SWEET AND SPICY BEER PICKLES
These beer pickles made with pale ale have a sweet flavor with a spicy punch. They are the perfect addition to burgers or a charcuterie board.

- To make these beer pickles, in a medium saucepan combine pale ale, water, vinegar, sugar and salt. Place over medium-high heat and stir occasionally to dissolve sugar. Bring to a simmer and then turn off heat. In a clean, large glass jar (or a multiple smaller jars) distribute cucumber slices, mustard seeds, garlic and chili flakes. Pour the pickling liquid over the cucumbers and spices, making sure that they are completely covered. At this point, if you're preserving the pickles, you'll seal them using a canning water bath and process for ten minutes. Preserved pickles can be kept in a cool dark place for up to six months. Refrigerate after opening. If not, seal the jar or jars and let rest in the refrigerator for at least two days before eating.

- Dip the rim of a pint glass into a shallow dish of honey, then into a shallow dish of coarse salt. To the glass, add 1 teaspoon each honey and hot water and stir until honey is dissolved. Add orange juice, lime juice, and hot sauce and stir to combine. Fill glass with ice and top off with pale lager. Garnish with a lime slice.
SWEET AND SPICY GINGER BEER PULLED PORK
This is a relaxed slow cooker recipe. I've never really measured ingredients out as I've gone, but the end result is absolutely amazing. I never even use BBQ sauce, but you can if you want. Feel free to play with the ingredients, more or less here and there, to suit the tastes of your family. And get ready for a whole lot of mmmmmmm.

- Arrange sweet onions in the bottom of a slow cooker.
- Mix salt, brown sugar, paprika, black pepper, garlic powder, and red pepper flakes together in a bowl until seasonings are well mixed; rub all over pork roast. Place roast in the slow cooker, fat-side up. Brush any leftover seasonings mixture from the work surface into the slow cooker.
- Cook on Low for 1 hour. Pour ginger beer into slow cooker. Continue cooking until roast is tender and pulls apart easily with a fork, 9 to 11 hours.

- In a large pitcher, stir together orange juice, pineapple juice, ginger, and vodka (if using). Refrigerate until cold, at least 1 hour (and up to 1 week). Just before serving, stir in ginger ale. Serve over ice, garnished with orange wedges, if desired.

- In large microwavable bowl, mix cereals, pretzels and nuts.
- In 4-cup microwavable measuring cup, place ale. Microwave uncovered on High 4 to 6 minutes, stirring every 2 minutes, until reduced to 1/4 cup. Stir in brown sugar, butter, chili powder, salt and red pepper. Microwave on High 1 to 2 minutes, stirring every 30 seconds, until butter is melted and sugar is dissolved. Pour over cereal mixture; stir until evenly coated.
- Microwave uncovered on High 6 to 8 minutes, stirring every 2 minutes, until mixture just begins to brown. Spread on waxed paper or foil to cool. Store in airtight container.
