Steps:
- Preheat oven to 375 degrees F.
- In 3-quart saucepan, melt margarine or butter over low heat. Remove saucepan from heat and, with wire whisk, beat in molasses and 1 cup sugar until blended, whisk in egg.
- With spoon, stir in flour and remaining ingredients until mixed.
- Transfer dough to medium bowl and freeze 15 minutes or until firm enough to handle. Spread remaining 1/4 cup sugar on waxed paper.
- Roll dough into 1-inch balls, roll balls in sugar to coat. Place balls, 2 1/2 inches apart, on ungreased large cookie sheet. Bake cookies 10 to 12 minutes, until cookies spread and da rken.
- Let cookies remain on cookie sheet on wire rack 1 minute to cool slightly.
- Transfer cookies to wire rack to cool completely.
- Repeat with remaining dough.
- Store cookies in tightly covered container up to 2 weeks.

- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
- For the molasses cookies: Put the brown sugar, butter and vegetable shortening in a large bowl and beat with a hand mixer on medium speed until combined. Add the flour, molasses, eggs, cinnamon, ginger and baking soda and beat until combined.
- Use a tablespoon to scoop the dough onto the baking sheets. Make sure there is ample space between each dough ball as the cookies will spread.
- Bake until puffed on top, 10 to 12 minutes. Cool the cookies on the baking sheet on a rack for 5 minutes, then transfer the cookies to the rack to cool completely before frosting.
- For the boiled frosting: Combine the granulated sugar, 3/4 cup water, cream of tartar and a pinch of salt in a medium heavy-bottomed pot, bring to a boil over medium heat and cook until a candy thermometer registers 245 degrees, about 3 minutes. Remove from the heat and fold in the marshmallows until melted.
- Put the egg whites in the bowl of a stand mixer fitted with a whisk attachment and whip on medium-high speed into stiff peaks. Turn the mixer to low and slowly pour the hot sugar mixture into the egg whites. Beat on medium speed until cool and fluffy, then fold in the vanilla extract.
- Using a butter knife, frost the bottoms of half the cookies, top them with the remaining cookies, and serve.

- Boil molasses over low heat for 1 minute.
- Remove from heat.
- Add sugar and butter.
- Mix well.
- Add rest of the wet ingredients and mix well.

- Press with a fork and sprinkle with sugar.
- Bake for about 10 minutes.

- Put shortening and molasses in small saucepan and bring to a boil.
- Remove from heat and cool.
- Combine remaining ingredients and stir in the cooled molasses mixture.
- Mix well; cover container and chill in refrigerator for 3 hours.
- Roll dough on lightly floured board to about 1/4 inch thickness.
- Cut in desired shapes and place cookies about 2 inches apart on ungreased shiny cookie sheets.

- In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg yolks, molasses and water. Combine the flour, baking soda, cinnamon and baking powder; gradually add to creamed mixture and mix well. Cover and refrigerate for 2 hours or until easy to handle., On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with a floured 2-1/2-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets. Bake at 375° for 8-10 minutes or until edges are firm. Remove to wire racks to cool. , For frosting, combine the sugar, egg whites and water in a small heavy saucepan over low heat. With a hand mixer, beat on low speed for 1 minute. Continue beating on low over low heat until frosting reaches 160°, about 8-10 minutes. Pour into the bowl of a heavy-duty stand mixer; add confectioners' sugar. Beat on high until frosting forms stiff peaks, about 7 minutes. Frost cookies. Let stand until dry.

- In a large bowl, cream together the sugar and shortening until smooth. Stir in the molasses and vanilla. Combine the flour, cinnamon, baking soda and salt; stir into the mixture alternately with the sour milk. Cover the dough and chill for at least one hour.
- Preheat the oven to 375 degrees F (190 degrees C).Grease cookie sheets. On a lightly floured surface, roll out about 1/3 of the dough to 1/4 inch in thickness. Cut into circles about 3 inches in diameter using a cookie cutter or drinking glass. Place cookies 2 inches apart onto the prepared cookies sheets. Place a raisin onto the center of each cookie.

JOHN'S ROLL-OUT MOLASSES COOKIES
A coworker of mine gave me this recipe. There isn't one exactly like it on Zaar, in that it uses allspice and has no eggs. It is a dense, spicy cookie that is rolled out and cut into shapes. Cooking time includes time to chill dough. I have halved the amounts in the original recipe because it made SO many cookies; hence the weird measurement for the shortening. It was originally 1/3 c. shortening, and this is the best I could come up with for getting half of that. Be sure not to roll them thinner than 1/4 - 1/2 inch (nor overbake) so that they keep their good, dense, kinda chewy texture.

- Mix together shortening, molasses and brown sugar. Stir in 1/4 cup cold water.
- Mix together the flour, salt and spices. Add to molasses mixture.
- Dissolve soda in 1.5 teaspoons cold water. Stir it into the above mixture.
- Gather up dough into a ball; on waxed paper, pat into a disk. Wrap up. Chill for at least an hour.
- Roll out between 1/4-inch and 1/2-inch thick. I thought 1/2-inch was a bit too thick, but it's up to you. Cut into shapes, specifically gingerbread men or bears. Gather up scraps, pat into a ball, reroll and cut into shapes, etc., until you have used most of your dough.
- On lightly greased or sprayed cookie sheets, bake at 350 degrees for 15-18 minutes.
- These swell a little during cooking, so be sure to leave some space between them on the cookie sheets. Also, they taste better the day after baking when the spices have had a chance to meld with each other.
