3 Tbsp. GREY POUPON Dijon Mustard
2 Tbsp. olive oil
1 clove garlic, minced
1/2 tsp. dried Italian seasoning
2 lb. red potatoes (about 6), cut into bite-size chunks

Steps:

  • Heat oven to 425°F.
  • Mix all ingredients except potatoes until blended.
  • Spread potatoes onto bottom of 13x9-inch pan sprayed with cooking spray. Add mustard mixture; toss to coat.
  • Bake 35 to 40 min. or until potatoes are tender, stirring occasionally.

A simple side dish from Meals Made Easy with Grey Poupon. We really enjoyed these, but the onions were over cooked by following the directions. Next time, I will add the onions about 1/2 way thru cooking.

1/2 c olive oil
3 lb baking potatoes, 1 1/2-inch cubes
2 medium onions, sliced
fresh parsley, chopped

Steps:

  • 1. In small bowl, combine mustard and oil.
  • 2. In large bowl, combine potatoes, onions, and mustard mixture; toss to coat well.
  • 3. Spread in 15 1/2 x 10 1/2 x 1 inch baking pan. Bake at 400F for 45-50 minutes or until potatoes are tender and crispy; stirring once.
  • 4. Garnish with parsley.

Steps:

  • Mix Grey Poupon Dijon Mustard, oil, garlic and Italian seasoning in large bowl. Add potatoes, stirring to coat. Place on lightly greased large shallow baking pan. Roast at 425 degrees for 35 to 40 minutes or until potatoes are tender and golden brown, stirring halfway through cooking.

8 medium red potatoes
2 tbsp butter
1/4 tsp salt
1/4 tsp fresh black pepper
1/3 cup Grey Poupon Dijon Mustard
2 tbsp olive oil
1 tbsp chopped garlic
1 tsp fresh rosemary (chopped)

Steps:

  • Preheat oven to 400°F. In a small bowl whisk together the mustard, oil, garlic and rosemary. Set aside. Wash, quarter then quarter again each potato.
  • In a large oven roof skillet (like cast iron) over medium-high heat add butter and cook potatoes for 8-10 minutes until golden brown on edges. Season with salt and pepper then transfer to oven to roast for 30 minutes.
  • Remove pan from oven and add mustard sauce to roasted potatoes. Stir to coat evenly and cook on medium-high heat for 5 minutes on stovetop. Serve with chopped parsley or more rosemary if desired.

Tasty potato dish that freezes exceptionally well. I do 10 lbs at a time and take out just what we need. Never thaw them before heating, tho, as they get soggy. Put still-frozen potatoes in a 350 0ven for 30 min +/- and they'll be almost as good as freshly done. Good for Sunday brunch. My adaptation of the recipe the Grey Poupon people had in their ad a few years ago.

1/3 cup Grey Poupon or 1/3 cup other Dijon mustard
2 tablespoons olive oil
1/2 teaspoon oregano
1/2 teaspoon rosemary

4 -5 lbs red potatoes, scrubbed but not peeled

Steps:

  • Mix all ingredients except potatos in large bowl.

1 pound new potatoes, assorted varieties and colors are great
6 cloves garlic, smashed
2 tablespoons finely chopped sage
Pinch crushed red pepper flakes
Kosher salt
Extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • Cut the potatoes into halves or quarters, as long as they are all about the same size.
  • Place the potatoes in a large bowl and add the garlic, sage, and crushed red pepper. Generously sprinkle with kosher salt and olive oil. (The potatoes will absorb a lot of oil and salt; they will taste bland if we don't go big here.)
  • Lay the potatoes in a single layer on a sheet tray and roast in the preheated oven for 20 to 30 minutes. Check the potatoes halfway through the cooking process to rearrange so the potatoes will have even cooking time and get evenly browned. The potatoes should be nice and brown and really well flavored. Transfer to a serving bowl and serve.

13 russet potatoes, cut into 1-inch (2 1/2 cm) pieces
1 teaspoon baking soda
1 teaspoon salt
¼ cup olive oil
2 tablespoons garlic, minced
2 tablespoons fresh rosemary, or fresh thyme, finely chopped
1 teaspoon black pepper
salt, to taste
pepper, to taste
1 small handful fresh parsley leaf, minced to garnish

Steps:

  • Fill a large pot with water and boil. Add salt, baking soda, and potatoes, and stir.
  • Return to a boil, reduce to a simmer, and cook for 10 minutes after returning to a boil. A fork should easily pierce the potato pieces by the end. Drain and let sit one minute while moisture evaporates.
  • Combine olive oil, rosemary (or thyme), garlic, and a few grinds of black pepper in a small saucepan and heat over medium heat. Stir constantly until garlic just begins to turn golden, about 2-3 minutes.
  • Immediately strain oil through a fine-mesh strainer over the potatoes. Add salt and pepper to taste, and mix.
  • Shake the pot that the potatoes are in so that they slam against all sides of the pot, this will loosen the outer layer of the potatoes to form a mashed layer around each potato piece.
  • Preheat oven to 425°F (220°C).
  • Transfer potatoes to a large rimmed baking sheet and separate them, spreading them out evenly.
  • Transfer to oven and roast, without moving, for 30-35 minutes.
  • Using a thin, flexible metal spatula flip potatoes. Continue roasting until potatoes are deep brown and crisp all over, turning and shaking them a few times during cooking, 30 to 40 minutes longer.
  • Transfer potatoes to a large bowl and add the garlic-rosemary mixture (optional) and minced parsley. Toss to coat and season with more salt and pepper to taste. Serve immediately.
