Brined chicken breasts are grilled, coated with a sweet barbecue glaze, topped with provolone, and piled onto a bun with spiced bacon, lettuce, and onion to make one hella good sandwich.

For the Brine
2 quarts cold water
1/3 cup kosher salt
2 tablespoons granulated sugar
2 tablespoons dark brown sugar
4 skinless, boneless chicken breasts
For the Barbecue Glaze
3/4 cup ketchup
1/4 cup apple juice
1/4 cup cider vinegar
3 tablespoons jalapeño jam
2 tablespoons maple syrup
2 tablespoons honey
2 tablespoons dark brown sugar
2 tablespoons molasses
1 tablespoon Worcestershire Sauce
1 tablespoon hot sauce
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
For the Bacon Rub
1 tablespoons sugar
1 teaspoon chili powder
1/8 teaspoon cumin
1/8 teaspoon cayenne pepper
6 slices thick cut bacon
4 slices provolone cheese
4 potato rolls
2 tablespoons butter, softened
2 roma tomatoes, sliced into 1/4-inch rounds
1 red onion, thinly sliced
4 leaves red leaf lettuce, washed and dried

Steps:

  • Place one chicken breast in a resealable plastic bag or between two pieces of plastic wrap. Using a meat pounder, rolling pin, or small skillet, pound chicken breast into an even thickness about 3/4-inches in height. Repeat with remaining 3 breasts.
  • To make the brine: In a medium bowl whisk together water, salt, white sugar, and brown sugar until solids are dissolved. Place chicken breasts in brine and refrigerate for 30 minutes. Remove chicken from brine and pat dry with paper towels. Place chicken back in fridge until ready to grill.
  • To make the glaze: Whisk together ketchup, apple juice, cider vinegar, jalapeño jam, maple syrup, honey, dark brown sugar, molasses, Worcestershire sauce, hot sauce, salt, cayenne pepper, and garlic powder in a medium saucepan. Bring to a boil over medium heat, reduce heat to low and simmer until sauce has slightly thickened, about 15 minutes. Remove from heat.
  • To make the bacon rub: Mix together sugar, chili powder, cumin, and cayenne in a small bowl. Lay bacon out on a plate and sprinkle with rub on both side.
  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Lay bacon on cool side of the grill, cover, and cook until crisp, about 10 minutes, flipping halfway through. Remove to a plate and break bacon strips in half.
  • Place chicken over hot side of grill and cook until well browned, 3 to 5 minutes. Flip and continue to cook until second side is browned. Move chicken to cool side of grill and brush all over with barbecue glaze. Top each chicken breast with one slice of provolone cheese. Cover and continue to cook until cheese has melted and meat register 160°F on an instant read thermometer inserted into the center of breast, about 5 minutes more. Transfer chicken to a plate and let rest for 5 minutes.
  • Lightly butter cut sides of potato rolls. Place rolls over hot side of grill, cut side down, until lightly toasted, about 1 minute; transfer to a tray. Top each bun with a chicken breast, tomato, onion, lettuce, and bacon and serve immediately with remaining barbecue glaze.

12 slices of bacon
2 teaspoons salt
2 teaspoons pepper
2 teaspoons Garlic Powder
2 teaspoons Chili Powder
2/3 cup brown sugar
2 Tablespoons Olive Oil

Steps:

  • Preheat oven to 400 degrees.
  • Cut each chicken breast into thirds, leaving you with 12 pieces.
  • Lay chicken pieces in a 9x13 baking dish, coat with 2 Tablespoons of Olive Oil. (can use non-stick cooking spray also) Sprinkle chicken with spices, flip over and sprinkle the other side.
  • Wrap each piece of chicken with a slice of bacon. Roll in brown sugar.
  • Bake for 30-40 minutes, or until chicken is cooked through and bacon is nice and crispy.
  • Drizzle with glaze it made and serve.

I'm usually a chicken breast sandwich naysayer, but I challenge anyone to say a bad word about these grilled chicken sandwiches with a sweet and spicy glaze, salty bacon, and provolone on a buttered and toasted bun.

4 boneless skinless chicken breast halves (5 ounces each)
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons canola oil
4 tomato slices
4 slices process Swiss cheese
1/4 cup mango chutney
3 tablespoons mayonnaise
4 kaiser rolls, split and toasted
1 cup fresh baby spinach
8 slices ready-to-serve fully cooked bacon, warmed

Steps:

  • Flatten chicken to 1/2-in. thickness; sprinkle with salt and pepper. In a large skillet over medium heat, cook chicken in oil for 4-5 minutes on each side or until chicken juices run clear. Top each chicken breast half with a tomato and cheese slice; cover and cook for 2-3 minutes or until cheese is melted., Combine chutney and mayonnaise; spread over roll bottoms. 4 chicken breasts, boneless and skinless, cut in thirds (12 pieces)
bacon slices, partially cooked but not crisp
salt and pepper, to taste
garlic powder, to taste
chili powder, to taste
brown sugar

Steps:

  • 1. Cut each breast into 3 pieces, season all the chicken with the spices, then wrap a bacon slice around each piece, roll in brown sugar and place into an oven proof dish....make sure you have some olive oil in the dish too, like 2 or 3 tablespoons is fine.
  • 2. Bake at 400 degrees for 30 to 40 minutes or until chicken is cooked through and bacon is nice and brown and crispy. Do not turn them over half way through if baking in the oven, on the grill, yes. Delicious served with mashed potatoes with some of the gravy from the chicken drizzled on top.
  • 3. **Also great on the grill! No juices to drizzle on anything, but still delicious! (Picture shows grilled version)
  • 4. Some comments from others that might be helpfull: ** I have made these before and found that the bacon created too much grease in the bottom of the pan so I placed a cooling rack in my foil lined pan. I placed the wrapped chicken on the cooling rack which allowed the grease to drip to the bottom of the pan. It made for easy clean up. This is definitely a family favorite in our house!
  • 5. ** So good! I used chicken tenders, made it in the oven with garlic Parmesan rosemary potatoes. ** Made this finally and loved it! The only thing I'll be doing next time is adding cayenne because my husband and I love spicy stuff. ** This is the most delicious thing I have ever eaten! You cannot go out any buy at a restaurant anything even comparable to this! I made it for the first time last week and had it again Friday. The whole family just loves this! ** Just made this and it's a winner! I didn't put enough seasoning on though, but next time I'll know to add a little more. Thanks for sharing a great recipe ** I used applewood smoke rub for mine and is was wonderful!

garlic salt
ground black pepper
4 slices havarti cheese
4 tablespoons mayonnaise
4 tablespoons pepper jelly
8 slices bacon, cooked
2 cups baby arugula

Steps:

  • Heat grill to medium high.
  • Pound chicken to create thin cutlets about 1/4" thick. Season with garlic salt and black pepper and grill until cooked through (4-6 minutes). Place a slice of Havarti cheese on top of each cutlet during the last minute of grilling to melt.
  • Spread bun or toast with mayonnaise and pepper jelly. Fill with chicken, bacon and arugula.
