MAPLE-DIJON BRUSSELS LEAF SALAD
This is my go-to unexpected side for Thanksgiving and other pot-lucks. Aside from being gorgeous, it holds up well when made ahead, tastes great at room temp, and appeals to lots of eaters because it's vegan, paleo, gluten-free, and low-carb friendly. The only thing that takes time is deconstructing the Brussels sprouts. The salad keeps in the refrigerator for up to 3 days.

Steps:
- Cut cores out of Brussels sprouts using a paring knife. Peel layers apart to separate individual leaves; place leaves in a large bowl.
- Whisk maple syrup, olive oil, Dijon mustard, and apple cider vinegar together in a small bowl. Drizzle over Brussels sprout leaves; add cranberries and toss to coat. Add almonds and toss again before serving.

Crispy, crunchy, salty and sweet, this apple walnut salad is so delicious and takes only minutes to make!

- In a small bowl, whisk the vinegar with mustard and maple syrup. Whisk in olive oil then season to taste with salt and pepper.
- In a large bowl, add greens, apples and walnuts. Toss gently with 2/3 of the vinaigrette. Add in crumbled blue cheese and croutons, toss gently one more time. Arrange on a platter or serve in bowls with additional dressing as desired.

- Preheat oven to 400 degrees. Dump 5 oz shaved brussels sprouts onto a lined cookie sheet. Toss in 2 tsp of the maple syrup, 2 tsp dijon mustard, and 2 tsp olive oil. Move to sides of the cookie sheets. Place two 4 oz salmon filets on cookie sheet, brush remaining 1 tsp syrup, 1 tsp mustard, and 1 tsp oil on top of fish.
- Place in oven, cook for 14-15 minutes. Remove when done, fish should be tender and flaky. Serve immediately with fresh bread or potatoes if desired.

- Add your kale and brussels sprouts to a large bowl. Pour on 3/4 of your dressing, and massage the dressing into the greens for a few minutes. The kale should turn bright green and start to soften.
- Add your apple, dried cranberries, and walnuts, and toss to combine. Serve immediately with the leftover dressing on top (or store in the fridge — I loved it as leftovers!).
