MAKEOVER REAL-MAN QUICHE
This quiche is one of my husband's favorites, probably because it has bacon. Sometimes I add sliced fresh white or baby portobello mushrooms and saute them with the onions for more "meatiness." The makeover version looks wonderful! - Ruby Hochstetler, Holland, Michigan

Steps:
- On a lightly floured surface, unroll crusts. Transfer to two 9-in. pie plates. Trim crust to 1/2 in. beyond edge of plate; flute edges., In a large nonstick skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain and crumble. In the same skillet, saute onions until tender., In a large bowl, whisk the egg whites, eggs, milk, cheese, spinach, onions, tomatoes, cornstarch, basil and pepper. Divide between crusts. Sprinkle with bacon., Bake at 375° for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

THE REAL MAN'S QUICHE
This is an adaptation of a recipe that was given to me by a friend a couple of decades ago when I was a newlywed. It is still one of my family's favorites. It is great to pull out of the freezer when I don't have time to cook.

Steps:
- Bake pie crusts 5 minutes at 425 degrees F.
- Brown meat and drain well.
- Steam broccoli and mushrooms.
- Mix broccoli, mushrooms, artichokes and meat together and spread in pie shell.
- Sprinkle Parmesan and Cheddar cheeses over meat and vegetable mixture in shells.
- Beat eggs, cream and seasonings together and pour over meat pie filling.
- Bake at 425 degrees F.
- for 15 minutes then reduce heat to 300 degrees F.
- and bake 35 minutes more.
- This makes two quiches so there is an extra one to freeze or share with another real man!

MAGIC PANCAKE MIX QUICHE
This crustless quiche has just enough eggs to be recognizably quiche-y, but most of the body comes from a surprising ingredient: pancake mix! One of the most popular brands we all know and love, Bisquick, actually started as a biscuit mix (hence the name) in the early 1930s. But as home cooks got creative with the product, the company started releasing cookbooks with dozens of recipes for cakes, breads and even donuts using the mix. This inventive hack for quiche was extremely popular in the '60s and '70s and, like all trends, has come back around as a quick, easy and reliable recipe. The filling here is a breakfast combo of bacon, onion and cheese, but feel free to customize it however you like.

- Position an oven rack in the middle of the oven and preheat to 400 degrees F. Coat a 9 1/2-inch deep-dish pie plate with nonstick spray.
- Meanwhile, cook half of the bacon in a large nonstick skillet over medium heat, flipping occasionally, until crisp, about 8 minutes. Transfer to a paper towel-lined plate then carefully pour off the fat. Repeat with the remaining bacon. Let cool then chop into 1/2-inch pieces.
- Combine the eggs, salt and pepper in a large bowl and whisk thoroughly. Add the pancake mix and whisk until smooth (some small lumps are OK). Add the heavy cream and whisk once more until incorporated, then stir in the Cheddar, onion and chopped bacon.
- Transfer the mixture to the prepared pie plate. Bake until the top is golden brown and the center is set, about 40 minutes. The quiche will puff up in the oven but will deflate as it cools.
- Transfer to a wire rack to cool for at least 15 minutes then slice and serve.

- Pie Crust: Combine the flour, sugar, and salt in the bowl of a food processor fitted with a steel blade. Pulse a few times to mix.
- Add the butter and shortening and pulse about 10 -12 times until the fat is cut into the flour mixture and it's pea size.
- Pour in about ⅔ of the ice water and pulse a few more times until a ball begins to form, adding more water as needed. Be careful not to overmix. The dough should not be completely blended, it will come together on the counter.
- Scrape dough onto the counter and form it into a flat disc. Wrap it in plastic wrap and refrigerate for at least an hour or overnight. (Dough can also be frozen for several weeks. Defrost in refrigerator before proceeding.)
