chopped cranberries., Drop batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top. Cook until second side is golden brown. Serve with syrup. Garnish with orange zest strips if desired.

These pancakes are bursting with juicy cranberries, orange pieces and deliciousness!

Number Of Ingredients 11

1 ½ cups all-purpose flour
3 tablespoons granulated sugar
1 tablespoon baking powder
½ teaspoon salt
1 egg
1 ⅓ cups 2% milk
2 tablespoons vegetable oil
1 large orange
¾ cup Kellogg's* All-Bran* Original cereal
¾ cup fresh or frozen cranberries, chopped
2 teaspoons Vegetable oil for cooking

Steps:

  • In medium bowl, stir together flour, sugar, baking powder and salt. Set aside.
  • In large bowl, lightly beat egg. Stir in milk and oil. Grate orange rind; add to egg mixture. Cut remaining peel from orange and finely chop flesh; add flesh to egg mixture. Stir in All-Bran cereal and chopped cranberries. (Thaw, drain and chop frozen cranberries.)
  • Stir in dry ingredients, mixing just until combined. (Will thicken if it sits awhile, add more milk as needed.)
  • Using 75 mL (1/3 cup) batter for each pancake, pour batter onto lightly greased preheated non-stick skillet. Cook until bubbles form on surface, about 2 minutes. Flip and cook about 1 minute longer, until golden brown. Serve immediately with maple syrup.

I found this recipe in the November/ December 2007 Eating Well magazine. Cranberries may help arteries remain healthfully elastic and may prevent unnecessary clotting. Cranberries can also promote a healthy urinary tract and may inhibit dental plaque.

1/2 cup fresh cranberries
1/4 cup all-purpose flour
2 tablespoons whole wheat flour
2 teaspoons whole wheat flour
1 tablespoon yellow cornmeal
1 tablespoon sugar
1/2 teaspoon baking powder
1/8 teaspoon salt
1/8 teaspoon ground nutmeg or 1/4 teaspoon vanilla extract
6 tablespoons nonfat milk
2 tablespoons pasteurized egg substitute, such as Egg Beaters
1 1/2 teaspoons walnut oil or 1 1/2 teaspoons canola oil

Steps:

  • Bring 2 inches of water to boil in a small saucepan. Add cranberries, boil for 2 minutes. Drain and cool for 5 minutes.
  • Meanwhile, whisk all-purpose flour, whole wheat flour, cornmeal, sugar, baking powder, salt and nutmeg (if using) in a large bowl.
  • Whisk milk, egg substitute, oil and vanilla (if using) in a small bowl until combined.
  • Coarsely chop the cranberries; stir into the milk mixture. Stir the milk mixture into the dry ingredients just until combined.
  • Coat a griddle or nonstick skillet with cooking spray; heat over medium heat. Using 1/4 cup of batter for each pancake, cook 2 pancakes at a time until bubbles dot the surface, 2 to 3 minutes. Flip and continue cooking until browned, 1 to 2 minutes more. Repeat with the remaining batter.

2 cups wheat bran
1/2 cup sugar
2 1/2 cups flour (I use combo of white & wheat)
2 1/2 teaspoons baking soda
1 teaspoon salt
1/3 cup fresh squeezed orange juice (approximately)
1 2/3 cups low-fat milk (approximately)
1 -2 tablespoon orange zest
1/2 cup applesauce
1 teaspoon vanilla
2 eggs, beaten
3/4 cup dried cranberries

Steps:

  • Combine dry ingredients in a large bowl.
  • In a separate bowl, squeeze orange juice from orange(s) and combine with enough low-fat milk to make 2 cups total. Add zest from orange(s). Mix in applesauce, vanilla and eggs. Add wet ingredient mixture to dry ingredients and mix well by hand. Stir in cranberries.
  • Divide between muffin tins, and bake at 350°F for 18-20 minutes.

3/4 cup milk
2 tablespoons melted butter
1 egg
1 cup flour
2 teaspoons baking powder
2 tablespoons sugar
1 teaspoon sugar (for cranberries)
1/2 teaspoon salt
1/2 cup fresh cranberries or 1/2 cup frozen cranberries

Steps:

  • Beat milk, melted butter, and egg together in a bowl.
  • Mix flour, baking powder, 2 tbls sugar, and salt together in a separate bowl and add them to the wet ingredients mixing just enough to wet the flour.
  • Cut cranberries in half, place in microwave safe bowl and sprinkle in the 1 tsp of sugar. Microwave on high and stir every 15 seconds till cranberries start to bubble. Let cool and add to pancake mixture.
  • Preheat griddle with a pat of butter on each side till water droplets dance on the surface.
  • Put 1/4 cup of cranberry batter on griddle and cook till surface bubbles and edges get crusty. Flip and cook on other side.

1 cup ground flax seeds
1 cup wheat bran

2 whole oranges, cut into wedges
1 cup brown sugar
1 cup buttermilk
1/2 cup oil
2 eggs
1 teaspoon baking soda
1 1/2 cups dried cranberries, orange-flavored
1 cup walnuts

Steps:

  • preheat oven to 375.
  • prepare a muffin pan with paper liners.
  • combine dry ingredients except baking soda in a large bowl and set aside.
  • in blender combine sugar, buttermilk, oil, eggs, and baking soda.
  • add orange wedges to blender and puree well. Make sure the orange rind is really well pulverized into tiny bits.
  • mix blender contents with bowl of dry ingredients.
  • stir in cranberries.
  • fill muffin liners nearly to top.
  • bake 20 - 25 minutes.
