Steps:
- Bring 5 cups of water to boiling while preparing sauce.
- Place sugar and cornstarch in a 12-inch skillet. Whisk to thoroughly combine. Turn heat to medium. Add 1 cup water, vinegar, ketchup, and soy sauce. Bring to a boil, whisking constantly until sauce begins to thicken, about 4 minutes. Stir in chicken. Turn off heat.
- Add red pepper slices to boiling water. Cook 2 minutes. Add ramen. Boil 2 minutes, stirring occasionally. Drain well. Add to skillet. Turn heat up to medium low. Stir to incorporate into sauce. Cook for 1 minute.
- Garnish with chopped scallion and sesame seeds to serve.

I admit it, I still love ramen. In this yummy recipe, expect fast, easy, and spicy with salty, sweet, and sour flavors kicking in. The spiciness level can be adapted to your taste by adjusting the chili garlic sauce. This will make 4 side servings or 3 hearty main course servings.

- Whisk soy sauce, sesame oil, brown sugar, rice vinegar, chili garlic sauce, and ginger together in a small bowl. Add peanut butter, whisking until well combined, and set aside.
- Bring 4 cups of water to a boil in a pot. Discard the flavor packet and add ramen noodles to the boiling water. Cook until noodles are tender, 4 to 5 minutes. Drain noodles, reserving some of the noodle water in case you need to thin out the sauce later.
- Pour sauce over ramen noodles, tossing until well coated. If sauce is too thick, thin out with a small amount of the reserved noodle water until you reach your desired consistency. Your hot noodles will soak up the sauce. Garnish with peanuts and green onion, and serve.

Steps:
- Drain the pineapple juice into a measuring cup and add enough water to measure 2 cups; set aside.
- Cut the chicken into 1-inch pieces and season with ginger. Heat a bit of oil and stir fry the chicken for 3-4 minutes.
- Add the pineapple juice and bring to a boil. Break the noodles into pieces and add to the skillet with the seasoning packets.
- Bring back to a boil, reduce the heat, and simmer for 3 minutes until the noodles are tender and most of the liquid is absorbed.
- Add the sweet and sour sauce, pepper, onion, and pineapple. Cook until the peppers are tender-crisp.
